BASIC BREAD MACHINE BREAD (A B M)
This is a very reliable standard bread machine recipe for a 1 lb loaf. Too many people I know have bread machines but don't use them because they don't know how to do anything but use a mix! This will make a nice soft loaf as is, and it's also a great jumping off point for experimentation. Try varying the types of flour, fat, and sugar. Or try adding things like spices, nuts, mustards, or cheeses. My goal with this recipe is to get people comfortable enough with baking in their bread machines that they'll experiment. (If your machine only makes a 2 lb loaf, simply double all the ingredients.)

Steps:
- Add the ingredients to your bread pan in the order listed.
- Set your machine to 1 lb / white bread.
- Alternatively, set your machine for the dough cycle. When it's finished, take the dough out, shape it into a round loaf, cover, and let rise until doubled. Bake in a preheated 375 degree oven for 30-40 minutes.
- In both cases, cool on a wire rack before slicing.

- Add ingredients in order to the bread machine pan. Choose the dough setting on your machine and press start. Allow the machine to knead, mix and rise your dough. When the entire cycle is finished remove the dough and form into loaf (loaves) or place in desired pan. Preheat oven to 375 Cover the dough and put in a warm place to rise for 20 more minutes. Place in oven and cook until the top is a light golden brown (approx. 30 min).
BREAD MACHINE BROETCHEN
Broetchen is very popular in Germany. The word means "little bread". It is near impossible to get authentic broetchen here in the US. After several attempts and combining what our German exchange student and a good German friend told me about it, I finally came up with this recipe. I was told by both that this is about as close to the real deal as you are going to get in the US, since our flours are different from theirs. Be sure to use bread flour! Any other kind will turn out too heavy a roll. And follow the baking instructions exactly. These are necessary steps for it to turn out correct. It will still be good, but not as authentic as what you would find in Germany. Bonus: This is made in the bread machine, which saves a lot of hassle!

- Place first six ingredients in bread machine pan in the order listed. Place pan in bread machine and set to the "dough" setting. Let 'er run!
- When dough setting is complete, sprinkle the ½ Cup (approximately- you may need more or less depending on the humidity of your kitchen) bread flour on a clean surface and dump the dough out onto it. Knead for 10-12 strokes. Form the dough into 10 oblong rolls of equal size, then turn them so that they are dusted with flour on all sides. Let them rest right there on the floured surface for 10 minutes. (They've been through a lot and are tired!).
- Transfer the rolls onto a greased baking sheet. Cover with a clean cloth and let rise in a warm place until about double in size, about 35 minutes.
- Position a rack in your oven about 6-7 inches from the top of the oven. Put another rack in the bottom third of the oven. Heat the oven to 450F (230C).
- While the oven is heating make a shallow slit in the top of the broetchen with a sharp knife, if you wish. Brush them gently with the beaten egg white.
- Place the ice in a small oven-safe pan (like a pie plate). Place the pan of ice on the bottom oven rack and the broetchen on the top rack. The ice will create a steam in the oven that, combined with the egg wash, will give the broetchen that soft yet firm crust it is so famous for.
- Bake 12-15 minutes, or until the broetchen is golden brown.

AMSTERDAM STOL (USING BREAD MACHINE)
Amsterdam stollen (or rather: stol) is just as traditionally connected to Christmas as its German counterpart, but is richer, more moist, and denser. Make sure that you use almond paste, not marzipan -- it is less sweet and a bit coarser than marzipan; if you can't find it, it is easily made yourself by grinding 150 g of blanched almonds with 150 g of sugar and one egg. The original recipe uses "bitterkoekjes", chewy Dutch almond biscuits, but as these are almost impossible to buy outside of the Netherlands I have replaced them with Amaretti.

- Zest the lemon partly; you need about 2 tsp of zest. Put currants in bowl with hot water and soak circa 15 minutes Put milk, bread mix (with yeast), sugar, zest, and cinnamon in bread machine and put it on its dough cycle. Cut apricots and prunes in small pieces and add while the machine is kneading. Drain the currants and add while the machine is kneading. Break the Amaretti in small pieces and add about two minutes before the end of the kneading phase. Allow the dough to rise in the machine.
- Form almond paste into a roll. Dust bench with flour; take dough out of bread machine when ready and form on bench into an oval. Press a long indentation into the top of the dough, push in the almond paste roll, and fold dough around almond paste. Put on a well-greased baking sheet and bake at 200 deg C (390 deg F) until golden brown and cooked (circa 30 mins); if necessary cover with alufoil for about 10 mins to prevent it from browning too much. Take out of oven (optionally: brush with melted butter to enhance gloss) and allow to cool.
