AMERICAN INDIAN GREEN CHILE STEW

A delicious green chile stew with American Indian roots.

Number Of Ingredients 12

1 large potato (I only had red potatoes which was perfect for me; no peeling)
8 ounces fresh ground beef
Kosher salt & freshly ground black pepper
1/3 cup flour (might need more depending on how much grease is in the meat)
3/4 cup mild green chili sauce (fresh or bottled)
1/2 cup hot green chili sauce (fresh or bottled)
1 1/2 cups corn (frozen - use fresh in season if you prefer)
2 teaspoons salt
2 teaspoons black pepper
2 teaspoons green chili powder
Grated cheese (optional, I used a Mexican mixture)
Sour cream (optional)

Steps:

  • Peel and cube the potato into 1/2 inch diameter pieces; put the potatoes into a pot with about 4 cups of water to cover and boil until fork tender (not quite soft enough to mash). Drain and set aside.
  • In the same pot on medium heat, cook the ground beef and lightly sprinkle with salt and pepper. Break into serving sized pieces (whatever size you want).
  • Add the chili powder, if using, to the beef and stir.
  • When the beef is browned, turn off the heat. Slowly add the flour to the beef in order to make a roux. Mix the flour into the beef completely until no dry flour remains.
  • Add the green chiles, corn, salt, black pepper and chili powder. Fully mix all the ingredients and place the stockpot back on the stovetop.
  • Bring up to temperature on medium heat, stirring occasionally. This may take up to 30 minutes or more.
  • Serve, garnishing with sour cream and cheese if desired.

2 pounds cut up pork, chicken, or beef
Oil
3 heaping tablespoons flour
1 tablespoon fresh chopped garlic
2 1/2 cups chicken bouillon
One 14 1/2-ounce can crushed tomatoes
2 large potatoes, diced
1 (2 pound) package thawed Chile Products of New Mexico Green Chile with or without the juice
Salt
1 teaspoon kitchen bouquet
Shredded cheese, optional
Warm tortillas or crusty bread, optional

Steps:

  • Brown pork, chicken, or beef in oil. Sprinkle flour over the meat and add chopped garlic according to your taste. Add chicken bouillon, crushed tomatoes, potatoes, and Green Chile. Add salt to taste. Bring to a slow boil and simmer until meat and potatoes are tender, about 45 minutes. The secret is to add a teaspoon of kitchen bouquet at almost the end of cooking, which brings out the flavor even more! You can sprinkle shredded cheese on top if you like and serve with warm tortillas or crusty bread.

1 large potato
8 ounces fresh ground beef

3/4 cup mild green chiles (prefer fresh, but can substitute with frozen or canned)
1/2 cup hot green chiles (prefer fresh, but can substitute with frozen or canned)
1 1/2 cups corn (prefer cut off cob, but can substitute frozen or canned)
2 teaspoons green chili powder

Steps:

  • Start by peeling and cubing the potato into 1/2-inch diameter pieces and set aside.
  • Next, in a saute pan on medium heat, cook the ground beef and lightly sprinkle with salt and pepper.
  • While the beef is cooking, place 4 cups water in a stock pot with the potatoes and bring to a boil. Cook the potatoes until fork tender; do not cook until the potatoes mash.
  • When all the rawness is cooked out of the beef, turn off the heat. Slowly add the flour while mixing into the beef in order to make a roux. Mix the flour into the beef completely until no dry flour remains. (Depending on the fat ratio of the beef, you may need to add more or less flour. This all depends on how thick you want your stew in texture.)
  • Once your roux is complete, add to the stockpot with the cooked potatoes. The meat may be in large pieces, so with a large spoon, break up into desired size. Once the meat is fully broken down, add the green chiles, corn, green chili powder, 2 teaspoons salt and 2 teaspoons black pepper. Fully mix all the ingredients and place the stockpot back on the stove top. Bring up to temperature on medium heat. Once the soup is at proper serving temperature, serve in medium bowls and enjoy. Feel free to add cheese or sour cream if desired.
  • Optional serving suggestions: grated cheese, sour cream.

Many agree the best green chiles are grown in the Hatch Valley in southern New Mexico, so it's great to make this delicious chicken stew in early fall when they're are available. (Get a friend to send you some, or order them online.) But you can also make it throughout the year using frozen or canned green chiles. Though pork, beef or lamb are more traditional for green chile stew, this chicken version is a bit lighter, quicker to cook and still packs a punch. It's not a dish for the faint of heart.

6 large bone-in, skin-on chicken thighs, legs, or a cut-up whole chicken (about 3 pounds)
Kosher salt and black pepper
2 tablespoons olive oil or lard
Flour, for dredging
1 medium yellow onion, diced
3 large garlic cloves, minced
1/2 teaspoon cumin seeds, toasted and ground
1 cup chopped roasted New Mexico green chile, fresh or frozen and thawed
3 cups chicken stock or water
2 large potatoes, peeled, cut in 1-inch cubes
3 large carrots, peeled, cut in 2-inch slices
3 tablespoons cornstarch dissolved in 2 tablespoons cold water (optional)
Chopped cilantro, for garnish
Warm flour or corn tortillas, for serving
Lime wedges, for serving

Steps:

  • Season chicken thighs generously with salt and pepper. Heat oil in a Dutch oven or heavy-bottomed pot over medium-high heat. Dredge chicken in flour and shake off excess. Brown chicken well on both sides, then remove and set aside.
  • Add onions to pot, season lightly with salt and cook, stirring, until softened and beginning to brown, 6 to 8 minutes. Add garlic and cumin, and cook for 1 minute. Then add chopped chiles and chicken stock and bring to a boil.
  • Return chicken to pot; reduce heat to a brisk simmer, and cook, covered with lid ajar, for 30 minutes. Add potatoes and carrots and cook for 20 to 25 minutes more, until vegetables are soft but not falling apart.
  • Skim fat from surface of sauce. Taste for seasoning and adjust salt. For a thicker sauce, add dissolved cornstarch and stir well. Cook for 1 minute more.
  • Serve in deep wide soup plates with plenty of sauce. Sprinkle with chopped cilantro. Serve with warm tortillas and lime wedges.

  • If you are using the dried corn, put it in a pot of water and start boiling it before you start anything else, because it can take a long time to soften.
  • Salt the venison well, then dust it in the flour, pressing the flour into the meat. Heat 2 tablespoons of the lard or vegetable oil in a Dutch oven or similar soup pot set over medium-high heat.
  • When the oil is hot, brown the meat in batches. Make sure no piece is touching another, and take your time with this. You want each piece well browned. Move them to a bowl as you go. You will likely need to add another tablespoon of oil late in this process.
  • When the meat is all browned, add the final tablespoon of oil and the onions. Stir this well, as the moisture from the onions will deglaze the pot. You want that. Sauté the onions until they too are nicely browned. This whole process, meat and onions, can take 30 minutes or more.
