EASY CRESCENT DANISH ROLLS

Steps:
- Heat oven to 350 degrees F. In a small bowl, combine cream cheese, sugar and lemon juice; beat until smooth.
- Crescent Rolls: Unroll dough; separate dough into 8 rectangles; firmly press perforations to seal. Recipe Creations: Unroll dough; cut into 8 rectangles.
- Spread each rectangle with about 2 tablespoons cream cheese mixture. Roll up each, starting at longest side; firmly pinch edges and ends to seal. Gently stretch each roll to about 10 inches.
- On ungreased large cookie sheet, coil each roll into a spiral with seam on the inside, tucking end under. Make deep indentation in center of each roll; fill with 1/2 teaspoon preserves.
- Bake at 350 degrees F for 20 to 25 minutes or until deep golden brown. In small bowl, blend all glaze ingredients, adding enough milk for desired drizzling consistency. Drizzle over warm rolls.

CINNAMON MARSHMALLOW PUFFS
I'm posting this recipe for my Mother. She has been making these for over 30 yrs. She thinks it was one of the original Betty Crocker winners but isn't sure. They are quick, easy, gooey and oh so yummy. She hasn't had the recipe from Betty Crocker so we put together the ingredients and instructions today.

- 1. Preheat oven 375. Grease or spray 8 cup muffin tin Melt butter and put in a small bowl Mix Cinnamon and sugar in a small bowl (save 1 - 2 tbsp to sprinkle on )puffs after the glazing has been drizzled on the puffs).
- 2. Open Crescent rolls, separate into 8 pieces. Dip a marshmallow in melted butter.
- 3. Then roll the marshmallow in cinnamon sugar. Be sure to get well coated with cinnamon sugar.
- 4. Place marshmallow on one crescent triangle and cover the marshmallow with the crescent dough. Be sure to pinch and seal so there are no holes or gaps. Place the marshmallow puff in the muffin tin. Repeat this step for the remaining marshmallows.
- 5. Bake the marshmallow puffs for 15 to 20 minutes until dough is golden brown. Depending on your oven, 15 to 20 minutes.
- 6. GLAZE/ICING: Mix 1 Tbsp melted butter, milk, vanilla or almond extract, powdered sugar. This should be a glazing consistency. If it's too thick to drizzle then just add a bit more milk or if it's too runny add a bit more powdered sugar.
- 7. When marshmallow puffs are golden brown remove from the oven. While still hot carefully remove from the muffin tin onto a rack (you might want to have some wax paper under the rack since there will be some sticky melted marshmallow that will drip onto the counter). While the puffs are still hot and on the rack, drizzle the glaze on the puffs. Immediately sprinkle the remaining cinnamon sugar on the glaze. Let cool for at least 5 minutes before serving. You can easily make ahead of time. Reheat at a low heat (maybe 200 to 250 for a few minutes before serving). We have even frozen and thawed and reheated. This recipe can be easily be double or tripled.

This is a recipe I make almost every Christmas. I got it from a coworker about 20 years ago. It's a big hit with those who like almonds.

- Preheat oven to 325 degrees F (165 degrees C).
- Beat butter and confectioners' sugar in a bowl using an electric mixer until smooth and creamy. Add vanilla extract, almond extract, and salt; mix briefly to incorporate. Gradually stir 3/4 cup plus 2 tablespoons flour into the creamed butter, add almonds, and mix until dough is just combined.
- Shape dough into tiny crescents; place on an ungreased baking sheet about 2 inches apart.
- Bake cookies in preheated oven until edges are golden, about 15 minutes. Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
- Roll cookies in sifted confectioners' sugar when cooled.

- Preheat oven to 350.
- Unroll 1 package of crescent rolls across the bottom of a 9x13 pan.
- (4 rectangles fit across the short way.) Press or stretch lightly to fit, and pinch perforations together to seal.
- Mix cream cheese, egg yolk, almond extract and sugar.
- Spread over 1st layer.

- In a bowl, dissolve yeast in warm water. In a large bowl, combine the flour, sugar and salt. Cut in butter until crumbly. Add milk and egg yolks to yeast mixture; mix well. Stir into crumb mixture; mix well. Do not knead. Cover and refrigerate overnight. , Punch dough down. Turn dough onto a lightly floured surface; divide in half. - Dissolve yeast in warm water. Add milk, egg, sugar, shortening and salt; mix well. Add flour; mix until smooth. Place in a greased bowl, turning once to grease top. MAKE AHEAD ALMOND PINWHEELS
The perfect make ahead Christmas breakfast idea, using pre-made frozen puff pastry dough and a homemade almond filling. These Almond Pinwheels are heavenly!

- In the bowl of an electric mixer, combine butter, almond paste, powdered sugar, and flour. Mix on medium speed with a paddle attachment until combined. Add egg white and almonds, and mix again until everything is incorporated. Cover and refrigerate until ready to use.
- Thaw the puff pastry according to directions. I just leave mine out on the counter for 20-30 minutes. Unroll the puff pastry on a baking sheet. I did not line mine, and had very little sticking, but depending on your baking sheet you may want to use parchment paper or Silpat.
- Cut the puff pastry into 12 equal squares. Spread the squares out onto the baking sheet so that they are about an inch apart.
- Using kitchen shears or a paring knife, make a one inch cut from the corner of each square diagonally toward the center.
- Place a tablespoon size scoop of the filling into the center of each square, and then fold every other corner to the center, pressing firmly to seal. Repeat with the second roll of puff pastry.
- At this point you can cover the pinwheels with plastic wrap or foil, and refrigerate overnight until you are ready to bake them.
- When ready to bake, preheat the oven to 400 degrees. Use your reserved yolk to make an egg wash, beating 1-2 tablespoons of milk with the yolk. Brush the top of each pinwheel with the egg yolk, and then sprinkle with chopped almonds.
- Bake for 9-11 minutes, or until the center has puffed up and the top is golden. Remove from the oven, and transfer the pinwheels to a cooling rack. Dust with powdered sugar.
