Pinwheel cookies with dates and walnuts are a family treasure. There are a few steps when prepping, so I sometimes freeze the dough and bake the cookies later. —Frieda Whiteley, Lisbon, Connecticut

1 cup butter, softened
1 cup sugar
1 cup packed brown sugar
2 large eggs, room temperature
4 cups all-purpose flour
1/2 teaspoon baking soda
FILLING:
2 packages (8 ounces each) pitted dates
1 cup water
1/2 cup sugar
1/2 cup chopped walnuts

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy, 5-7 minutes. Beat in eggs. In another bowl, whisk flour and baking soda; gradually beat into creamed mixture. Divide dough into 3 portions; shape each into a disk. Cover and refrigerate 1 hour or until firm enough to roll., For filling, place dates, water and sugar in a large saucepan. Bring to a boil. Reduce heat; simmer, uncovered, until dates are tender and liquid is almost evaporated. Stir in walnuts; cool completely., Roll each dough portion between 2 sheets of waxed paper into a 12x10-in. rectangle. Refrigerate 30 minutes. Remove waxed paper. Spread a third of the filling over each rectangle. Roll up tightly jelly-roll style, starting with a long side. Wrap securely. Refrigerate until firm., Preheat oven to 350°. Unwrap and cut dough crosswise into 1/3-in. slices. Place 2 in. apart on greased baking sheets. Bake 10-12 minutes or until set. Remove from pans to wire racks to cool.

1/2 cup strawberry jam
1 cup chopped walnuts

Steps:

  • In a mixing bowl, cream butter and sugar. Add egg and vanilla; mix well/.
  • Combine flour and baking powder; gradually add to creamed mixture.
  • On a lightly floured surface, roll dough into a 14 x 10-in rectangle.
  • Spread jam to within 1/2 inches of edges. Sprinkle nuts over the jam.
  • Roll up jelly-roll style, starting with a side.
  • Wrap in plastic wrap; refrigerate for at least 3 hours or overnight.
  • Unwrap and cut into 1/4-in. slices. Place 1 inches apart on greased baking sheets.
  • Bake at 375°F for 10 to 12 minutes or until lightly browned.
  • Remove to wire racks to cool.

1 (14 ounce) can sweetened condensed milk
1 cup chopped walnuts
2 cups shredded coconut
1 (6 ounce) package strawberry flavored Jell-O®
1 (3 ounce) package strawberry flavored Jell-O®

Steps:

  • Mix all the ingredients except the 3 ounce box of gelatin. Cover mixture and place in the refrigerator overnight. The next day, roll mixture into strawberry shapes.
  • Place the 3 ounce box of gelatin in a plate, and roll the shaped strawberries in the gelatin until coated. Place bits of mint leaves to create the stems; secure the stems with a piece of toothpick.

1/2 cup butter, softened
3/4 cup sugar
1 large egg
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1/4 teaspoon baking powder
1/4 teaspoon salt
1/2 cup finely ground cranberries
1/2 cup finely chopped walnuts
1 tablespoon grated orange zest
3 tablespoons brown sugar
2 teaspoons milk

Steps:

  • Combine butter, sugar, egg and vanilla. Beat until light and fluffy, scraping the bowl occasionally. In another bowl, whisk together flour, baking powder and salt; add to creamed mixture, beating well. Refrigerate at least 1 hour., Combine cranberries, walnuts and orange zest; set aside. On a lightly floured surface, roll dough into a 10-in. square. Combine brown sugar and milk; brush over dough. Sprinkle with cranberry mixture to within 1/2 in. of edges. 1/2 teaspoon salt
1 teaspoon cardamom
2 tablespoons sugar
1 cup butter
1 (1/4 ounce) package dry yeast
1/4 cup warm water
1/2 cup milk
1 egg, beaten
3 tablespoons vegetable oil
1/4 cup brown sugar
2 tablespoons sugar
2 tablespoons cinnamon
sugar (for dredging)

Steps:

  • In a large bowl, combine the first 4 dry ingedients.
  • Cut in butter until mixture is crumbly.
  • Dissolve yeast in water.
  • Blend in egg, milk, and oil.
  • Stir this into the flour mixture.
  • Chill the resulting dough 1 hour.
  • Knead four times.
  • Roll dough to an 11"x18" rectangle.
  • Combine filling ingredients and spread on the dough.
  • Roll the dough up jelly roll style. You should have an 18" long cylinder of dough.
  • Chill one more hour.
  • Preheat oven to 350°F.
  • Cut the dough into 1/2" slices.
  • Roll each slice out slightly to flatten.
  • Dredge each slice in sugar.
  • Bake on ungreased cookie sheet for 15 minutes.
