AMISH BREAKFAST CASSEROLE
We've enjoyed a few hearty breakfast casseroles while visiting an Amish inn. When I asked for a recipe, one of the ladies told me the ingredients right off the top of her head. I modified it to create this quick and easy breakfast casserole my family loves. -Beth Notaro, Kokomo, Indiana

- Preheat oven to 350°. In a large skillet, cook bacon and onion over medium heat until bacon is crisp; drain. In a large bowl, combine remaining ingredients; stir in bacon mixture. Transfer to a greased 13x9-in. baking dish., Bake, uncovered, until a knife inserted in the center comes out clean, 35-40 minutes. Let stand 10 minutes before cutting.

- Preheat oven to 350F. Spray a 9x13-inch casserole dish with cooking spray.
- In a large skillet, combine the onion and bacon and cook until bacon is crisp and onions are translucent. Drain off fat; add garlic and stir for about a minute or until fragrant. Remove from heat and set aside.
- In a large mixing bowl, stir together the remaining ingredients. Add the bacon and stir until combined. Transfer to the prepared casserole dish and bake uncovered for 35-40 minutes or until a knife inserted near the center comes out clean. Let stand 5 minute before serving.

This Amish Breakfast Casserole is a fast and easy hash brown egg casserole that can be made as a make-ahead breakfast. It's perfect for weekends or a holiday brunch.

- Use a large saute pan to brown the bacon and onions over medium-high heat. This should take about 10 minutes and the onions should be soft and translucent. Allow to cool slightly and then drain the grease.
- Combine the remaining ingredients in a large mixing bowl and then add the six eggs. Stir to combine well. Pour the mixture into a greased 9 x 13 baking pan.
- If preparing as a make-ahead breakfast, wrap and seal the casserole and refrigerate overnight.
- When ready to eat, bake at 350° F. for 35 minutes. Garnish with additional fresh herbs if desired.

- Coat a 9x13 baking dish with nonstick cooking spray.
- Heat oil in a large skillet over medium-high; add bacon and cook until almost crispy, about 6 minutes. Drain off fat. Stir in the onion and chicken sausage; saute until onion is soft and translucent, about 3 minutes. Removed from heat.
- Transfer mixture to a large bowl. Add in the eggs, cottage cheese, potatoes, cheese, salt, and pepper; stir to combine thoroughly.
- Spread mixture evenly into the prepared baking dish. Cover and place in the refrigerator overnight.
- In the morning, preheat oven to 350º F. Remove cover and bake for 45 minutes. Let stand 10 minutes before cutting. Serve and enjoy!

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Heat a large skillet over medium-high heat; cook and stir bacon and onion until bacon is evenly browned, about 10 minutes. Drain. Transfer bacon and onion to a large bowl. Stir in potatoes, eggs, Cheddar cheese, cottage cheese, and Swiss cheese. Pour mixture into prepared baking dish.

- In a large bowl, mix together the flour, cornmeal, salt and baking powder. Add potatoes, 1/3 cup of oil, eggs and onion and mix until evenly blended.
- Heat 1/4 cup of oil in a large skillet over medium-high heat. Drop heaping tablespoons of the potatoes into the hot oil, flattening slightly. Cook until browned on the bottom and then flip and cook on the other side. Keep in a warm oven while frying the rest.
