EASY STRAWBERRY BUTTER
After picking strawberries for the first time, I developed this fruity, spreadable butter. Try making other fruit spreads using raspberries or blackberries, or a seedless jam like apricot, my favorite. -Julie Herrera-Lemler, Rochester, Minnesota

- Pulse strawberries in a food processor until chopped. Add butter and 1/2 cup confectioners' sugar; process until blended. Add enough remaining confectioners' sugar to reach a spreading consistency and desired level of sweetness. Store in the refrigerator for up to 1 week.

AMISH BUTTER AND EGG DINNER ROLLS
Soft, light, buttery rolls that are perfect with pretty much any meal of the day.

Steps:
- Combine warm water, yeast, and sugar in the bowl of a stand mixer. Whisk to blend and set aside for 8 minutes, or until yeast has activated and is very frothy.
- Add 3 cups flour, 3 tablespoons butter, egg, and salt to the bowl. With the dough hook fitted, turn mixer on medium speed until the dough comes together into a ball. Turn speed down to a "2" (medium-low) and continue kneading for 3 minutes, until dough ball is smooth. If your dough is too wet, add a little bit more flour until the dough ball forms.
- Cover bowl with a tea towel and set aside to rise until doubled in size, 1 to 1 1/2 hours.
- Scrape dough out of the bowl and divide into 12 pieces. Roll each piece into a smooth ball.
- Spray a 9x13-inch baking dish with cooking spray. Arrange dough balls in the baking dish. Cover again with the tea towel and set aside until well risen and puffy, 30 to 40 more minutes.
- Preheat the oven to 350 degrees F (175 degrees C).
- Bake rolls in the preheated oven until golden brown and baked through, 20 to 25 minutes.
- Remove from the oven and allow to cool a few minutes. Brush remaining tablespoon softened butter over the top of the warm rolls, allowing the butter to soak in.

AMISH BLACKBERRY AND STRAWBERRY BAKED OATMEAL
A really sweet innkeeper in Amish country taught me a version of this baked oatmeal recipe. Absolutely wonderful! Serve with milk.

- Preheat the oven to 350 degrees F (175 degrees C). Spray a 9x13-inch baking pan with cooking spray.
- Cream brown sugar, oil, eggs, baking powder, and salt together in a bowl until smooth. Add oatmeal and milk and mix until combined.
- Layer blackberry pie filling and strawberries in the bottom of the prepared pan. Add oatmeal mixture over fruit.
- Bake in the preheated oven until top is golden brown, about 30 minutes.

STRAWBERRY BUTTER
Serve this not-too-sweet strawberry butter atop hot biscuits for a delicious brunch. Just a little bit of table salt heightens the flavor of the berries.

Steps:
- Using an electric mixer, beat butter, sugar, and salt until light about 1 minute. Add strawberries and beat until combined, but not totally uniform.
- Transfer to ramekins or small serving dishes. Chill until ready to serve, or transfer to 2 sheets of plastic wrap, roll each into log, and freeze up to 2 months. Thaw before using. Serve at room temperature.
STRAWBERRY BREAD (MADE WITH AMISH STARTER)
Still on a mission to find tasty breads for holiday gift giving and this one was great (and would be even better with a thin vanilla glaze on top, but I'm too lazy to do that). I had intended on adding sugar to the batter BUT FORGOT and it turned out to my liking, so I made the sugar in this recipe optional. I made mine into 5 mini loaves, but you can also make it into 2 large loaves which will require about 50 minutes baking time.

- Mix together the wet ingredients, then stir in the dry ingredients.
- Toss the strawberries with the 1T of sugar and stir them in last.
- Pour into 5 greased mini loaf pans and bake at 325 for 45 minutes.
