3 pounds jumbo tail-on shrimp (21- to 25-count), peeled and deveined
8 to 10 cloves garlic, finely chopped
1/4 cup extra-virgin olive oil
2 tablespoons fresh lemon juice
1 1/2 teaspoons kosher salt
3/4 teaspoon cracked black pepper
Green Goddess Dressing, recipe follows
3/4 cup plain Greek yogurt
1/3 cup mayonnaise, such as Duke's
2 tablespoons buttermilk, optional
1/2 cup fresh parsley leaves
1/4 cup chopped fresh chives
1 tablespoon chopped fresh basil
2 teaspoons chopped fresh tarragon
1 clove garlic
2 teaspoons lemon zest
1 tablespoon fresh lemon juice
1 teaspoon Worcestershire sauce
1/2 teaspoon kosher salt
1/4 teaspoon black pepper

Steps:

  • Preheat the oven to 450 degrees F.
  • In a large bowl, combine the shrimp, garlic, olive oil, lemon juice, salt and pepper. Spread the shrimp in a single layer on two 17-by-13-inch rimmed baking sheets lined with parchment paper.
  • Roast the shrimp, turning once, until they are opaque and firm, 6 to 8 minutes. Transfer the shrimp to a shallow dish and refrigerate, partially covered, for at least 3 hours. Serve with Green Goddess Dressing.
  • Process the yogurt, mayonnaise, buttermilk, if desired, parsley, chives, basil, tarragon, garlic, lemon zest, lemon juice, Worcestershire, salt, and pepper in a food processor 30 seconds or until smooth. Cover and refrigerate until ready to serve.

1 ½ tablespoons olive oil
1 pound shrimp, peeled and deveined
salt to taste
6 cloves garlic, finely minced
¼ teaspoon red pepper flakes
3 tablespoons lemon juice
1 tablespoon caper brine
1 ½ teaspoons cold butter
⅓ cup chopped Italian flat leaf parsley, divided
1 ½ tablespoons cold butter
water, as needed

Steps:

  • Heat olive oil in a heavy skillet over high heat until it just begins to smoke. Place shrimp in an even layer on the bottom of the pan and cook for 1 minute without stirring.
  • Season shrimp with salt; cook and stir until shrimp begin to turn pink, about 1 minute.
  • Stir in garlic and red pepper flakes; cook and stir 1 minute. Stir in lemon juice, caper brine, 1 1/2 teaspoon cold butter, and half the parsley.
  • Cook until butter has melted, about 1 minute, then turn heat to low and stir in 1 1/2 tablespoon cold butter. Cook and stir until all butter has melted to form a thick sauce and shrimp are pink and opaque, about 2 to 3 minutes.
  • Remove shrimp with a slotted spoon and transfer to a bowl; continue to cook butter sauce, adding water 1 teaspoon at a time if too thick, about 2 minutes. Season with salt to taste.
  • Serve shrimp topped with the pan sauce. Garnish with remaining flat-leaf parsley.

2 pounds (8- to 10-count) shrimp, peeled with the tails on
1 teaspoon coarse sea salt
4 slices country bread, toasted

Steps:

  • Preheat the oven to 400 degrees.
  • Melt the butter over low heat in a medium (10-inch) saute pan. Add the olive oil, garlic, rosemary, red pepper flakes, 1 teaspoon kosher salt, and 1/2 teaspoon black pepper and cook over low heat for one minute. Off the heat, zest one of the lemons directly into the butter mixture.
  • Meanwhile, arrange the shrimp snugly in one layer in a large (12-inch) round ovenproof sauté pan (or 10 × 13-inch baking dish) with only the tails overlapping. Pour the butter mixture over the shrimp. Sprinkle with the sea salt and 1/2 teaspoon black pepper. 4 lemons
4 pounds large shrimp, peeled, deveined, and rinsed
3 garlic cloves, minced
1/2 cup extra-virgin olive oil
1 1/2 teaspoons coarse salt
1/4 teaspoon freshly ground pepper

Steps:

  • Finely grate zest of 3 lemons. Juice all 4 lemons; strain juice, and set aside. Place shrimp in a large bowl; add lemon zest, garlic, and 1/4 cup olive oil; toss well to coat evenly. Season with salt and pepper.
  • Heat a large saute pan over medium heat. Add 1 tablespoon olive oil, and heat until oil is hot but not smoking. Working in batches, arrange a single layer of shrimp in pan, being careful not to overcrowd pan. Cook until underside is golden brown, 45 to 60 seconds. Turn over, and continue cooking until other side is golden brown and shrimp is cooked through, about 1 minute. Transfer to a large serving platter. Deglaze pan with 1 1/2 tablespoons reserved lemon juice, stirring up any browned bits with a wooden spoon, and pour pan sauce over shrimp. Cover loosely with foil while repeating process with remaining batches, adding 1 tablespoon oil each time.

Amazing Roasted Shrimp With Garlic image

This is one of the best shrimp dishes I've ever had. It was inspired by a similar dish I had at Bobby Flay's restaurant Bolo a while back. This is fantastic with a good crusty Italian bread to spread the garlic on and soak up the sauce, but you might also try it served over pasta, maybe with a splash of lemon juice. Edit: I added a bit of butter to the recipe as some reviewers have suggested for a richer sauce. Also, I tend to cook with little or no salt, so if it seems a little bland, try sprinkling a little (preferably kosher) salt.

  • IMPORTANT NOTE: To obtain maximum flavor of this dish, be sure to peel the shrimp BEFORE cooking. Five minutes is not enough time for the shrimp to absorb the flavor of the oil, garlic and chilis through the shell.

1 cup whole garlic clove (from 2 bulbs)
1/4 cup heavy cream
1 cup packed flat leaf parsley
2 tablespoons fresh lime juice
1/4 cup water
8 tablespoons olive oil, divided
2 lbs jumbo shrimp, in shells peeled and deveined, leaving tails in tact (10 to 12 per pound)

cooked rice

Steps:

  • Preheat oven to 400 degrees F with rack in middle.
  • Put garlic cloves on a small baking sheet and roast in oven, stirring occasionally, until golden in some spots, 20-25 minutes.
  • Remove from oven and increase temperature to 450 degrees F.
  • Puree garlic, cream, parsley, lime juice, water 6 tbsp oil, 1/2 tsp salt, and 1/4 tsp pepper in a blender until very smooth.
  • Pat shrimp dry, then toss with remaining 2 tbsp oil, 1/4 tsp salt and 1/4 tsp pepper.
  • Arrange shrimp in 1 layer in a large shallow baking pan and roast until just cooked through, about 10 minutes.
  • Meanwhile, heat sauce in a 12 inch heavy skillet over medium heat, stirring occasionally, until sauce is just heated through (do not boil), about 3 minutes.
  • Add hot shrimp with any juices to skillet and cook, stirring until shrimp and sauce are hot, about 2 minutes.
  • Transfer to serving bowl.
  • Serve with cooked hot rice.
