AMISH COLESLAW DRESSING RECIPE
Steps:
- Add all of your ingredients into chopper/blender; that is, except for the cabbage and ramen, of course.
- Blend this together for about a minute.
- Pour the dressing over your coleslaw and mix well. Refrigerate for about an hour before serving.
- If you want an extra crunch on top of your coleslaw, you can toast the ramen noodles in about a Tbsp. of butter until slightly browned. Cool. Sprinkle the ramen on top of the coleslaw just before serving. Or you can skip this step, if you prefer.
- If you don't use all of the dressing at once, store it in an airtight container in the refrigerator, for up to a month.

Steps:
- In a small bowl, beat the egg with 1 tbsp of the water;set aside.
- In a saucepan, whisk together the flour, mustard, and sugar, then whisk in the remaining 1 cup water, vinegar, oil and lemon juice; heat over medium heat for 1 minute, whisking continuously (the dressing will be thick).
- Add the egg mixture to the flour mixture and continue to cook for about 1 minute, stirring until the dressing has a mashed potato consistency and is off-white in color.
- Remove from heat, cover, and cool completely.
- Store in a covered jar in the refrigerator (will keep for several weeks).

AMISH POTATO SALAD
Amish potato salad is a tangy, slightly sweet version of potato salad that will be welcome at any barbecue or picnic. Made popular by Walmart ®, it gets tang and color from apple cider vinegar and yellow mustard and a touch of sweetness from pickle relish and a dash of sugar. Some of the potatoes get blended in with the dressing to give the salad the chunky-yet-creamy texture that we love.

- Place the potatoes into a pot and cover with cold water by 1 inch. Season generously with salt. Bring to a boil, then lower the heat to medium and continue to cook until the potatoes are tender, about 5 minutes.
- While the potatoes are cooking, begin the dressing. Combine the vinegar and sugar in a small microwave-safe bowl. Cook until the sugar has dissolved, about 30 seconds. Add the mixture to a food processor along with the mustard, celery seed and the yolk of 1 of the hard-boiled eggs. Pulse until combined.
- Drain the potatoes and add to a large bowl. Toss together with 2 tablespoons of the dressing and reserve the remaining dressing in the food processor. Chill the potatoes in the refrigerator for 30 minutes.
- Finish the dressing by adding the mayonnaise, 1/2 teaspoon salt, remaining 2 eggs plus the egg white and 1 cup of the potatoes, reserving the remaining potatoes for the salad. Process until smooth yet with some texture remaining.
- Mix the reserved potatoes with the dressing along with the celery, onion and relish. Taste for seasoning.

Steps:
- Combine chopped broccoli and cauliflower in large bowl.
- In a separate bowl combine the mayonnaise, sour cream, sugar and salt to make a dressing.
- Add the dressing to the broccoli/cauliflower mix, stirring to evenly coat the veggies.
- Stir in the bacon and cheese, reserving a small amount to sprinkle on top of salad just before serving.
- Refridgerate until serving.
AMISH ENDIVE OR SPINACH SALAD
To make sure the greens are wilted before eating(covering the greens with a hot dressing only partially accomplishes this), drop them into a pot of boiling water. Let tand for 5 - 10 minutes. Then drain leaves, pouring off juice.

- Top with sliced eggs.

- Hot Bacon Salad Dressing: Brown bacon; remove from drippings and crumble.

- Add egg, salt, vinegar and water and mix until smooth.
