A variation on the old Pennsylvania Dutch favorite, Shoo Fly Pie. Not as sweet or gooey as Shoo Fly Pie, this cake is much better the day after you bake it. Works really well as cupcakes. I made mini cupcakes for Christmas, always a hit.

Number Of Ingredients 6

1 teaspoon baking soda
2 ¼ cups boiling water
4 cups all-purpose flour
1 pound brown sugar
2 teaspoons salt
¾ cup vegetable oil

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease one 9 x 13 inch pan.
  • Dissolve soda in boiling water. Set aside.
  • Mix together flour, brown sugar, salt, and vegetable oil to form a crumb-like mixture. Reserve 1 cup of the crumbs. Mix the remaining crumbs with the water and soda mixture. Pour batter into the prepared pan. Sprinkle the reserved crumbs on top.
  • Bake for 45 minutes, or until done.

4 cups all-purpose flour
1 cup margarine
2 cups sugar
1 teaspoon salt
1 cup molasses
2 cups water
2 tablespoons hot water
1 teaspoon baking soda

Steps:

  • Mix all dry ingredients with margarine.
  • Take 1 cup of mixture and reserve for topping and set aside.
  • Dissolve baking soda in hot water.
  • Add molasses, water and dissolved baking soda.
  • Mix well.
  • Pour into a greased 9x13 pan.
  • Sprinkle with reserved topping mixture.
  • Bake at 350 degrees for 45 minutes or until knife inserted comes out clean.

With a gooey dark molasses bottom and a buttery crumb topping, this wet-bottom chocolate Shoofly Pie is a Pennsylvania Dutch tradition.

1/2 recipe no fail pie crust
1 1/2 cups all-purpose flour
1/2 cup dark brown sugar
1 teaspoon cinnamon
1 teaspoon ginger
1/2 teaspoon salt
8 tablespoons (1 stick) unsalted butter, melted
3/4 cup boiling water
3/4 cup molasses
1 teaspoon baking soda
1 egg
3/4 cup chopped semi-sweet or dark chocolate (optional)

Steps:

  • Preheat oven to 400 °F. Place a baking sheet in the oven to heat. Prepare the pie crust. Place in a pie dish and flute edges. Refrigerate crust until filling is ready. To make the crumble topping, whisk together the flour, brown sugar, cinnamon, ginger, and salt. Slowly pour in the melted butter, continuing to stir. The mixture will form a big clump, break this up with your fingers until the mixture has a sandy texture. In a medium bowl, whisk together the boiling water and molasses until smooth and well combined. Stir in the baking soda and egg, along with an additional small pinch of salt. Sprinkle the chopped chocolate (optional) along the bottom of the crust. Pour the molasses mixture into the crust and sprinkle half the crumb mixture on top of the pie. Place the rest of the crumb mixture in the freezer. Bake the pie for 15 minutes. After 15 minutes, remove the pie from the oven. Top with the remaining now chilled crumb mixture, sprinkling it evenly over the top of the pie. Return the pie to the oven, reduce the temperature to 350 °F, and bake an additional 20-25 minutes, until the pie is just set. Cool on a wire rack before slicing.

1 cup brown sugar, packed
1/2 cup butter, softened
1 cup boiling water
1/2 cup molasses
1 tsp baking soda
1/2 tsp salt
Confectioner's sugar or whipped cream

Steps:

  • Preheat oven to 350°
  • Grease a 9 x 13″ baking pan.
  • Combine flour, brown sugar, salt and butter by hand to form fine crumbs.
  • Reserve 3/4 cup of this crumb mixture to put on top of the cake.
  • Separately mix together the boiling water, molasses and baking soda (note: this will foam up very quickly. Be close to the bowl with the dry ingredients. Don't ask.)
  • Stir into the crumb mixture just until mixed (note: this is a VERY wet batter.)
  • Pour into the prepared cake pan and sprinkle with the reserved mixture.
  • Bake in the preheated oven for 30 - 40 minutes (note: my cake took 37 minutes to bake)
  • Cool on a wire rack and then cut into squares.
  • To serve: you can either dust with confectioner's sugar or top with whipped cream

1-1/3 cups boiling water
1 can (16 ounces) chocolate syrup
1 teaspoon baking soda, divided
1-1/2 cups all-purpose flour
1/2 cup sugar
1/3 cup butter, softened
1 unbaked deep-dish pie crust (9 inches)

Steps:

  • In a small bowl, stir together water, chocolate syrup and 1/4 teaspoon baking soda; set aside. In a large bowl, blend flour, sugar, butter and remaining baking soda; reserve 1 cup for topping. , Place pie crust on a baking sheet. Pour 1 cup of chocolate syrup mixture into shell; gently combine rest of chocolate syrup mixture with remaining crumb mixture and add to pie crust. Sprinkle reserved crumbs on top. , Bake at 375° for 50-60 minutes or until a toothpick comes out clean.

4 cups flour
2 2/3 cup brown sugar
1 cup butter
pinch of salt
2 cups boiling water
1 cup molasses
2 Teaspoons baking soda

Steps:

  • Pre-Heat oven to 350 degrees. Grease a 13x9 inch baking pan.
  • Using a large bowl, stir the flour,brown sugar,and salt together. Add the butter. Work the butter into the mixture until you have crumbs using a pastry blender or rubbing the mixture together with your fingers. Take out 1 1/2 cups of crumbs, reserve for the topping.
  • In a large bowl combine the boiling water,molasses and baking soda, mix well with a whisk. Make sure to use a large bowl, when the baking soda is added it foams up quiet a bit.
  • Add 1/2 the liquid to the crumb mixture. Mix until moist and smooth. Add the remaining liquid and mix until just incorporated, the batter will be slightly runny.
  • Pour the batter into your prepared pan, top with reserved crumbs. press crumbs into the batter lightly. Bake 45 minutes or until a tooth pick inserted in the center comes out clean.

Makes one 9-inch pie
1 9-inch pie crust (homemade or store-bought)
1 cup molasses
⅔ cup boiling water
1 teaspoon baking soda
TOPPING:
3½ cups all-purpose flour
1 cup sugar
¾ cup shortening, softened
Dash of salt

Steps:

  • Preheat the oven to 350°F.
  • In a large bowl, combine the molasses, boiling water, and baking soda. Pour the mixture into the unbaked pie shell.
  • To make the topping: In a large bowl, mix the flour with the sugar, shortening, and salt. Spread this crumb mixture on top of the molasses mixture in the pie shell. Bake until the center of the pie is set, about 45 minutes. Cool on a wire rack or windowsill until the pie is firm, about 45 minutes. Store any leftovers in a sealed cake safe. The pie will keep for about 5 days.

2 scant c. brown sugar
2 sticks butter (or 1 c. shortening)
4 c. all-purpose flour
2 c. boiling water
2 1/2 tsp. baking soda
1 1/2 c. Golden Barrel unsulfured baking molasses (or any light-tasting molasses)
1 tsp. salt

Steps:

  • Preheat oven to 350°.
  • Mix brown sugar, flour, and butter with a pastry blender until you have fine crumbs.
  • Reserve two cups of the crumbs for the top.
  • Combine the boiling water and baking soda, then add the molasses and salt. Mix well.
  • Mix the molasses mixture with the remaining crumbs. And pour this into a greased 9x13" baking dish.
  • Starting at the edges, scatter the reserved 2 cups of crumbs over the top.
  • Bake for about 45 - 50 minutes. Cool and enjoy.

I got this recipe from an Amish lady who brought baked goods to the local Farmer's Market. The old fashioned molasses flavor with the crumb topping makes these cupcakes very good. They are not as rich as ShooFly Pie, which I find almost too much. These are just right, in my opinion.

4 c all purpose flour
1 c sugar
1 c cold butter
1 c cold water
1 tsp cream of tartar
1 tsp baking soda
1 c molasses

Steps:

  • 1. Preheat oven to 350 degrees. Prepare muffin tins with paper liners. Sift flour and sugar together. Cut cold butter into mixture with a fork until mixture is fine and crumbly. Reserved 1 cup of crumb mixture for topping. Dissolve cream of tartar and baking soda in cold water. Mix water and molasses into flour crumb mixture. Stir until blended. Fill each muffin cup about 2/3 full and sprinkle with reserved topping.
  • 2. Bake at 350 degrees for 20-25 minutes, or until just done. Don't over bake, or cupcakes will be dry and not so good. Makes 24 cupcakes.
