ANGEL MACAROONS

- Preheat oven to 350°. In a large bowl, beat the cake mix, water and extract on low speed for 30 seconds. Scrape bowl; beat on medium speed for 1 minute. Fold in the coconut. , Drop by tablespoonfuls 2 in. apart onto a parchment-lined baking sheets. Bake until lightly browned, 10-12 minutes. Remove paper with cookies to wire racks to cool.

BAKER'S ANGEL FLAKE COCONUT MACAROONS
This is from the back of the Angel Flake bag of coconut. Soft, chewy, toothsome, with just a hint of almond flavor. Yummmmm. Let them 'ripen' a few hours before serving to let them soften. The edges can be a bit crispy straight from the oven.

Steps:
- Mix coconut, sugar, flour and salt in a large bowl. Stir in egg whites (not whipped) and almond extract until well blended. Drop by tablespoonful onto greased and floured cookie sheets.
- Bake 325F for 20 minutes or until edges of cookies are golden brown. Immediately remove from cookie sheets to wire racks. Cool completely.

- Combine coconut, milk and vanilla. Drop by heaping teaspoonfuls, about 1 inch apart, onto well-greased baking sheets. To prevent burning, press down any ends of coconut shreds with back of spoon.
- Bake 10 to 12 min. or until golden brown. Immediately transfer from baking sheets to wire racks. Cool completely.

Another recipe that I collected when I was in high school. I usually make these at Christmas time because they are very easy and different from many cookies. I don't think anyone has ever guessed that they contain dates.

Steps:
- In a medium saucepan, boil butter, sugar, and chopped dates over medium heat for 3 minutes; stirring constantly to bring the 3 ingredients into one thick brown mixture.
- Remove from heat.
- Fold in rice krispies, nuts, and vanilla; blend well.
- Cool slightly.
- Roll mixture into 1-inch balls; roll in coconut to coat evenly.
- Cool completely before storing in container with lid.

- In a medium bowl, cream together butter and confectioners' sugar until light. Stir in the lemon peel, flour and salt. Cover bowl, and chill for about 1 hour.
- Preheat oven to 400 degrees F (200 degrees C).
- Flatten teaspoons of dough onto cookie sheets, and bake for 5 to 8 minutes, until light brown. Remove from baking sheets to cool on racks.
- To make the filling, combine the beaten egg, sugar, lemon zest, lemon juice and butter in the top of a double boiler. Stir until thick. Sandwich cookies with 1 teaspoon of filling.
