TURNIP BAKE
This recipe has been in our family for years. We like turnips with turkey, so my mother used to serve this side dish with our turkey dinner at Christmas. Then I served this dish, and now my daughter, who has taken over preparing Christmas dinner, is carrying on the tradition.

- Preheat oven to 375°. Place turnips in a small saucepan and cover with water. Bring to a boil. Reduce heat; cover and simmer 10-12 minutes or until tender. Drain. , In a small bowl, combine turnips, 2 tablespoons butter and eggs. Combine flour, brown sugar, baking powder, salt, pepper and nutmeg; add to turnip mixture and mix well. Transfer to a greased 8-in. square baking dish. , Melt remaining butter; toss with bread crumbs. Sprinkle over top. Bake, uncovered, 25-30 minutes or until a knife inserted in the center comes out clean. Serve immediately.

- Trim and peel turnips. Cut into chunks. Bring a 2 quart pan of water to boil. Add 2 tsp table salt and 2 tbsp white vinegar. Add turnips and boil until soft. Drain water. Mash turnips with 2 tbsp butter, cream and egg. Stir in 1/4 cup of the bread crumbs, sweetener and salt. Spoon into a casserole dish. Dot with remaining butter and sprinkle bread crumbs over the top. Bake at 400 degrees for 20 minutes *I used Jennifer Eloff's recipe for Plain Bread, a quick microwave bread which toasted, makes good bread crumbs. Recipe Below 4 servings 165 cal. Jiffy Cinnamon Bread: 7 tbsp ground almonds (105 mL) 31/2 tsp coconut flour (17 mL) 31/2 tsp oat flour (17 mL) 1 tsp baking powder (5 mL) 1/2 tsp cinnamon (2 mL) 1/4 tsp salt (1 mL) 2 to 3 tbsp raisins, snipped (30 - 45 mL) in half 3 eggs 41/2 tsp heavy cream, OR almond milk, OR (22 mL) coconut milk Liquid sucralose to equal 4 tsp (20 mL) SPLENDA® Granular 11/2 tsp olive oil (7 mL) 3 tbsp shredded Monterey Jack cheese (45 mL) Spray an 8-inch (20 cm) square baking dish with nonstick cooking spray. Remove from microwave oven and immediately cut a cross in the bread dividing it length-wise and horizontally in half into 4 quadrants. Take each half and flip it over to allow the undersides to dry out a bit. When cool, slice each piece in half horizontally so that you have 8 slices of bread that are more or less the size of a slice of store-bought raisin bread. Place in the toaster and toast until nice and brown.. Variation: Plain Bread (great for toast): Omit raisins, cinnamon, sweetener and salt. Instead use 1/4 tsp (1 mL) onion salt. Very good recipe! I never had mashed turnips before, but I loved them. Servings are approximate. I can't really remember how many servings I got out of it.

- Cook turnips until tender.
- Drain, mash and then add 1/2 cup bread crumbs, saving rest for top.
- Add egg, sugar, milk, salt and pepper to taste.
- Mix together; pour into greased baking dish.
- Dot with butter and rest of crumbs.
- Bake 45 minutes at 375 degrees.

- Peel and cut turnip like you would for mashed potatoes.
- Put in pot of water until covered and your sugar. Turnips can be very bitter so the sugar takes the bitter out. Cook until fork tender. Drain. Mash like you would potatoes. Use gravy instead of milk or whatever you mash your taters with. Enjoy!

- Mix the beaten egg and milk together.
- Dip chicken parts in liquid.
- Stir together the salt,pepper and cracker crumbs.
- Dip chicken in dry mixture, using a spoon to cover well.
- Melt butter in a heavy cast iron skillet.
- Brown chicken well on both sides.
- Remove from stove top and place into the oven, cover with foil and bake at 325 degrees for 30 minutes.
- Uncover and continue baking for an aditional 30 minutes.

Steps:
- Heat oven to 180C/fan 160C/gas 4. Heat half the butter in an ovenproof frying pan. Add the bacon and cook for a few mins, then add the thyme and onions, season and cook for a further 8-10 mins until the onions are soft and golden. Scoop the onions into a bowl, leaving the buttery juices in the pan.
- Off the heat, layer the sliced turnips in the pan with a scattering of fried onions, a sprinkling of cheese and some dots of butter between the layers. Season with a little salt and plenty of pepper as you go. Cover the pan with foil and bake for 1-1¼ hrs until the turnips are tender when prodded with the point of a knife. Leave the cake to relax for 5 mins. Turn it upside down onto a plate or board, then cut into wedges and serve.
