REAL SOUTHERN CORNBREAD
This is my families recipe, with a small change in the method which I learned from a book. It's the only cornbread I will eat. Please use a 10 inch cast iron skillet -- it makes a big difference in how this bread turns out.

Steps:
- Put the skillet in the oven and preheat to 375 degrees.
- Combine the dry ingredients except for the baking soda in a bowl.
- In another bowl, mix the buttermilk and the baking soda.
- Set aside.
- In a small bowl, beat the egg with the sugar until combined.
- Add the oil and mix until combined.
- Pour this mixture into the buttermilk/baking soda, and mix.
- When the oven is preheated, toss the butter into the skillet and let it melt.
- Meanwhile, pour the wet ingredients into the dry, and mix in as few strokes as it takes to just make the dough come together.
- Pull the skillet out of the oven, swirling to get the butter covering the bottom and up the sides of the skillet.
- Pour the batter immediately into the pan, smoothing the top, then back into the oven for about 25 minutes, or until golden brown and pulled away from the sides of the pan.
- Turn out onto a cutting board, cut into wedges and serve.
- NOTE: IMNSHO- cornbread isn't worth making if you don't make it in a cast-iron skillet.
- It may just be my upbringing, but it tastes better somehow.
- And please do not add the baking soda to the dry ingredients.
- I can't explain why, but adding it to the buttermilk makes a big difference in the texture.
ANADAMA BREAD
This is an old New England favorite with cornmeal and molasses. It's best when hot out of the oven or toasted.

Steps:
- Place 1/2 cup water and cornmeal in a small saucepan. Bring to a boil over medium heat, stirring occasionally. Cook until mixture thickens; about 5 minutes. Remove from heat and stir in the butter or margarine and molasses. Let cool to lukewarm.
- In a small mixing bowl, dissolve yeast in 1/2 cup warm water. Let sit until creamy; about 10 minutes.
- In a large mixing bowl, combine the cooled cornmeal mixture with the yeast mixture; stir until well blended. Add 2 cups of the flour and the salt; mix well. Add the remaining flour, 1/2 cup at a time, stirring well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes.
- Lightly oil a large mixing bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and put in a warm place to rise until doubled in volume, about 1 hour.
- Preheat oven to 375 degrees F (190 degrees C).
- Deflate the dough and turn it out onto a lightly floured surface and form into a loaf. Place the loaf in a lightly greased 9x5 inch loaf pan. Cover with a damp cloth and let rise until doubled in volume, about 40 minutes.
- Bake in preheated oven for about 30 minutes, or until the top is golden brown and the bottom of the loaf sounds hollow when tapped.

FAMOUS DAVE'S CORNBREAD WITH JALAPENO HONEY GLAZE
This is BY FAR the best cornbread I have ever had. I got it from a special section of the Minnesota Monthly Magazine a few years back. I had a lot of the glaze left over, so you can easily make ½ of the glaze recipe and have enough. I made cornbread in a 9x13 inch pan and it was fully cooked in 25 minutes, which would lead me to believe that cooking time for the muffin tins may need to be reduced (I recommend checking after 15-18 minutes). Steps:
- CORNBREAD:.
- Mix first 6 ingredients in bowl (cornmeal through cayenne pepper).
- Mix next 6 ingredients in a different large bowl (milk through honey).
- All at once, add the dry mix to the wet. Mix gently; there should be no lumps, but don't over mix.
- Fold in the mayonnaise.
- Let rest covered in the refrigerator for 30 minutes or up to overnight.
- Preheat oven to 400°F
- Spoon cold batter into greased muffin tins (9), a cast-iron skillet (9 or 10-inch), or a 9x13-inch pan.
- Bake 25-30 minutes (until knife inserted in center comes out clean and the top is golden brown).
- Drizzle warm cornbread with jalapeno honey glaze.
- GLAZE:.
- Heat butter in a small saucepan until melted. Stir in the peppers. Bring to a simmer. Add the homey and cayenne. Bring to a simmer and cook 5 minutes, stirring occasionally. Peppers should be soft but retain their brilliant color.
- Remove from heat and spoon over cornbread. This mixture may be stored covered in the refrigerator up to 1 week. Reheat before using.
AMANDA'S FAMOUS CORNBREAD (NOT SWEET, NO SUGAR)
I grew up in a household where putting sugar in cornbread was tantamount to blasphemy. What I have here is a slightly modified version of my grandmother's recipe. This cornbread is so good, I'm constantly asked to bring it to gatherings! Serve it with butter or by itself. It complements nearly any Southern dish!

Steps:
- Preheat oven to 375°.
- Combine all ingredients except the vegetable oil.
- Coat bottom of frying pan with vegetable oil and heat on high until right before it reaches the smoke point. You want it to sizzle when the batter is poured inches.
- Pour in the mixture and let it fry for about 30 seconds give or take depending on how hot your oil was, then put in oven.
- Bake until top is slightly golden about 25-30 minutes.
- Remove and invert onto a plate so you can show off that lovely golden crust!
- Cut into slices and enjoy! It looks extra pretty if you cut it into triangle shaped pieces like you would cut a pie. :).
- Note: It took me a bit of practice to get the oil temperature and timing right, so if yours doesn't turn out as pretty, just keep trying!
