Amy's Chicken Salad With Cherries and Walnuts image

Chicken salad is one of my favorites! I had several odds and ends in my refrigerator today and decided to use them up - this is the result. Amounts on all ingredients can be adjusted to suit your personal taste. It would also be good with dried cranberries in place of the cherries. Serve as a sandwich on whole wheat bread or atop lettuce for lower-carb.

1 1/2 cups cooked chicken
1 large celery rib
2 hardboiled egg whites
1/4 cup dried cherries
1/4 cup walnuts
1/4 cup Italian parsley
1/2 cup fat free Miracle Whip
1/4 teaspoon onion powder
1/2 teaspoon dried tarragon
1/4 teaspoon pepper

Steps:

  • Chop all ingredients into bite sized pieces.
  • Place all ingredients in a bowl and mix.
  • Serve on your choice of bread or atop lettuce leaves.

My sister gave me this recipe & my boys love it. Great if you have leftover grilled chicken. Wonderful salad meal.

2 (1 1/4 ounce) packages pesto sauce (prefer Knorr's)
1 (16 ounce) package bow tie pasta
4 slices bacon, cooked & crumbled
1 small red onion, sliced in rings
1 (6 ounce) package feta cheese
2 chicken breasts, cooked & chopped

Steps:

  • Mix the pesto sauce according to package directions. Cook pasta according to package directions. Mix together all ingredients. Serve hot or cold.

AMY'S SENSATIONAL SUMMER SALAD

A fantastic blend of fruit and feta cheese tops off this tossed salad, making it perfect for summer barbecues!

3 (6 ounce) boneless skinless chicken breast halves
1 cup Italian salad dressing
1 granny smith apple, cored and diced
2 tablespoons lemon juice
1 head romaine lettuce, chopped
1 avocado, diced
4 ounces feta cheese, crumbled
1 1/2 cups diced fresh strawberries
1 cup dried cranberries
3/4 cup balsamic vinaigrette (to taste)

Steps:

  • Place the chicken breasts and Italian dressing onto a resealable plastic bag. Mix together to coat the chicken with the dressing, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 1 hour.
  • Preheat an outdoor grill for medium-high heat, and lightly oil grate.
  • Remove the chicken from the marinade, and shake off excess. Discard the remaining marinade. Grill the chicken breasts until no longer pink in the center, or to an internal temperature of 165°F (74°C), about 3 minutes per side. Set aside to cool while preparing the ingredients for salad, then dice.
  • Toss the diced apple with the lemon juice in a large mixing bowl until well coated; drain and discard any excess lemon juice. Place the lettuce into the mixing bowl, then sprinkle with the diced chicken, avocado, feta cheese, strawberries, and cranberries. Gently toss the salad with the balsamic vinaigrette, and serve immediately.

This is a great recipe for a nice light supper. If you have leftover chicken in your fridge looking for a good home, this would be the ticket! I got this recipe from my dear sister-in-law Amy Paun. What a great cook she is!!!

4 cups cooked chicken
1 (15 ounce) can pineapple chunks, well drained
1 cup celery, finely chopped
1/2 cup sliced black olives (optional)
2 green onions, chopped
1 cup green seedless grapes or 1 cup red seedless grapes
1 cup mayonnaise
1 tablespoon mustard
1 cup dry chow mein noodles
1 (11 ounce) can mandarin oranges, well drained
lettuce leaf

Steps:

  • In large bowl combine chicken, pineapple, celery, olives, onions and grapes.
  • Blend mayonnaise and msutard.
  • Toss gently with chicken mixture.
  • Cove and chill at least on hour.
  • Just before serving, gently fold in oranges and chow mein noodles.
  • Place on lettuce leaves placed on a platter.
