Calling all chocoholics! These tender chocolate muffins with a double hit of chocolate make a delicious breakfast or after-school snack.

Number Of Ingredients 11

2 large eggs
1 cup low fat buttermilk (see note)
2 teaspoons vanilla extract
1¾ cups all-purpose flour, spooned into measuring cup and leveled-off
⅔ cup natural unsweetened cocoa powder, such as Hershey's
1¼ cups light brown sugar, packed (be sure it is fresh with no hard lumps)
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
1cup semi-sweet or bittersweet chocolate chips
1 stick (½ cup) unsalted butter, melted and slightly cooled

Steps:

  • Position a rack in the center of the oven and preheat to 425°F. Line a standard 12-cup muffin pan with paper liners.
  • In a large measuring cup or bowl, whisk together the eggs, buttermilk, and vanilla extract.
  • In another large bowl, whisk together the flour, cocoa powder, brown sugar, baking powder, baking soda, and salt. Rub the mixture through your fingers to break up any lumps of brown sugar.
  • To the dry ingredients, add ¾ cup of the chocolate chips, the buttermilk-egg mixture, and the melted butter. Using a rubber spatula or wooden spoon, mix until until just combined.
  • Using an ice cream scoop or two spoons, fill the muffin cups to the brim with batter. Distribute the remaining ¼ cup of chocolate chips evenly over the muffin tops, pressing them lightly into the batter. Place in the oven and bake for 8 minutes, then turn the oven down to 350°F and bake for about 12 minutes more, or until a toothpick inserted in the center of a muffin comes out clean (check a few spots as the melted chocolate chips will make the tester look wet). Transfer to a wire rack and let cool for about 5 minutes before removing the muffins from the pan; cool on a rack.
  • Note: If you'd like to make your own buttermilk, check out the easy method here.
  • Freezer-Friendly Instructions: The muffins can be frozen in an airtight container or sealable plastic bag for up to 3 months. Thaw for 3 - 4 hours on the countertop before serving. To reheat, wrap individual muffins in aluminum foil and place in a preheated 350°F oven until warm.

Steps:

  • Preheat the oven to 400 degrees F.
  • Put the flour, baking powder, baking soda, cocoa, sugar, and 3/4 cup of the chocolate chips into a large bowl. Pour all the liquid ingredients into a measuring jug. Mix the dry and wet ingredients together, remembering that a lumpy batter makes the best muffins. Spoon into the prepared muffin cases. Sprinkle the remaining 1/4 cup chocolate chips on top and then bake for 20 minutes or until the muffins are dark, risen and springy.

¼ cup maple syrup or honey
1 teaspoon vanilla extract
2 teaspoons apple cider vinegar
1 cup white whole wheat flour (can sub 1:1 gluten free flour mix, if needed)
1 teaspoons baking soda
1 teaspoons baking powder
¼ cup cocoa powder
1 teaspoon ground cinnamon
¼ teaspoon salt
chocolate chips** (to taste and optional)

Steps:

  • Preheat your oven to 350 ℉ and line a 12-hole muffin tin with liners. Set aside
  • In your blender, combine eggs, banana / applesauce, carrots, spinach/kale, maple syrup/ honey, oil, vinegar, and vanilla.
  • Blend until mixture is smooth.
  • Add flour, baking powder, baking soda, salt, cocoa powder and cinnamon. Process until just mixed. If you do not have a high speed blender, combine everything in a bowl and mix by hand.
  • Finally, fold in chocolate chips (if using).
  • Portion batter into prepared muffin tin and top with extra chocolate chips if desired.
  • Bake for 20-22 minutes or until a toothpick inserted into the middle comes out clean.
  • Let cool in pan for 5 minutes before transferring to a cooling rack. Enjoy and let cool completely before storing leftovers in an air-tight container in fridge or freezer.

1/2 cup coconut sugar
1/2 cup cocoa powder
1 teaspoon baking soda
1/8 teaspoon salt
1/2 cup chocolate chips (+ more for topping)
1 cup mashed banana*
2 large eggs
1/2 cup maple syrup
1 cup unsweetened almond milk
3 tablespoons coconut oil (melted)
1 teaspoon vanilla extract

Steps:

  • First, preheat oven to 350ºF and line a muffin tin with muffin liners. We suggest also spraying your muffin liners with cooking spray just in case.
  • Next, place dry ingredients into a medium bowl and mix.
  • Then, in a small bowl, mash 1 large banana. Measure it and add 1 cup to a large bowl.
  • Crack 2 eggs into the large bowl and whisk with mashed banana. Add maple syrup, almond milk, and vanilla extract and mix until combined.
  • Add dry ingredients into wet ingredients and then mix. Then, add in melted coconut oil and mix again.
  • Fill each muffin about 3/4 of the way full (these are going to be big muffins) and sprinkle on a few more chocolate chips. Then, place in the oven at 350ºF and bake for 18-22 minutes or until the center is fully cooked.

This mini muffin recipe is my all-time favorite breakfast treat! They taste like you're eating fudgy brownies for breakfast, complete with chocolate chips. The muffins will keep for at least a week if stored in an airtight container in the refrigerator, and they freeze really well, too!

1 cup (120g) whole wheat flour or gluten-free* flour (measured like this)
1 cup (80g) unsweetened cocoa powder (measured like this)
2 tsp baking powder
¼ tsp salt
1 tbsp (14g) coconut oil or unsalted butter, melted and cooled slightly
2 large egg whites, room temperature
2 tsp vanilla extract
½ cup (120g) plain nonfat Greek yogurt
2 tbsp (30mL) pure maple syrup
1 tsp vanilla crème stevia
¾ cup (180mL) nonfat milk
¼ cup (56g) miniature chocolate chips

Steps:

  • Preheat the oven to 350°F, and lightly coat 32 mini muffin cups with nonstick cooking spray.
  • In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. In a separate bowl, whisk together the coconut oil, egg whites, and vanilla. Stir in the Greek yogurt, mixing until no large lumps remain. Mix in the maple syrup and stevia. Alternate between adding the flour mixture and milk, beginning and ending with the flour mixture, and stirring just until incorporated. (For best results, add the flour mixture in 4 equal parts.) 60g caster sugar
2 tbsp vegetable oil
100ml whole milk
50g chocolate chips (optional)

Steps:

  • Heat the oven to 180C/160C fan/gas 4. Line a muffin tin with six muffin cases. Sieve the flour, cocoa and baking powder into a medium bowl. Mix together the egg, sugar, oil and milk together in a jug, then gradually pour into the dry ingredients (add chocolate chips now to make double chocolate muffins, if you like) and mix until combined.
  • Spoon the mixture evenly into the cake cases and bake for 20-25 mins until a skewer inserted into the middle comes out clean. Remove from the oven and leave to cool.
  • Meanwhile, gradually mix ½-1 tbsp water into the icing sugar until you have a loose consistency that's not too runny. Drizzle the icing over the muffins once cool.

1 large egg
1/4 cup unsalted butter, softened (see notes)
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350. Line a muffin tin with muffin liners and spray with cooking spray.
  • Combine oats and milk and let those soak while you prepare the rest of the recipe, to soften the oats.
  • In a large bowl, whisk together the egg and brown sugar until smooth and caramel colored.
  • Add vanilla and butter and whisk to combine. You may have small pieces of butter in the mixture, which is totally fine. (See notes.)

2 ½ cups old fashioned oats (1.5 cups ground)
2 tbsp oats (for muffin tops)
2-3 large bananas, very ripe (1 cup mashed or 1 cup applesauce)
2 large eggs (lightly beaten)
1/3 cup honey
3/4 cup milk
2 tsp vanilla (pure)
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
3 -4 Tbsp cocoa powder
1 cup chocolate chips (divided into ½ cup portions)

Steps:

  • Preheat oven to 325. Place oats on a baking sheet and toast until lightly browned, stirring once (about 4 to 6 minutes). Let cool to room temperature. (If you are in a hurry you can skip this step and use plain old fashioned oats, however the toasting adds flavor!)
  • Place 1.5 cups of oats in a food processor and blend/pulse until they reach a rough, flour like consistency.
  • Mash bananas well, they should have no lumps. I use my mixer to mash them before adding the other wet ingredients.
  • Add eggs, honey, milk and vanilla. Mix to combine.
  • Add dry ingredients (including both ground and whole oats) to wet ingredients and mix until just incorporated. Allow these to sit for 10 minutes to soak the oats.
  • Fold in approximately 1/2 cup chocolate chips, if using.
  • Scoop into muffin tin, lined with muffin wrappers (makes 14 muffins). You can spray the bottom of the liners lightly with spray oil to make the muffins easier to remove from the wrappers.
  • Sprinkle muffin tops with reserved oats and remaining 1/2 cup chocolate chips, press down lightly.
  • Bake at 350 for about 20 -23 minutes, a toothpick inserted in the center of a muffin should come out clean.
