This is a different, sweet salsa that is perfect for summer and receives rave reviews! It stars sweet white corn and black beans, with red onion, red pepper, sugar, and the crisp tang of rice wine vinegar. Serve with chips.

AMY'S SENSATIONAL SUMMER SALAD
A fantastic blend of fruit and feta cheese tops off this tossed salad, making it perfect for summer barbecues!

Steps:
- Place the chicken breasts and Italian dressing onto a resealable plastic bag. Mix together to coat the chicken with the dressing, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 1 hour.
- Preheat an outdoor grill for medium-high heat, and lightly oil grate.
- Remove the chicken from the marinade, and shake off excess. Discard the remaining marinade. Grill the chicken breasts until no longer pink in the center, or to an internal temperature of 165°F (74°C), about 3 minutes per side. Set aside to cool while preparing the ingredients for salad, then dice.
- Toss the diced apple with the lemon juice in a large mixing bowl until well coated; drain and discard any excess lemon juice. Place the lettuce into the mixing bowl, then sprinkle with the diced chicken, avocado, feta cheese, strawberries, and cranberries. Gently toss the salad with the balsamic vinaigrette, and serve immediately.

AMY'S FRESH SALSA
This is a great salsa that you can make ahead of time and do not have to cook. It is an especially great summer recipe when you have a garden and is a must at all my familys parties! To make this, i used the little blender that came with my emersion blender, but if you dont have one you can use a small food processor. The salt will draw moisture out of the tomatoes, so if it bothers you you can drain it, but i dont bother.

Steps:
- In a small food processor, add onion, jalepeno and cilantro. Pulse until chopped fine.
- Add tomatoes in small batches and pulse until tomatoes are chopped to the consistency you desire.
- Pour into serving bowl and stir in kosher salt.
- If you want it hotter, dont seed the jalepeno.

AMY'S CORN SALSA
Inspired by Dahn Bull's mom, Leslie. Dahn and I were on our way home from a pandemic drive-by car parade for Jim Tedisco's birthday and he called his parents. Leslie told us about the delicious corn salad she had just made. I couldn't stop thinking about it and had to make my own. This is my take as I don't like a lot of dressing and I love raw corn.
