Bumbleberry Pie is a delicious way to clean out your produce drawer and enjoy all the yummy flavors of spring and summer!

Number Of Ingredients 12

pie crust (store-bought or homemade -- enough for two 9" crusts)
2 c. tart apples; peeled, cored, and chopped
1 c. rhubarb; washed and chopped (not cooked)
1 c. strawberries; washed, hulled, and sliced
1 c. blueberries; washed
1 c. raspberries; washed
1 T. lemon juice
1 c. sugar
1/3 c. all-purpose flour
1 T. tapioca (or cornstarch)
2 T. milk
2 T. sugar

Steps:

  • If using frozen fruit, defrost and drain it in a large colander (this prevents the baked pie from being soggy)
  • Preheat oven to 375º F.
  • Line a 9" glass pie plate with 1 pie crust and set it aside
  • In a large bowl, combine all fruit and lemon juice.
  • Mix together sugar, flour, and tapioca; gently toss with fruit mixture.
  • Scoop fruit mixture into pie plate
  • Top with 2nd crust (see notes for lattice crust).
  • Brush top crust with milk and sprinkle with additional sugar (optional).
  • Cut a few slits in the top to allow steam to vent (unless you're using a lattice top).
  • Bake in preheated oven for 45 minutes, or until filling is bubbly in center and top is golden brown (cover with aluminum foil if the crust starts to get too brown).
  • Let pie rest for at least 15 minutes, then serve with ice cream or whipped cream.

5 ½ cups all-purpose flour
¼ teaspoon salt
2 cups shortening
¾ cup cold water
1 egg
1 tablespoon vinegar
4 cups apples - peeled, cored and chopped
2 cups chopped fresh rhubarb
2 cups sliced fresh strawberries
2 cups fresh blueberries
2 cups fresh raspberries
2 tablespoons lemon juice
2 cups white sugar
⅔ cup all-purpose flour
2 tablespoons tapioca
1 egg yolk, beaten
2 tablespoons water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine flour and salt. Cut in shortening until mixture resembles coarse crumbs. Whisk together 3/4 cup water, egg, and vinegar. Stir into flour until mixture forms a ball. Divide dough into 4 balls. Wrap in plastic and refrigerate for 4 hours, or overnight. Roll out dough portions to fit a 9 inch pie pan. Place bottom crusts in 2 pie pans. Set aside top crusts.
  • In a large bowl, combine apples, rhubarb, strawberries, blueberries, raspberries, and lemon juice. Mix together 2 cups sugar, 2/3 cup flour, and tapioca; gently toss with fruit mixture. Divide into 2 pastry lined pie pans. Cover with top crusts; trim and crimp edges. Brush tops with egg wash (1 egg yolk beaten with 2 tablespoons water). Cut a few slits in the top to allow steam to vent.
  • Bake in preheated oven for 50 to 60 minutes, or until filling is bubbly in center and top is golden brown.

1 teaspoon salt
1 teaspoon sugar
1 cup cold butter
1/4 cup cold water
FILLING:
1 medium tart apple, peeled and diced
1 cup diced fresh or frozen rhubarb, thawed
1 cup fresh or frozen raspberries, thawed and drained
1 cup fresh or frozen blueberries, thawed and drained
1 cup sliced fresh or frozen strawberries, thawed and drained
1 cup sugar
1/2 cup all-purpose flour
1 tablespoon lemon juice

Steps:

  • In a small bowl, combine flour, salt and sugar. Cut in butter until mixture resembles coarse crumbs. Gradually add water, tossing with a fork until a ball forms. Cover and refrigerate 1 hour or until easy to handle. , Preheat oven to 400°. On a lightly floured surface, roll out half the dough to fit a 9-in. pie plate. Transfer crust to pie plate. Trim to 1/2 in. beyond edge of plate., In a large bowl, combine filling ingredients; pour into crust. Roll out the remaining dough; cut out decorative shapes with cookie cutters. Place over filling. Cover edge loosely with foil., Bake 20 minutes. Reduce heat to 350°; remove foil. Bake 40-45 minutes or until crust is golden brown and filling is bubbly. Cool on a wire rack.

1 cup blackberry
1 cup blueberries

1 cup chopped rhubarb

  • Heat oven to 400º.
  • Line a 9" pie plate with one of the pie crusts.

1 cup blueberries
1 cup raspberries
1 cup strawberries
1 cup chopped rhubarb
1 cup chopped, peeled McIntosh apples
1 cup sugar,, plus additional for toppin
1/3 cup flour
1 tablespoon lemonjuice

Steps:

  • Preheat the oven to 425.
  • Use your favorite pie crust recipe and put into a 9 inch pie pan.
  • Trim the overhang to even with the top of pie pan.
  • Set another rolled out crust aside.
  • In a large mixing bowl, combine all of the ingredients until well blended. Spoon the fruit filling into the pie crusts. Cover the pie with the top crust (or make a lattice) Use some water to wet the rim of the bottom crust, that will help both crusts adhere together.
  • Crimp the crusts together all the way around. Make three slits in crust, or none if using lattice.
  • . Sprinkle the top with a little sugar. Bake for 15 minutes and then decrease the heat to 325° F and bake for another 30 minutes until the crust is golden and the fruit filling begins to bubble out through the slits.

  • If you using homemade pie dough,rRoll both disks of pie dough out to a 1/ 8-inch thickness on a floured surface. Fit one of the dough disks into a 9 inch pie pan. Trim the overhang to even with the top of pie pan. Set the other rolled out crust aside. In a large mixing bowl, combine all of the ingredients until well blended. Spoon the fruit filling into the pie crusts.Cover the pie with the top crust. 5-1/2 cups all-purpose flour
1/4 teaspoon salt
2 cups shortening
1 egg
1 tablespoon white vinegar
3/4 cup cold water
FILLING:
2 cups each fresh or frozen blueberries, raspberries and sliced strawberries
2 cups fresh or frozen chopped rhubarb
4 cups chopped peeled baking apples
2 cups sugar
2/3 cup all-purpose flour
2 tablespoons lemon juice
EGG WASH:
1 egg yolk
1 to 2 tablespoons water

Steps:

  • In a large bowl, combine flour and salt; cut in shortening until crumbly. Whisk egg, vinegar and water; sprinkle over dry ingredients and toss. If needed, add more water, 1 tablespoon at a time, until dough can be formed into a ball. Divide into four balls. Cover and chill for 30 minutes. , On a lightly floured surface, roll out two balls to fit two 9-in. pie pans. Combine filling ingredients (partially thaw fruit if necessary); spoon into crust. Roll remaining pastry to fit pies; place over filling. Seal and flute edges. , Beat yolk and water; brush over pies. Cut slits in top crust. Bake at 350° for 50-60 minutes or until golden brown.
