TURKEY MEATLOAF
Turkey meatloaf is a favorite in our house! This healthy meatloaf recipe made with lean ground turkey is easy and delicious.

Steps:
- Preheat the oven to 350F.
- In a small bowl combine 2 tbsp of the ketchup with Worcestershire sauce.
- In a small skillet, heat olive oil and onion on low heat until translucent, 3 to 5 minutes, remove from heat.
- In a medium bowl combine the turkey, onion, breadcrumbs, egg, 1/4 cup ketchup, salt and marjoram.
- Place mixture into a loaf pan or shape into a loaf and place on a baking pan. Spoon sauce on top.
- Bake uncovered for 55-60 minutes, remove from oven and let it sit for 5 minutes before slicing.

A slightly lighter version of the all-American classic, this satisfying meatloaf uses chicken broth and soaked panko to stay moist, and a mix of fresh herbs for flavor. It's the best turkey meatloaf you'll find!

- Preheat the oven to 425 degrees F. Line a baking sheet with foil.
- Heat the olive oil in a large skillet over medium heat. Add the onions, thyme, sage, 1 teaspoon salt and 1/2 teaspoon pepper. Cook, stirring often, until the onions are softened, about 10 minutes. Add the garlic and cook 1 minute more. Add the tomato paste and cook for 1 minute, stirring to incorporate. Stir in the Worcestershire. Remove from the heat and allow to cool.
- Add the panko to a large mixing bowl and pour over the chicken broth so the breadcrumbs soak up the liquid. Add the turkey, eggs, 2 teaspoons salt, 1/2 teaspoon pepper and the cooled onion mixture and mix well with your hands until well combined. Form the mixture into a 10-by-5-inch loaf on the foil-lined baking sheet. Coat the top and sides with the ketchup.
- Put the meatloaf in the oven and reduce the oven temperature to 350 degrees F. Bake until a thermometer inserted in the center of the loaf reads 165 degrees F, 45 minutes to 1 hour. Let cool slightly before slicing and serving.

- 1. Preheat oven to 400 and line a baking pan with foil
- 2. In a medium bowl mix together the ground turkey, egg, and Worcestershire (I actually find that hands are the best mixing tool in this recipe!)
- 3. Add in seasonings and bread crumbs.
- 4. Mix until combined
- 5. Spray foil lined baking sheet with cooking spray. Place the big ball of meat in the middle and form it into a rectangle.
- 6. Spread the ketchup over the top. Note: Experiment with toppings here! I've used tomato sauce, pesto, and garlic butter before and it came out yummy each time!
- 7. Optional: place vegetables around meatloaf in pan
- 8. Place in preheated oven and cook for 20-25 minutes. Meat thermometer should read at least 160°F when inserted in the middle.
- 9. Slice and enjoy!

- Make the meat mix: Place all ingredients for the meatloaf EXCEPT for the feta cheese to a large bowl. Mix well (I likening a handheld mixer with the dough hooks attached).
- Shape the meatloaf: Preheat the oven to 350°F. Line a baking sheet. Place the meat mix on the baking sheet and shape into a loaf. Make a long well along the middle and add the cheese. Close the meatloaf over the cheese, making sure you're shaping it firmly.
- Bake: Stir all ingredients for the sauce together in a small bowl. Brush 1/3 all over the meatloaf. Bake the meatloaf for 30 minutes. Brush with another 1/3 of the sauce. Finish baking for around 20 minutes, or until the internal temperature reaches 165°F. Remove from the oven and brush with the remaining sauce.
- Serve: Let the loaf rest for 5 minutes before slicing and serving.

Steps:
- Melt butter in a skillet.
- Cook onion and garlic in melted butter for 5 minutes, stirring occasionally.
- Place mixture in a large bowl to cool for 5 minutes.
- Combine turkey, bread crumbs, egg, 1/4 cup of the katchup, Worcestershire sauce, salt, and pepper with onion mixture.
- Press meatloaf into an 8x4-inch loaf pan.
- Spread remaining catsup on top.
- Bake in a 350 degree oven for 50-55 minutes.

MOM'S BEST EVER TURKEY MEATLOAF
This recipe was modified from one I found in a cookbook published by "The Turkey Store". My family, and everyone I have ever served it too love it and can't believe that it is low fat, low cholesterol. And recently I started substituting oatmeal for bread crumbs since my husband's doctor put him on an even stricter diet than before. It is easy, there is no need to sauté the onions, bell pepper and garlic before mixing with the rest of the ingredients. It is also moist and very tasty. I usually serve with baked sweet potatoes and fresh green beans. It makes GREAT sandwiches the next day.

- Spray 9 x 5 loaf pan with cooking spray.
- Combine all ingredients except tomato sauce and 1 tbsp Worcestershire in large bowl and mix well.
- Add more egg if too dry, or add more oatmeal crumbs if too wet.
- Press turkey mixture into pan.
- Bake at 375°F for 45 minutes.
- Mix tomato sauce and remaining 1 tablespoon Worcestershire together in small bowl.
- Remove meatloaf from oven and pour tomato sauce mixture over meatloaf.
- Return to oven for an additional 15- 20 minutes.
- If using 99% Fat Free ground turkey breast meat, there is no need to drain fat before pouring tomato sauce on and returning to oven.
- If you use the regular ground turkey, which is about 7% fat you might want to drain the fat off before pouring the tomato sauce on the loaf.

- Heat oven to 350 degrees.
- Combine in a large mixing bowl the turkey or beef, the spinach, which has been squeezed to drain, the oats, onion, carrots, egg, milk, herbs (mixture of oregano, basil and thyme), salt and pepper.
- Use a three-tined kitchen granny fork or wooden mixing fork to blend the meat ingredients.

- Let loaf stand out of the oven for 5 minutes before slicing.
