1 lb new potato
2 tablespoons olive oil
2 teaspoons salt
2 tablespoons grated parmesan cheese

Steps:

  • Bring potatoes to boil in a pot of cold water.
  • Simmer until fork tender.
  • Remove potatoes, cool slightly, remove skin, toss in other ingredients.
  • Wrap in aluminum foil.
