GINGER SAUCE RECIPE
There are many different types of ginger sauce recipes, but we particularly like to serve it with xiaolongbao and seafood dishes.

Steps:
- Gather the ingredients.
- Combine soy sauce, rice wine vinegar, and minced ginger in a small bowl. Set aside.
- Melt brown sugar over high heat in a small heavy saucepan until just melted but not burnt.
- Add soy sauce and rice wine vinegar mixture.
- Bring to a boil until brown sugar has melted again (it will harden temporarily after the soy sauce mixture is added).
- Remove from heat, pour into a serving dish, and garnish with chopped spring onions.
- Serve with pot stickers, gyoza, or other Chinese dumplings.

GINGER ALMONDS

Steps:
- Heat the oven to 250 degrees F.
- Combine the ginger and salt in a large mixing bowl and set aside.
- Heat the olive oil and sesame oil in a 12-inch saute pan over medium-low heat. Add the arbol chile and cook, stirring frequently, until the chile begins to give off an aroma, 30 to 45 seconds. Add the almonds and cook, stirring frequently until lightly toasted, approximately 5 minutes. Add the soy sauce and Worcestershire sauce and cook until reduced slightly and the pan looks dry, approximately 1 minute. Immediately remove the nuts to the large bowl and toss with the ginger mixture.
- Spread the coated nuts into a single layer on a half sheet pan lined with parchment paper and bake in the oven for 20 minutes. Remove the pan to a cooling rack for at least 30 minutes or until completely cool. Store in an airtight container for up to 1 week.

Steps:
- Combine all ingredients except water into a bowl and stir; you may use a food processor or blender if you prefer.
- Add the water while stirring until you reach the consistency you like (add more if you like a thinner consistency, less for a thicker sauce).
- If you make the sauce ahead of time, add a little more water to account for evaporation. The sauce can be made up to one day in advance and kept refrigerated in a sealed container.

MEXICAN RED ALMOND DIPPING SAUCE (VEGAN)
From a Mexican cookbook. A nice sweet and spicy dipping sauce, an interesting alternative to salsa and tomatillo sauce. Perfect for nacho chips and fritters! I liked this sauce with cheese arepas.

Steps:
- Put the almonds in a food processor and pulverize until finely ground.
- Cook onion and garlic in oil over medium heat, stirring frequently, until onion is tender (about 10-15 minutes).
- Stir in all the other ingredients except the ground almonds. (I found it easier to turn the heat off first, then add the tomato sauce followed by everything else, then put the heat back on.).
- Heat to boiling; reduce heat. Simmer 1 minute stirring constantly;.
- stir in almonds.
- Serve hot with some corn chips and/or arepas, and enjoy!. Makes about 1 3/4 cups of sauce.

- Pulse ginger in a food processor until finely chopped. Add almond butter, lemon juice, honey, paprika, cayenne, and ⅓ cup ice-cold water and pulse, adding more water by the tablespoonful to thin if needed, until smooth. Season with salt and pepper.
- Do Ahead: Almond sauce can be made 3 days ahead; cover and chill. Bring to room temperature before using.
