2 1/2 gal water
2 c tender quick
2 c salt
1 c soy sauce
1/2 c liquid smoke flavoring
2 c brown sugar, firmly packed

BRINE FOR CORNING BEEF

4 quarts water
1 1/2 pounds kosher salt
1 pound dark brown sugar
2 bay leaves
1 teaspoon mustard seeds
1 sprig thyme
10 juniper berries
10 crushed peppercorns
1 tablespoon baking soda
4 gallons boiling water
1 egg, in shell
Salt, if needed
Cold water to cover meat
1 (5 pound) beef brisket
5 cloves garlic

Steps:

  • Bring first 9 ingredients up to the peppercorns to a boil and boil hard for 5 minutes. Leave the brine to cool. Clean a stoneware crock or plastic bucket and its lid with a solution of 1 tablespoon baking soda to 1 gallon boiling water. Rinse well and leave to drain dry. To test the saltiness of the brine put egg, in shell in the cooled brine. If it doesn't float, add enough salt until it does. To draw off any excess blood and to help the brine penetrate, pierce the beef all over with a trussing needle or skewer and place meat in cold water for about 45 minutes. Remove the meat from water and place in crock or bucket. Pour the cooled brine over the brisket. Add garlic to the brine. Place a plate on top of the brisket to submerge. Place a lid or plastic wrap over container. Store in a refrigerator or dry place, at a temperature below 60 degrees. Salting time depends on the thickness of the meat. Allow 3 to 10 days for salting time for brisket. When removing meat from brine, always use clean tongs: this way the brine will stay good longer and be reused with the same kind of meat. It is possible to strain off the brine and reboil it, adding a refresher of about half the above quantities. Naturally the crock or bucket will need a complete cleaning. This should be done before mold appears.

Soak for several hours, or overnight. (Note: Make certain the meat is fully submerged in the brine, and make more brine as needed to fully cover the meat.)

This is just what its name implies...the absolute best beef stew ever. It is wonderful in the colder weather and really warms you up. I got the basic recipe from an old Amish cookbook and tweeked it a bit. My family loves it with home baked bread, so I always make Amish White Bread, recipe #26526 to go along with it.

2 -3 lbs boneless beef cubes
2 tablespoons shortening
1 large onion, sliced
4 cups boiling water
1 tablespoon salt
1 tablespoon lemon juice
1 tablespoon sugar
1 tablespoon Worcestershire sauce
1/2 teaspoon pepper
1 1/2 teaspoons paprika
1 dash allspice
1 dash clove
6 carrots, peeled and cut into chunks or 1 lb peeled baby carrots
6 potatoes, peeled and cut into chunks
1/2 cup cold water
1/4 cup flour

Steps:

  • Melt shortening over high heat in a large pot or dutch oven.
  • Add beef cubes and brown over medium heat, stirring occasionally, about 15-20 minutes.
  • Add onions, boiling water, salt, lemon juice, sugar, worcestershire sauce, pepper, paprika, allspice and cloves.
  • Simmer, tightly covered, for about 2 hours, stirring occasionally.
  • Add vegetables and simmer another 30 minutes (covered), or until tender.
  • Note: if your lid is not tight on the pot, you may not have enough liquid left to just about cover everything after you add the veggies.
  • If this is the case, add more water to barely cover ingredients.
  • Mix cold water and flour together and blend until smooth.
  • Push meat and veggies to the side of the pot and add flour mixture slowly, incorporating into liquid.
  • When gravy thickens, stir all ingredients gently to distribute gravy evenly.
  • Simmer another 5 or 10 minutes and enjoy!

HONEY-BOURBON BRINE FOR STEAKS

Just wait until you taste your steaks with this brine, you will be in heaven lol! it's a fantastic brine for steaks and also any cut of beef. The brine is enough for 6 (1-inch) steaks or a few less thicker steaks. Do not brine the steaks anymore than 6 hours, 8 hours maximum, and please DO NOT brine for 24 hours! The steaks must be left out on the counter for a couple of hours to bring down to almost room temperature, this is an important step to relax the meat fibers, this will create a more tender and juicy steak, so start this recipe early in the day. Use kosher salt *only* for this brine!

2 1/2 cups water (room temperature)
1/3 cup bourbon whiskey
1/3 cup honey
3 tablespoons kosher salt (use kosher salt only!)
1 tablespoon chopped lemon zest
1 teaspoon black pepper (more to season the steaks before cooking)
2 tablespoons coarsely chopped fresh garlic (can use more)
6 boneless beef steaks (about 1-inch thick)

Steps:

  • In a bowl combine water with 1/3 cup bourbon, 1/3 cup honey, kosher salt, lemon zest and black pepper; stir to completely dissolve the salt, then add in the garlic.
  • Place the steaks in a large resealable plastic bag and set in a shallow dish.
  • Pour the brine over the steaks then seal the bag.
  • Toss bag to coat the steaks in the brine.
  • Place in refrigerator for 6-8 hours (no more than 8 hours!) tossing the bag occasionally making certain that the meat is covered with the brine.
  • About 2 hours before cooking the steaks, remove steaks and discard the marinade.
  • Rinse the meat VERY well under cold water and place on a plate/s.
  • Let the beef sit our on the counter for about 2 hours or until almost room temperature (THIS IS IMPORTANT! the steaks must come down to room temperature before cooking!).
  • Season the steaks with only black pepper (salt the steaks after cooking).
  • Place the steaks on the grill and grill to desired doneness (or steaks can be oven-broiled).

1 pound ground beef
1 cup milk
1 cup crushed saltine crackers
1 onion, finely chopped
1 teaspoon salt
1 teaspoon ground black pepper
1 (14.5 ounce) can cream of mushroom soup

Steps:

  • Mix ground beef, milk, saltine cracker crumbs, onion, salt, and black pepper in a bowl. Shape mixture into a narrow loaf and place onto a baking sheet; cover and refrigerate 8 hours to overnight.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat a large skillet over medium-high heat. Cut loaf into 1-inch-thick slices and sear the 'steaks' in the hot skillet until browned, 2 to 3 minutes per side. Insides will still be pink. Arrange slices in a roasting pan. Spread mushroom soup over steaks.
  • Bake steaks in the preheated oven until mushroom soup is bubbling and meat is no longer pink inside, about 1 hour. An instant-read meat thermometer inserted into the center of a meat slice should read at least 160 degrees F (70 degrees C).
