Steps:
- 1. Prepare and cool the brownies. Do not remove them from the pan.
- 2. In the bowl of a stand mixer combine the condensed milk and coconut. Slowly add the powdered sugar and mix on low speed. Spread the coconut mixture over the brownies. Wet fingers work best to do this! Top the coconut with the almonds.
- 3. In a small sauce pan, heat the cream and butter over low-medium heat. Add the chocolate chips and stir until the chocolate is fully melted. Cool slightly. Pour the chocolate over the coconut and almonds. Cover and refrigerate. Cool completely before cutting. Serve from the baking pan.

Steps:
- Preheat oven to 350. Spray 9X13X2 pan with nonstick cooking spray.
- Prepare Brownies as indicated on the box but add 1 tsp almond extract the same time you add the eggs. Cool. When the brownies are cool, poke holes all over the brownie's surface with a fork. (Keep the oven on).
- Put the condensed milk into a small medium sized saucepan and bring to a low boil over medium heat. Stir often so it doesn't turn the milk into caramel. Add the marshmallow cream and continue mixing until combined. Add the coconut and mix well. Spoon the coconut mixture over the cooled brownies and put it back in the oven for 8 minutes. Cool. (Turn off oven).
- In small bowl, melt chocolate chips in the microwave for a minute at a time and mix well. Continue until completely melted. Drizzle over bars. While the chocolate is still soft and unset, scatter almonds over the bars too. Cover lightly and store in the refrigerator until ready to serve.
- Cut brownies 3 lines lengthwise with a sharp knife, then 5 lines across. You'll have 18 beautiful almond-joy-ee brownies!
- Raves all around!

ALMOND JOY BROWNIES
This is a Pillsbury Bake-Off recipe from the 50s. The Almond Joys are melted and mixed into the recipe. I expected a more chocolately brownie when I discovered this recipe and was surprised to end up with a "blonde" coconut brownie with only a hint of chocolate taste. Very good.

Steps:
- Preheat oven to 325°, then line an 8"-x-8" baking pan with foil, leaving overhang on the sides, and spray with cooking spray.
- In a large microwave-safe bowl, combine butter, sugar, cocoa, and salt and heat on high power to melt, about 45 seconds. Stop to stir, then heat in 10-second bursts until mixture has melted and can be stirred smooth.
- Add vanilla and eggs and stir vigorously until batter is thick, shiny, and well blended. Add flour and stir until just combined, then pour batter into prepared pan and spread evenly.
- Bake until a toothpick in the center emerges slightly moist with batter, 22 to 25 minutes. (Check with a toothpick; your batch may need a few minutes longer, but do not bake longer than 30 minutes.)
- While brownies cool, prepare coconut mixture. In a bowl, stir together shredded coconut and sweetened condensed milk, then spread the mixture evenly over cooled brownies. Sprinkle almonds over coconut.
- Add melted chocolate to a Ziploc bag, then snip a small hole in the corner and drizzle over brownies.
- Let set in the refrigerator at least 30 minutes before cutting into squares. (Brownies can be stored in an airtight container in the fridge up to 4 days.)

ALMOND JOY* BROWNIE BITES
I found this recipe on one of my favorite websites, "Flour Me With Love". My friend, Lisa, and I had a "bake day" yesterday, tried these, and they were SO GOOD! The best part is...they're very easy to make! Enjoy!

Steps:
- 1. Preheat oven to 350 degrees. Line cupcake pans (regular size...not mini) with liners. Make sure to use the liners or they will stick.
- 2. Make the brownies according to directions and pour the batter only about halfway (or a little less) up the liners.
- 3. Bake in a preheated oven for 12 minutes. While the brownies are baking, mix together the coconut, sweetened condensed milk, and milk.
- 4. Remove the brownies from the oven and spoon on some of the coconut (I used a cookie scoop for that), and then return to the oven for 14-16 minutes.
- 5. Remove from oven and allow to cool COMPLETELY before removing the liners. Once they are completely cool, and the liners are removed, drizzle the melted chocolate over them and sprinkle with the nuts.

- In a heavy sauce pan (over medium on the stove) heat syrup, marshmallows, and salt until marshmallows are melted. Continue to stir over heat for an additional minute. Remove from stove and add coconut, vanilla, and chopped almonds. Stir well and dollop this coconut mix all over the top of the brownie mix, it doesn't need to be completely covering the top, just evenly distributed.
- When there is about 5 minutes left, begin melting the chocolate chips. I like to do this by putting them in a metal bowl and placing the bowl over a pot of boiling water. Stir until chocolate is melted and smooth.

- Stir together melted butter, sugar, and cocoa. Stir in eggs, vanilla extract, coffee, and salt. Carefully stir in flour. (The coffee just adds a richness to the brownies, but you can use water if you prefer.) Spread in prepared pan. The batter will be thick.
- Sprinkle chopped Almond Joys (or substitute your favorite candy bars) over the top. Bake for about 18-24 minutes, until they loose their glossy sheen and a toothpick comes out 2” from the side with only crumbs sticking to it.

- For the Brownies: In a small bowl, melt the chocolate and butter together until combined and completely melted. This can also be done in a double boiler. Set aside to cool slightly while you get together the other ingredients.
- Transfer the slightly cooled chocolate butter mixture to a larger bowl. Using a standing mixer, or electric hand-held mixer, mix the chocolate butter mixture and the sugar just until combined. Add the eggs, one at a time, mixing only until just combined. Mix in the vanilla extract. Add all of the dry ingredients into the batter and mix just until incorporated. (You do not want to over-mix.)
