3/4 cup mayonnaise
2 tablespoons anchovy paste
2 tablespoons minced garlic
2 tablespoon freshly squeezed lemon juice
Freshly ground black pepper

Steps:

  • Whisk the mayonnaise, anchovy paste and garlic together in a small bowl. Whisk in the lemon juice, 2 teaspoons water and a few grinds of pepper until blended.

3 to 5 anchovies packed in oil, drained
3 tablespoons unsalted butter
2 cloves garlic, grated
1/3 baguette, cut into 3/4-inch cubes
2 tablespoons chopped fresh parsley
Kosher salt and freshly ground pepper
1 large egg, at room temperature
2 tablespoons red wine vinegar
1 1/2 teaspoons Worcestershire sauce
1 teaspoon fresh lemon juice
1 teaspoon mustard powder
1/2 cup extra-virgin olive oil
2 heads romaine lettuce, chopped
1/2 cup shredded Parmesan cheese (about 2 ounces)

Steps:

  • Preheat the oven to 400 degrees F. Soak the anchovies in a bowl of water, 5 minutes. Drain and pat dry, then finely chop and mash to form a paste; set aside.
  • Make the croutons: Combine the butter with the garlic in a small saucepan over medium-low heat; cook, swirling the pan occasionally, 5 minutes. Remove from the heat and pour into a medium bowl. Add the bread cubes and parsley and toss; season with salt and pepper. Arrange the bread on a baking sheet in a single layer and bake until golden brown and crisp, about 10 minutes; let cool.
  • Meanwhile, make the dressing: Bring a small saucepan of water to a boil. Gently lower the egg into the water, then immediately remove the pan from the heat and let stand 5 minutes. Drain and rinse the egg under cold water; crack into a large bowl. Whisk in the anchovy paste, the vinegar, Worcestershire sauce, lemon juice and mustard powder until smooth. Whisk in the olive oil in a slow, steady stream until emulsified; season with salt and pepper.
  • Add the lettuce, croutons and about one-third of the Parmesan to the bowl with the dressing and gently toss. Divide among plates and top with the remaining Parmesan.

3 pasteurized large egg yolks
2 garlic cloves
2 tablespoons anchovy paste
2 tablespoons lemon juice
2 tablespoons red wine vinegar

1 teaspoon Worcestershire sauce
1/4 teaspoon salt
1/4 teaspoon pepper
dash hot pepper sauce
1/2 cup olive oil
1/4 cup grated Parmesan cheese

Steps:

  • In a blender, combine the first 10 ingredients; cover and process until blended. While processing, gradually add oil in a steady stream. Stir in Parmesan cheese. Chill until serving.

1 cup homemade or store-bought mayonnaise
2 teaspoons anchovy paste
2 teaspoons chopped capers
2 teaspoons chopped fresh parsley
1 teaspoon lemon zest
1/4 teaspoon finely minced garlic
1/4 cup red wine vinegar, plus more if needed
1 lemon, juiced, plus more if needed
Salt and freshly ground black pepper

Steps:

  • Combine the mayonnaise, anchovy paste, capers, parsley, lemon zest and garlic. Whisk in the red wine vinegar, lemon juice and season with salt and pepper. Add more or less red wine vinegar and lemon juice depending on your preference of acidity and consistency of the dressing. If you prefer the dressing to be looser but less acidic, use water instead of vinegar.

This is my favorite Caesar salad dressing. It comes together in minutes with a stick blender. I got the original recipe from a Fine Cooking magazine and in the past year I've made some adjustments until it suits me perfectly. I'm posting it mainly because I always panic if I can't find the paper I wrote it on. :) Note: this recipe uses raw egg. If that is of concern to you, use a pasturized egg. I don't usually care for anchovies but don't leave them out! It makes such a huge difference in the flavour. Use half as much if you are worried. NOTE: I had my first 'fail' with this last week. Please use a room temperature egg yolk and also make sure that the immersion blender is submerged right to the bottom before you turn it on. It doesn't like cold eggs. The taste will be there but it will be much thinner

1/4 cup canola oil (or other bland oil)
1/4 cup extra virgin olive oil
4 anchovies packed in oil, the original called for 6 so add more if you like them
4 large garlic cloves, peeled and smashed
1 large egg yolk
1 tablespoon fresh lemon juice
1 tablespoon red wine vinegar
2 teaspoons Dijon mustard
1 teaspoon grated lemon zest
1/2 teaspoon Worcestershire sauce
1/4 teaspoon kosher salt
1/4 teaspoon fresh ground pepper
1 -2 tablespoon grated parmigiano-reggiano cheese

Steps:

  • In a liquid measuring cup, combine both types of oil.
  • Add all of the other ingredients EXCEPT the parmesan.
  • Submerse a stick blender in to the mixture and turn it on moving it slowly up and down a few times. It will thicken beautifully. Stop the blender and add in the grated Parm and blend briefly.
  • If you don't have a stick (immersion) blender you can use a regular blender but then have the oils separate in a measuring cup. Start the blender and once the other ingredients are whirling away on high add the oils in a steady stream until thickened. Stop the machine to add the parm and then blend quickly just to combine. Can be covered and refrigerated for up to 3 days.

1/4 cup parmesan cheese (grated)
4 anchovy fillets
2 egg yolks
1/4 teaspoon salt (to taste)
1/4 teaspoon pepper (to taste)
1 lemon, juice and zest of
1/2 cup extra virgin olive oil (good quality)
2 garlic cloves

Steps:

  • In blender, mix egg yolks, garlic and anchovies into a paste.
  • Add remaining ingredients EXCEPT olive oil. Mix a few seconds.
  • Slowly add olive oil until dressing is thick and creamy. Add more or less olive oil depending on desired consistency.
  • Serve mixed in chopped romaine lettuce.

It is very important that you use fresh ingredients that have not been pre-processed (ie. lemon not bottle of lemon juice, block of parmesan cheese not parmesan cheese already grated in a container, etc.).

1 ounce anchovy (approximately 2)
1 tablespoon fresh garlic (approximately 4 cloves)
1 tablespoon Dijon mustard
1/2 tablespoon Worcestershire sauce
1 egg yolk, coddled
1/2 cup extra virgin olive oil
1 teaspoon lemon juice, freshly squeezed
2 tablespoons red wine vinegar
1/4 cup parmesan cheese, freshly grated
10 ounces romaine lettuce
1 cup seasoned croutons

Steps:

  • Place anchovies and fresh garlic in a wooden salad bowl. Crush into a fine paste with 2 dinner forks.
  • Add Dijon mustard and Worcestershire sauce to paste and stir.
  • Add egg yolk and continue to stir.
  • SLOWLY add olive oil while continuously stirring.
  • Add lemon juice, red wine vinegar and half of the parmesan cheese then stir.
  • Place the Romaine lettuce on the dressing mixture and toss, making sure to wet all sides of the lettuce leaves.
  • Add croutons and the remaining parmesan cheese then toss lightly.
  • Serve on cold plates with chilled forks.
  • Sprinkle with ground pepper to taste (Optional).
