- Simmer sun-dried tomatoes in stock to reconstitute
- Purée in a food processor
- Heat a saucepot or Dutch oven over medium heat with EVOO, 4 turns of the pan
- Melt butter into oil, add onions, garlic, bay and salt, and cook to very soft and translucent-do not brown
- Add sugar or honey, chili flakes, tomatoes and basil, and simmer 20-30 minutes to break down tomatoes
- Serve with Polenta Arancini and Meatballs with Mint and Garlic

- Place all the ingredients into your blender and blitz until smooth
- To serve as a pasta sauce, cook and drain your pasta as per packet instructions - but when you drain the water away save a little bit in the pan (about 1 tbsp worth). Stir through the blended sundried tomato sauce and serve!

- Add the olive oil and garlic to a skillet and cook the garlic over medium heat for 2 minutes.
- Add the remaining ingredients (except the fresh chopped parsley) and stir into the garlic and oil mixture. Stir continuously for 3 minutes so that the herbs do not burn.
- Remove from heat. Continue to stir for 1 more minute.
- Serve immediately or allow to cool and store in a clean mason jar in the refrigerator for up to 2 weeks.

- Melt butter over medium heat in a saucepan.
- Add flour and cook until foamy, about 2 minutes.
- Add the warm milk, I usually warm it in the microwave oven, and whisk constantly.

- Add parmesan cheese and tomato pesto. Stir until cheese has melted.

SUN-DRIED TOMATO, GUANCIALE AND ROBIOLA ARANCINI
Everyone loves arancini. There's something about arancini that just exudes an excitement for anyone who sees it on the menu. They're easy to pop in your mouth, a lot of fun and, of course, delicious. In this version, I amp up the flavor with sun-dried tomatoes, guanciale and cheese, then top it all off with an herby gremolata.

- For the arancini: Line a sheet pan with parchment. Heat the olive oil in a large saucepan over medium-high heat. Add the guanciale and cook, stirring occasionally, until the fat renders out, about 5 minutes. Add the shallots and garlic with a pinch of salt and the red pepper flakes if using and sweat slowly until tender, 8 to 10 minutes.
- Add the rice and 1/2 tablespoon of the butter, stir to coat and cook until the rice begins to toast, 2 to 3 minutes.
- Stir in the wine and cook until it is absorbed. Add the heated chicken stock 1/2 cup at a time and cook, stirring constantly, until the liquid is absorbed, 3 to 4 minutes. When the rice is about 75-percent cooked and al dente (you may not use all the stock), stir in the tomato paste, sun-dried tomatoes and vinegar. Remove it from the heat and add the remaining 3 tablespoons butter and the Parmesan. Season to taste with salt. The rice should be strongly seasoned and creamy with a touch of texture but not crunchy or watery. Spread the risotto on the prepared sheet pan and allow to cool; cover and refrigerate until needed.
- Heat the neutral oil in a large heavy-bottomed pot to 350 degrees F. To make the arancini, use your hands to roll the cooled risotto into packed balls about the size of a golf ball, around the robiola. Refrigerate for 20 minutes or freeze for 10 minutes.
- Put the flour, eggs and breadcrumbs in separate shallow bowls. Dip the balls first into the flour, then the eggs and the breadcrumbs.
- Fry the arancini in about 3 batches, turning occasionally, until golden brown on all sides, 3 to 4 minutes. Drain on paper towels and season lightly with salt. Be sure to let the oil return to temperature between batches.
- For the yogurt: Mix the yogurt with the Aleppo pepper and 1/4 teaspoon salt and reserve.
- For the gremolata: Combine the parsley, Parmesan and lemon zest in a medium bowl. Stir in the olive oil and season with salt.
- Spoon some yogurt onto a plate. Arrange the arancini on top of the yogurt and top with the gremolata.
ALL PURPOSE SUN-DRIED TOMATO SAUCE
This is an adopted recipe. I am always on the lookout for freezer recipes so that's why I chose to add this one to my collection. Orignal introduction; "I discovered this recipe in a German home and living magazine as a pizza sauce. But I did have some leftover and soon discovered that you can easily use it as a basic pasta sauce or even as tomato soup adding a bit of cream. It freezes well, so feel free to multiply the ingredients. I usually pack a couple of jars when we go on vacation, so I don't have to fuss too much about dinner. These are the original ingredients, but I usually add more garlic and sun-dried tomatoes if they are easily available. In summer I add fresh basil."

- Bring a large pot of salted water to a boil and cook the pasta according to package instructions. Drain the pasta and set is aside, keeping warm.
- Meanwhile, prepare the creamy chicken sauce. Heat a large, deep saute pan over medium-high heat and add a drizzle of cooking oil (I use avocado oil). Once the pan is hot, add in the chicken breast or chicken thigh and season the chicken generously with salt and pepper. Brown the chicken all over, cooking for 8 to 10 minutes, until the chicken is cooked through. Using a large spatula, remove the chicken from the pan and keep warm on the side.

Begin adding the milk - add 1 cup at a time and whisk well after each addition. For a richer sauce, try adding 1 cup heavy cream in place of 1 cup milk. Add in the chicken broth next and return the browned chicken into the pan. Bring the sauce up to a simmer over medium heat and let it cook for 3 to 5 minutes, until thickened.
