- Cook pasta according to package directions. Meanwhile, in a large nonstick skillet coated with cooking spray, cook scallops in 1 teaspoon oil over medium heat until firm and opaque; remove and keep warm., In the same skillet, saute onion in remaining oil until tender. Add garlic; cook 1 minute longer. Stir in the broth, wine, lemon juice, salt and pepper. Bring to a boil. , Combine cornstarch and water until smooth. Gradually stir into the pan. Bring to a boil; cook and stir for 2 minutes or until thickened. Stir in parsley and reserved scallops; heat through., Drain pasta; serve with scallops. Sprinkle with cheese and green onions if desired.

FIERY ANGEL HAIR PASTA

- Bring a large pot of salted water to a boil. Add the angel hair pasta and cook until tender but still firm to the bite, stirring occasionally, about 6 to 8 minutes. Drain, reserving 1 cup of the pasta water.
- Stir the oil, parsley, lemon juice and lemon peel in a large serving bowl. Add the cooked pasta and toss with enough reserved pasta water, 1/4 cup at a time, to moisten. Season the pasta with salt and red pepper flakes, to taste. Sprinkle grated lemon peel over pasta for extra flavor and texture. Sprinkle with the Parmesan and serve.
- Combine the oil and crushed red pepper flakes in a heavy small saucepan. Cook over low heat until a thermometer inserted into the oil registers 180 degrees F, about 5 minutes.
- Remove from heat. Cool to room temperature, about 2 hours. Transfer the oil and pepper flakes to a 4-ounce bottle. Seal the lid. Refrigerate up to 1 month.

SAVORY SEA SCALLOPS AND ANGEL HAIR PASTA

- Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the angel hair pasta, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, 4 to 5 minutes. Drain well in a colander set in the sink.
- Melt butter in a skillet over medium heat. Stir in the garlic and cook just until fragrant and softened, about 1 minute. Slice any scallops over 3/4-inch thick in half so they'll cook evenly; stir scallops, basil, and parsley into the skillet. Cook and gently stir just until scallops feel slightly firm when pressed with a finger, 2 to 3 minutes. Scallops will become tough and chewy if overcooked. Stir in lemon juice, and season with salt and black pepper. Pour in cream if you like a thicker sauce. Bring the mixture just to a bare simmer.
- Serve over hot angel hair pasta; sprinkle to taste with Parmesan cheese.

- Combine the tomatoes, spinach, garlic, lime zest and juice in a bowl. Stir in the Tabasco sauce and olive oil, cover and set aside for 20-30 minutes.
- Bring a large pan of lightly salted water to a boil and cook pasta until done, about 10 minutes(less for al dente).
- Drain the pasta and return to clean pan. Add the tomato mixture and toss well. Season with salt and pepper to taste. Add the Parmesan cheese to taste, toss again, and serve in warm bowls, with extra Parmesan on top, if desired. Enjoy!

- You could substitute young sorrel leaves or rocket for the spinach, and lemon juice and rind for the lime.

- Spray grate of outdoor grill, utensils and 2 large metal skewers with Pam for Grilling Spray.
- Preheat grill to medium heat.
- Whisk together heavy cream and 1 tablespoon Cajun seasoning in heavy saucepan.
- Simmer on grill until slightly reduced, stirring frequently, about 5 minutes.
- Thread scallops onto prepared skewers.
- Sprinkle scallops well with remaining Cajun seasoning; set aside.
- Spray garlic, tomatoes and asparagus well with cooking spray.
- Grill until well marked on each side; set aside to cool.
- Grill scallops about 4 minutes on each side or until opaque.
- Pop garlic out of skin; chop garlic cloves and tomatoes.
- Cut asparagus into diagonal slices.
- Toss vegetables with scallops, hot cooked pasta, Cajun cream sauce and parsley.
- If using wooden skewers, soak in water at least 30 minutes before using to prevent them from burning.
- Snap off the woody stems of asparagus before grilling.
- Use toothpicks to connect stalks and make an asparagus 'raft' for easiest grilling.

CREAMY SEAFOOD WITH ANGEL HAIR PASTA
Since I live off the coast of North Carolina I am always looking for seafood recipes. This is not only great it is VERY easy to prepare. The original recipe came from one of my favorite cookbooks, "Cook Healthy, Cook Quick". It called for lobster but I have substituted all types of seafood, (whatever I can find fresh!) and they all taste wonderful!! Serve with a salad and bread for a great light summer time meal!!

- Cook pasta according to package directions, omitting salt and fat.
- Drain well.
- Set aside and keep warm.
- Combine mushrooms, green onions, white wine and garlic in a large nonstick skillet.
- Bring to a boil.
- Reduce heat, and simmer, uncovered until liquid evaporates.
- Add margarine, stirring to melt.
- Add flour and cook stirring constantly for 1 minute.
- Gradually stir in milk.
- Cook over medium heat, stirring constantly until mixture thickens and begins to boil.

This recipe is from the Williams-Sonoma Collection series, Pasta, by Erica De Mane. A note about capers: Purchase capers packed in salt. They have a sweet, floral fragrance, as opposed to sharp-tasting brine-packed varieties (the vinegar variety changes the flavor of the caper). Ask for them at Italian specialty-food stores. - Rinse the scallops and dry well with paper towels.
- Season the scallops with salt and pepper.
- In a large, heavy fry pan over high heat, warm the olive oil until it shimmers.
- In batches without crowding, add the scallops and sear until nicely browned on one side, about 2 minutes.
- Turn the scallops over and brown the other side, about 1 minute more.
- Return all the scallops to the pan, Add the lemon zest and thyme, and cook for a moment.
- Using a slotted spoon, transfer the scallops to a bowl.
