- Cut the bacon into pieces and freeze the pieces for 20 minutes to make it easier to process.
- Process the bacon in a mini food processor on the "chop" setting until finely ground. Mix it into the beef with the remaining ingredients.
- Form the mixture into four 3/4-inch-thick patties. Use your thumb to make a shallow dimple in the middle of each burger. This helps them retain their shape.
- Heat a well-seasoned cast-iron skillet over medium heat, about 3 minutes. Add the burgers. If the skillet is well-seasoned, there's no need to add oil. Otherwise, add a tablespoon of oil to the pan before adding the burgers.

- Preheat a grill for high heat.
- Place bacon in a large skillet over medium heat. Fry, stirring occasionally. When the bacon is almost done, add the onion. Cook until the bacon is crisp, and the onion is tender. Remove onion and bacon from the pan with a slotted spoon, and transfer to a food processor. Pulse a couple of times to chop finely. Do not puree. - Fry bacon until crisp; crumble.
- Combine beef, salt, pepper, garlic powder and onion and shape into 12 large, thin patties.
- Top six patties with 1 tablespoon bacon and 1 tablespoon cheese (this is approximate-use what looks right).
- Place remaining 6 patties on top of cheese/bacon topped patties and press edges to seal.
- Grill or broil for 3-4 minutes per side until done. We like ours well done.

BACON, ONION AND CHEESE STUFFED BURGER

- Preheat grill to medium.
- In a bowl combine beef, garlic, hot sauce, salt and pepper, to taste, being careful not to over mix. Warm a skillet over medium heat and fry bacon until crispy. Remove to a paper towel-lined plate to drain. Keep heat on skillet and fry a pinch of the beef in the bacon fat to test seasoning. Adjust seasoning, if needed, then form 8 even thin patties, about 1/2-inch thick and set aside. Saute onions in bacon fat in skillet until tender, 5 minutes. Place onions and bacon in a bowl with cheese. Form a spoonful of bacon-cheese mixture into a ball, then place in the center of 4 patties. Top each with another patty and seal the edges. Grill burgers over medium-high heat, flipping once until desired doneness is reached, approximately 4 minutes each side for medium. Serve in buns with garnishes. Alternative: In a medium skillet over medium-high heat, sear the burgers 4 minutes on each side.
ALL MIXED UP BACON CHEESE BURGERS
This is a great change to the average bacon cheese burger. The kids love them because the bacon doesn't fall out when they're eating the burger. I usually double the recipe and mix 1 lb lean ground beef and 1 lb lean ground turkey. You can also substitute the worcestershire sauce for BBQ sauce. - Cook the bacon until it is cooked, but not yet crispy. It will finish cooking in the burger patties. Let it cool slightly and then chop it into small pieces.
- Add all ingredients to a large bowl and use your hands to combine the mixture until the bacon and cheese is evenly dispersed. Do not overmix, though.
- Evenly divide the ground beef into 4 equal servings and form into patties. Make the patties more thin than thick because they will shrink up some while cooking.
- I like to cover and refrigerate the patties for about 1 hour, if I have time. (This will help the burgers keep their shape on the grill.)
- While burgers are in the fridge, you can make the burger sauce: stir mayonnaise together with ketchup, pickle juice, garlic powder, smoked paprika, cayenne (if using) and salt and pepper to taste. Place in refrigerator until you're ready to use.
- Prep your burger toppings: slice tomatoes, tear lettuce, slice the onion, etc.
- To grill, place each burger onto preheated grill or grill pan. Cook 3 minutes on one side and then flip and cook for another 3 minutes or until burgers register 160 degrees F. If adding cheese slices, do this after the burger has been flipped to the second side and after about 2 minutes. Top each patty with a slice, cover and cook 1 minute.
- Serve as desired, on toasted buns with lettuce, tomatoes, onions, and burger sauce or other condiments. Enjoy!
