Steps:
- Heat the oven to 180C/160C fan/gas 4. Butter and line a 30 x 15cm rectangle tin with baking parchment. Melt the butter, sugar and honey in a pan over a medium heat, stirring frequently until the butter has melted and the mixture is smooth.
- Put the oats in a mixing bowl, then pour over the butter and honey mixture. Stir until all the oats are coated. Tip into the prepared tin, and use a spatula or the back of a spoon to evenly spread out the mixture. Cook for 10-15 mins until lightly golden. Leave to cool in the tin, then remove before cutting into squares.

OLD FASHIONED FLAPJACKS
Been using this recipe for many years. It came from one of McCalls oldest cookbooks. ALWAYS use real maple syrup.

Steps:
- Preheat griddle so that a drop of water beads when dropped on it.
- Combine dry ingredients.
- Combine wet ingredients and beat well. (Do this quickly as the butter will tend to set up when it hits the cold milk).
- Add wet ingredients to dry ingredients.
- Mix but not too much. Batter will be slightly lumpy.
- Drop a couple tablespoons for each pancake onto hot griddle and cook until bubbles appear in batter and bottom is golden brown.
- Serve with real butter and real maple syrup.

- Preheat oven to 350°F. Butter 8 x 8 x 2-inch metal baking pan. Combine first 3 ingredients in heavy medium saucepan. Stir constantly over medium-low heat until butter melts, sugar dissolves, and mixture is smooth. Remove from heat. Add oats and salt; stir until coated. Transfer mixture to prepared pan and spread out in even layer.
- Bake until top is golden (edges will be darker), about 25 minutes. Cool in pan on rack 5 minutes. Cut into 4 squares; cut each into 4 triangles (mixture will still be soft). Cool completely in pan before serving.
- A type of syrup popular in Great Britain; available at some supermarkets, specialty foods stores, and British import shops.

Steps:
- Heat oven to 200C/180C fan/gas 6 and line a 20 x 20cm baking tin with parchment. Melt the butter, sugar, honey and a pinch of salt in a pan. Once the mixture is bubbling and combined, stir in the oats.
- Tip the oat mixture into the lined baking tin and press down with the back of a spoon. Scatter over the raspberries, then lightly press them into the oat mixture. Bake for 25-30 mins until golden brown. Leave to cool, then cut into 9 or 12 flapjacks.

- Preheat the oven to 190ºC (375ºF) and grease and line a 20cm (8 inch) square baking tin with non-stick parchment paper. Leave a bit of paper overhanging for easy removal.
- Add the almonds to a food processor and pulse until roughly chopped. There should be a mixture of small and medium sized pieces.
- Tip the oats, honey, melted butter, salt, and vanilla extract into the processor with the nuts and then pulse 5-6 times until combined. Don’t over-mix the dough or you’ll lose all of the oats’ texture – pulse just until it starts to clump together.
- Scrape the dough into the prepared tin and press it down very firmly with your hands or the back of a measuring cup. Bake the flapjacks for 15-18 minutes or until the top is golden brown and the edges are a bit darker and slightly crispy. There will be a slight softness to the middle of the bars and that’s okay.
