EASTER BUNNY CAKE
This was a favorite of mine when I was a kid but the instructions have long since been lost. I saw all kinds of "Bunny" cakes, but nothing even came close to this one... although I did manage to find a photo of it online. (It's hard to tell from the photo, but the feet are 2 layers high and the rest of the cake just one) So please excuse my crude drawings and directions, but you will have fun making it!! Great project to make with the kids, too, since you can get really creative with the decorations (other than just the ribbon bow) and can really dress it up. P.S. No law says it has to be a WHITE bunny, either... ;) ;)

Steps:
- Prepare cake mix according to directions on box for 2 round 9" layers.
- Tint 1/4 cup of the coconut pink (I'm guessing at the amount) for the center of ears and feet.
- Tint 2 tablespoons of the frosting brown for decorating face and feet ( or you can buy one of those prepared decorating icing tubes).
- When cake is cool, cut layers as shown in diagram (see other photo).
- Take 4 of the 8 outer ring pieces and frost the tops. Place 1 of the remaining 4 on top of each and frost top and sides. These will make the feet of the bunny.
- Place round-cut center piece next to the top edge of the square, keeping them both flat, to form body and head.
- Assemble the 4 side pieces in twos, flat sides together (you can use a little frosting to hold them together) to form the ears and arrange at the top of the head.
- Frost entire cake and attach the completed feet, 2 on each side of the body.
- Sprinkle coconut over entire cake and decorate with jelly beans/gumdrops for eyes, nose, etc. as desired, using pink-tinted coconut for center of ears and feet.
- Here's where you can really have fun and get creative! You can tie the ribbon in a bow and place on the cake as a bowtie, make buttons out of the candy, add a hat, etc.
- ** Tip for using frosting to decorate without a pastry bag: Spoon the frosting into one corner of a small plastic sandwich baggie, twist tightly and snip off the tip of the corner. Voila!
- Note: The finished cake is almost 2 feet long so be sure to have it on a large enough cookie sheet or platter!

COTTONTAIL BUNNY SALAD
This is so fun to make together with your kids, and always gets oohs and aahs from children and grownups alike. I remember my mother making a version of this when I was young, so it brings back fond memories to serve it now. For an Easter potluck, I used these as an adjunct to Tom Lambie's Cherry Fluff Salad, Recipezaar #10088, by placing the bunnies on lettuce leaves around the edge of a large tray, with a large bowl of the fluff in the center. Quite a nice response from the group as a result.

Steps:
- Place pear half, cut side down, on individual lettuce leaf.
- Making small slits to help hold in place, add red hot for nose, raisin halves for eyes, almonds for ears, and cottage cheese for tail.
- If serving very soon, the marshmallow is a fun substitute for a tail; exposed to air too long, it will become much less appealing!
EASTER BUNNY RACERS
This is an adorable idea for kids during the Spring/Easter season. They are easy to assemble - the kids can help too!

Steps:
- Unwrap Swiss cake rolls and put on flat surface to work on.
- Place contents of frosting container in quart-sized ziploc bag; press all air out, seal and snip corner off end.
- Cut a shallow V shape in bottom of Peeps so they sit flat on cake rolls.
- Add small amount of frosting to bottom of Peeps and stick on almost to the back of cake rolls.
- Take halved peach gummy slices and add small dabs of frosting to cut end and stick down behind Peep as the "back of the seat".
- Next, add small dab of frosting to Lifesavers and stick down in front of Peep on a slight angle for steering wheel.
- Take 2 matching M&M's and adhere to front of cake roll as the headlights.
- Take 4 matching Spree candies (or equivalent) and use frosting to adhere them two to each long side of cake roll as the tires.
- Repeat with all cake rolls.

EASTER BUNNY PANCAKES AND EGG BASKET
We came up with this idea the day before Easter 2010 and experimented a little, then made the plan for Easter morning. Attached are the pictures of that adventure. It brang a lot of smiles and satisfied bellies. We hope you enjoy it as much as we did!

- Add the Pancake ingredients into a blender and blend until smooth. Separate batter into as many small bowls as needed to make the colored egg pancakes you want, reserving ½ the batter for making regular sized/colored pancakes for the bunny's head.
- Cook one color pancake egg batch at a time in lightly greased cast iron pan. Pour the batter in an elongated fashion to shape small eggs (1" - 2"). Once flipped over, cook lightly to retain coloring. Collect all the eggs on one plate to later divvy up between the served plates. Once all the pancake eggs are done, work on making 3" round pancakes with the regular batter for the bunny face. You'll need a stack of even width/size pancakes to match the thickness of the French toast bunny ears for each plate.
- Meanwhile cook the four pieces of sourdough or French bread cut on the diagonal in another lightly greased cast iron skillet; once cooked, cut the French Toast on the long axis to make bunny ears.
- Once done assemble the plates as shown in the photos and viola! Easter Bunny Pancakes with a colorful egg basket.
BUNNY SALAD
A fun treat for children of all ages! :-) From the Western chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947. Chilling time not included in preparation time.

- Dissolve gelatin in warm water.
- Pour into an 8" x 8" pan and chill until firm: shred with tines of a fork or force through a ricer to resemble grass.
- For each salad, fill a pear half with cottage cheese mixed with mayonnaise and chopped almonds.
- Place a piece of leaf lettuce on a chilled plate and top with gelatin "grass"; place pear half rounded side up on the gelatin.
- Make bunny's ears, mouth and tail from almonds.
- Make eyes by dipping the tip of a knife into paprika then gently into pear where you'd like the eyes to be.
- If you wish to garnish, form a "carrot" from yellow cheese or cheese salad with a sprig of parsley for "carrot greens".
- Serve with mayonnaise.
