DATE-NUT PINWHEELS
Pinwheel cookies with dates and walnuts are a family treasure. There are a few steps when prepping, so I sometimes freeze the dough and bake the cookies later. —Frieda Whiteley, Lisbon, Connecticut

- In a large bowl, cream butter and sugars until light and fluffy, 5-7 minutes. Beat in eggs. In another bowl, whisk flour and baking soda; gradually beat into creamed mixture. Divide dough into 3 portions; shape each into a disk. Cover and refrigerate 1 hour or until firm enough to roll., For filling, place dates, water and sugar in a large saucepan. Bring to a boil. Reduce heat; simmer, uncovered, until dates are tender and liquid is almost evaporated. Stir in walnuts; cool completely., Roll each dough portion between 2 sheets of waxed paper into a 12x10-in. rectangle. Refrigerate 30 minutes. Remove waxed paper. Spread a third of the filling over each rectangle. Roll up tightly jelly-roll style, starting with a long side. Wrap securely. Refrigerate until firm., Preheat oven to 350°. Unwrap and cut dough crosswise into 1/3-in. slices. Place 2 in. apart on greased baking sheets. Bake 10-12 minutes or until set. Remove from pans to wire racks to cool.

- Combine flour and baking powder; gradually add to creamed mixture.
- On a lightly floured surface, roll dough into a 14 x 10-in rectangle.
- Spread jam to within 1/2 inches of edges. Sprinkle nuts over the jam.
- Roll up jelly-roll style, starting with a side.
- Wrap in plastic wrap; refrigerate for at least 3 hours or overnight.
- Unwrap and cut into 1/4-in. slices. Place 1 inches apart on greased baking sheets.
- Bake at 375°F for 10 to 12 minutes or until lightly browned.
- Remove to wire racks to cool.

- Combine butter, sugar, egg and vanilla. Beat until light and fluffy, scraping the bowl occasionally. In another bowl, whisk together flour, baking powder and salt; add to creamed mixture, beating well. Refrigerate at least 1 hour., Combine cranberries, walnuts and orange zest; set aside. - In a large bowl, combine the first 4 dry ingedients.
- Cut in butter until mixture is crumbly.
- Dissolve yeast in water.
- Blend in egg, milk, and oil.
- Stir this into the flour mixture.
- Chill the resulting dough 1 hour.
- Knead four times.
- Roll dough to an 11"x18" rectangle.
- Combine filling ingredients and spread on the dough.
- Roll the dough up jelly roll style. You should have an 18" long cylinder of dough.
- Chill one more hour.
- Preheat oven to 350°F.
- Cut the dough into 1/2" slices.
- Roll each slice out slightly to flatten.
- Dredge each slice in sugar.
- Bake on ungreased cookie sheet for 15 minutes.
