MARY BERRY'S BAKEWELL TART

Mary Berry's Bakewell Tart image

A classic British tart which has a jam base, cake like frangipane filling and almonds and icing on top. Delicious!

Provided by Mary Berry (adapted by Christina Conte)

Time 55m

Number Of Ingredients 14

3 to 4 tbsp raspberry jam, or any other flavor (you can also use mincemeat for a delicious twist)
1 1/2 stick (6 oz) butter
3/4 cup (6 oz) sugar
3/4 cup (6 oz) ground almonds
2 eggs (preferably organic), beaten
1/2 tsp. almond extract (I omitted this as it's not my favorite flavor)
1/2 cup (3 oz) flaked almonds
2 cups (9 oz) all purpose flour
(pinch of salt -my addition)
one stick (4 oz) good quality butter (I use Kerrygold)
(1 1/2 tsp sugar -my addition)
4 to 5 tbsp ice-cold water
2/3 cup (3 oz) confectioner's sugar
2 to 3 tablespoons water or milk

Steps:

  • Place the flour and salt into a bowl and rub in the butter with your fingers until the mixture looks like fine breadcrumbs. Add the sugar, then the water and mix gently to make a soft dough. (Or you can make it in a food processor, like this.)
  • Roll out the dough on a lightly floured surface, then line a 9"in tart tin. Refrigerate for 30 minutes.
  • Using a fork, press the tines into the bottom and sides of the pastry in the tin, then bake for about 15 to 20 minutes, until cooked, but not completely (it's going back in the oven.) Remove and set aside.
  • Spread the jam or mincemeat on the bottom of the crust then make the frangipane filling.
  • Melt the butter in a pot, remove from heat and stir in the sugar, ground almonds, egg and almond extract (if using.) Pour the mixture over the jam or mincemeat and sprinkle the flaked almonds on top.
  • Bake for about 35 minutes. If the almonds begin to brown too quickly, cover the tart loosely with aluminum foil.
  • Place the confectioner's sugar into a bowl. Stir in cold water or milk. Using a knife or spoon (any kitchen cutlery would probably work), drizzle the icing all over the cooled tart (make sure it isn't warm or the icing will not look as pretty as it should.) Allow the icing to set before serving.
  • Cut into slices and enjoy!

RASPBERRY & ALMOND TRAYBAKE

Raspberry & almond traybake image

One mixture all whizzed in the food processor makes the base and topping for this bake

Provided by Good Food team

Categories     Afternoon tea, Snack, Treat

Time 1h30m

Yield Cuts into 16-24 slices

Number Of Ingredients 7

250g self-raising flour
50g ground almonds
200g butter , diced
280g golden granulated sugar
50g desiccated coconut
2 medium eggs
350-450g/12oz-1lb fresh or frozen raspberries

Steps:

  • Heat the oven to 180C/fan160C/gas 4. Butter an oblong cake tin (about 31 x 17 x 3cm). Tip the flour, ground almonds, butter and sugar into a food processor and whizz just until the butter is evenly distributed - or rub together by hand. Remove 85g/3oz of the mix, stir in the coconut and put to one side. Add the eggs to the remaining mixture in the food processor and whizz quickly - or mix with a wooden spoon. It doesn't need to be very smooth.
  • Spread this mixture over the base of the tin, then scatter half the raspberries over the top. Sprinkle with the coconut mixture and bake for 45 mins. Dot the remaining fruit over the surface and cook for a further 15 mins, until firm to the touch. Cool in the tin and cut into slices, squares, whichever shape you want. They will keep for up to 2 days in the fridge.

RASPBERRY BAKEWELL SLICE

Raspberry bakewell slice image

Get ahead this weekend and make this indulgent, freezable treat, perfect for pud or with a cup of tea

Provided by Good Food team

Categories     Afternoon tea, Dessert, Treat

Time 1h20m

Number Of Ingredients 12

375g pack sweet shortcrust pastry
5 tbsp thick seedless raspberry jam
100g frozen raspberries, just thawed
25g flaked almonds
4 tbsp apricot jam
200g butter, very soft, plus a little extra for the tin
200g golden caster sugar
100g ground almonds
100g self-raising flour
1 tsp baking powder
½ tsp almond extract
4 eggs, beaten

Steps:

  • Heat oven to 200C/180C fan/gas 6. Line the base and sides of a buttered traybake tin, about 18-20cm x 30cm, with baking parchment. Roll out the pastry to line. Lift into the tin and evenly press right into the corners. Prick with a fork and chill for 20 mins.
  • Bake the pastry for 8-10 mins until it's cooked but not too coloured. Cool for a few mins and turn down the oven to 180C/160C fan/gas 4. Dot the raspberry jam over the pastry (there's no need to spread) and scatter over the raspberries.
  • For the sponge, put all the ingredients into a large bowl and beat with an electric whisk until soft and very well mixed. Spoon this over the raspberry layer, then smooth evenly. Scatter over the flaked almonds and bake for 35-40 mins until golden and firm. Cool completely in the tin. Will freeze for up to 3 months - overwrap the tin with baking parchment and foil beforehand.
  • To serve, thaw for 4 hrs at room temperature, then reheat in a low oven. Melt the apricot jam with 1 tbsp water and brush over the top of the sponge just before serving.
