1 - 1 1/2 pounds fresh green beans (trimmed and halved if desired)
1 tablespoon extra virgin olive oil
1/4 cup slivered or sliced almonds
1 tablespoon butter
Squeeze fresh lemon juice
Salt and freshly ground pepper (to taste)

Steps:

  • Steam the green beans until tender, about 7 - 10 minutes. Heat the oil in a saute pan and add the almonds. Saute over medium heat until lightly browned. about 2 minutes. Add the green beans and butter. Turn off the heat and give it a squeeze of lemon juice. Toss together and season to taste with salt and pepper.

These sauteed green beans are the best way to cook green beans. It is a quick and easy method that makes perfectly tender and delicious garlic green beans. These make the perfect side dish for dinner and can be saved an reheated for another meal.

1 tbsp olive oil
12 oz green beans
2 cloves garlic (fresh )
1/8 tsp salt (- or to taste)
1/8 tsp pepper (- or to taste)
parmesan cheese
toasted pine nuts
crushed red pepper flakes
fresh chopped parsley

Steps:

  • Rinse and dry the green beans completely. Break or cut off the ends of each bean.
  • Heat 1 tbsp of olive oil in a large skillet over medium high heat. Once heated add the green beans and cook for 6-7 minutes for thin green beans, or 8-9 minutes for thick green beans, stirring regularly until they begin to soften and brown slightly on the outside.
  • Use a garlic press to press in the garlic. Then stir in the salt and pepper to taste and cook and additional 2 minutes. Remove from the heat.
  • Garnish as desired and serve.

1 pinch white sugar
1 pound fresh green beans, trimmed
2 tablespoons butter
2 teaspoons olive oil
3 cloves garlic, minced
1 tablespoon lemon zest
¼ cup chopped fresh parsley
salt and pepper to taste
1 lemon, cut into wedges

Steps:

  • Bring a large pot of salted water to a boil over high heat: add sugar, and beans. Cook until beans are bright green and tender, 3 to 5 minutes. Drain, and place in a large bowl of ice water to stop cooking.
  • Combine the butter and olive oil in a large skillet over medium-high heat; cook until butter melts. Stir in the garlic; cook until pale beige and fragrant. Stir in the beans; cook until wilted, and garlic is dark brown, about 4 minutes. Toss beans with parsley and lemon zest, and cook 1 to 2 minutes more. Season to taste with salt and pepper. Transfer beans to a serving dish, and garnish with lemon wedges.

2 lbs fresh green beans, trimmed
7 tablespoons butter (can use a bit less)
1 cup almonds, coarsley chopped (or sliced)
1 tablespoon minced lemon peel (use the yellow part only, can use a bit more lemon peel)
1/3 cup finely chopped parsley
salt and pepper

Steps:

  • Cook the green beans in a pot with salted water until JUST tender (about 5 minutes, you can steam the also) drain and transfer to a large bowl of ice water to cool; drain and pat dry with a paper towel (this can be done a day ahead).
  • Melt butter in a skillet over medium heat.
  • Add in chopped almonds, and toss with butter; saute the nuts until they are lightly browned and crisp (about 2-3 minutes).
  • Add in beans, and toss to combine with the nuts until heated through (about 3-4 minutes).
  • Mix in the lemon peel; cook 1 minute.
  • Mix in the chopped parsley.
  • Season with salt and pepper, and transfer to a bowl.
  • Delicious!

  • 1. Steam the green beans until tender, about 10 to 15 minutes.

  • Heat an 8 to 9-inch pot over medium-low heat. When it is hot, add almonds and toast, stirring frequently, until they are golden brown and fragrant, 2 to 3 minutes. Remove almonds from skillet and set aside. In the same pot add green beans, 1/3 cup water, 2 teaspoons butter, and salt, and cover. Increase heat to medium-high, cover and cook until steam escapes around lid. Set timer for 5 minutes and continue to steam until beans are brightly colored and just tender.
