My family loves vegetables, and I am always looking for new ways to spice them up. This recipe is one of our favorites for green beans. I use blue cheese, but feta or mozzarella can be substituted.

1 ½ pounds fresh green beans, cut into 1 1/2 inch pieces
1 tablespoon olive oil
1 tablespoon garlic, minced
½ teaspoon dried oregano
½ teaspoon dried thyme
¼ teaspoon salt
½ cup crumbled blue cheese

Steps:

  • Combine beans, olive oil, garlic, oregano, thyme, and salt in a microwave-safe dish.
  • Cover and cook in the microwave on high, stirring twice, until beans are tender, 7 to 9 minutes. Stir in blue cheese. Serve immediately.

GREEN BEANS AMANDINE



Green Beans Amandine image

This green bean recipe will become your new favorite side dish. Inspired by a classic French recipe (haricots verts amandine), these green beans feature buttery toasted almonds, tender shallot and a squeeze of lemon. Recipe yields 4 generous side servings; you can double the recipe by cooking it in a large Dutch oven.

2 tablespoons unsalted butter, sliced into several pieces
1/2 cup sliced almonds
1/4 cup thinly sliced shallot (about 1 small)
1 pound haricots verts or slender green beans, trimmed
2 teaspoons lemon juice, to taste
1 tablespoon + ½ cup water, divided
½ teaspoon fine salt, to taste
Freshly ground black pepper, to taste

Steps:

  • In a large skillet over medium-low heat, melt the butter. Once it's completely melted, add the almonds. Cook, stirring constantly with a heatproof spatula or wooden spoon, until the butter has browned and the almonds are beginning to brown, about 7 to 8 minutes. (Your patience will pay off, I promise!)
  • Add the shallot and cook, while stirring constantly, for 1 minute. Stir in the lemon juice and 1 tablespoon water. While stirring, cook until the liquid thickens enough that your spatula leaves an open trail on the pan behind it, about 1 more minute.
  • Use your spatula to scoop all the mixture into a bowl, and set it aside for now. Return the empty skillet to the stovetop, and add the green beans, ½ cup water and ½ teaspoon salt. Cover and cook over medium heat, stirring occasionally, until the beans are nearly tender, about 9 to 10 minutes.
  • Remove the lid and cook over medium-high heat until the liquid evaporates, about 2 to 4 minutes.
  • Off the heat, add the reserved almond mixture to the skillet and toss to combine. Season with salt and pepper, to taste, and serve. Leftover green beans will keep the fridge, covered, for about 4 days.

A new take on an old classic. The pancetta adds a nice smokiness, but is not overpowering and greasy.

1 lb fresh green beans, rinsed & trimmed (hericot vert work well)
1/4 cup pancetta, finely chopped
1/4 cup sliced almonds
1 tablespoon butter
fresh ground black pepper, to taste
salt, to taste

Steps:

  • In a medium pot with steamer insert, bring a few inches of water to a boil.
  • In a large skillet, toast the almonds until golden brown. Remove from pan and set aside.
  • Add the beans to the steamer insert. Steam until bright green, but still slightly crisp. About 5 minutes.
  • In the large skillet, melt the butter and add the pancetta. Cook on medium until the pancetta just starts to crisp.
  • Add the beans to the skillet and toss to coat. Continue cooking until the beans are done, about 3 minutes.
  • Serve the beans with the toasted almonds on top. Season to taste with salt & pepper.

8 ounces green beans, trimmed
1 tablespoon Worcestershire sauce
1 tablespoon sriracha or other hot sauce
Fresh lemon juice, as needed
2 ounces crumbled blue cheese

Steps:

  • In a large skillet over medium-high heat, heat the butter and oil. When hot, add the green beans in one layer. When the beans are just beginning to color, stir them around and add the Worcestershire, sriracha and lemon juice. Cook until the beans are crisp-tender, a few more minutes. Transfer them to a plate, crumble over the blue cheese and serve.

1 tablespoon olive oil
salt and freshly ground pepper to taste
1 pound fresh green beans, trimmed
1 teaspoon butter
⅓ cup sliced almonds
1 tablespoon olive oil
1 pinch cayenne pepper, or more to taste
2 ounces crumbled blue cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Line a baking dish with aluminum foil.
  • Cut top 1/3 off garlic heads, exposing the cloves. Place garlic in the prepared baking dish cut side up. Pour olive oil over the garlic and season with salt. Fold up foil and seal to create a tight packet.
  • Bake in the preheated oven until a paring knife inserts easily into the center of a garlic clove, about 1 hour; set aside to cool. Once cool, remove each garlic clove from the skin. Reserve remaining olive oil.
  • Increase oven temperature to 400 degrees F (200 degrees C).
  • Bring a large pot of salted water to a boil; add green beans and cook until bright green and nearly tender, 4 to 6 minutes. Drain beans and transfer to a large bowl of ice water to cool completely; drain well and set aside.
  • Melt butter in a large skillet over medium heat. Add almonds; cook and stir until lightly browned, 3 to 4 minutes.
  • Toss green beans, roasted garlic and reserved olive oil, toasted almonds, and 1 tablespoon olive oil together in a large bowl; season with cayenne pepper, salt, and black pepper. Transfer to a shallow baking dish and top with blue cheese.7
  • Bake until cheese is melted and beans are fully tender, about 15 minutes.

This is a wonderful veggie side dish to serve to guests, it is more like a bean salad, as it is not meant to be served hot, but at room temperature. The amounts I have listed are only estimated as I really do not measure any thing when I make this dish, you can adjust all ingredients to taste. You can really use just about any kind of nuts for this recipe, I have even made this with toasted walnuts. The amounts in this recipe serve 4 but you can double or even triple the recipe to serve at a dinner party. This green bean dish is good enough to be served a fancy restaurant, it is that good!

1/2-1 teaspoon Dijon mustard
2 teaspoons cider vinegar
1 -2 tablespoon finely chopped shallot (or to taste)
2 -3 tablespoons olive oil
1 1/2 cups sliced almonds, toasted
2 lbs fresh green beans, ends trimmed
1/2-3/4 cup blue cheese, crumbled (or to taste)
salt and black pepper

Steps:

  • In a small bowl whisk together mustard, vinegar, shallot and oil.
  • Prepare a bowl with ice water.
  • In a saucepan with a small amount of water, blanch/steam the beans until JUST firm-tender (about 3-4 minutes); drain through a colander, then immediately transfer to the bowl of ice water just for a couple of minutes to cool and keep the colour.
  • Remove the beans to a bowl and dry well patting with paper towels.
  • Drizzle the dressing over the beans; toss to combine.
  • Season with black pepper and a pinch of salt.
  • Add in blue cheese and almonds; toss to combine.
  • Transfer to a serving plate or bowl, and sprinkle with more sliced toasted almonds.
  • Serve at room temperature.
  • Delicious!
