1 tablespoon butter (cut into small pieces)
For the Topping :
1/2 cup all-purpose flour
1/2 cup granulated sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
2 tablespoons butter (softened)
1 egg (beaten)
Optional: cinnamon sugar (for topping)
Optional: vanilla ice cream or whipped cream (for serving)

6 large Granny Smith apples - peeled, cored and sliced
3 tablespoons white sugar
1 teaspoon ground cinnamon
1 cup all-purpose flour
1 cup white sugar
1 large egg
1 teaspoon baking powder
¼ cup water

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Combine 3 tablespoons sugar and cinnamon in a bowl.
  • Layer apples in an ungreased 9x13-inch baking pan, sprinkling each layer with cinnamon-sugar.
  • Combine flour, 1 cup sugar, egg, and baking powder with a fork. Sprinkle over apples. Lightly sprinkle water over top.
  • Bake in the preheated oven until topping is golden brown, about 30 minutes.

6 cups Granny Smith apples, peeled, cored and diced
1/2 cup granulated sugar
1/4 cup dark brown sugar
2 tablespoons all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
Pinch salt
Pinch ground nutmeg
1/2 lemon, juiced
Ginger Whipped Cream, recipe follows
2 tablespoons butter, softened
1/2 cup self-rising flour
1/2 cup sugar
Pinch salt
Pinch ground ginger
1 egg, beaten
1 cup whipping cream, chilled
1/4 cup confectioners' sugar
1/4 cup candy ginger, minced

Steps:

  • Preheat oven to 375 degrees F.
  • Lightly butter a 9 by 9-inch baking dish.
  • In a large bowl, mix together the apples, sugars, flour, cinnamon, vanilla, salt, nutmeg and lemon. Add the mixture to the prepared baking dish.
  • Add all the topping ingredients to a medium bowl and combine well with a wooden spoon, to form a batter. Dollop the batter in various spots on top of the apple mixture. The batter will spread as it bakes. Put the cobbler in the oven and bake until the apples are tender and the crust is colored, about 30 minutes. Remove from the oven and serve with Ginger Whipped Cream.
  • Add the cream and sugar to a medium bowl. Using a hand-held electric mixer, beat the cream until stiff peaks form, about 2 to 3 minutes. Fold in the ginger. Cover and chill up to 4 hours before serving.

1/2 cup sugar
1 tablespoon lemon juice
2 ounces unsalted butter, cut into small pieces
1 cup all-purpose flour
3 tablespoons sugar
Pinch salt
2 teaspoons baking powder
2 ounces unsalted butter
8 tablespoons light cream
1 teaspoon vanilla extract

Steps:

  • Heat oven to 400 degrees
  • Combine apples, sugar and lemon juice. Dot with butter. Set aside.
  • Toss to mix well. Pour into 3- to 4-inch deep baking dish. Dot with butter. Set aside.
  • Combine flour, sugar, salt and baking powder in mixing bowl. Using your fingers, cut in butter until mixture looks crumbly and butter is the size of small peas. While stirring slowly, add cream and vanilla. Mix just until batter comes together. Drop batter in mounds on top apple mixture. Drizzle top with a little additional melted butter and sprinkle with sugar. Bake 35 to 45 minutes, until golden.

1 stick (1/2cup) unsalted butter, cut into pieces
8 lb Granny Smith apples, peeled, cored, and each cut into 8 wedges
1 1/2 cups sugar
2 teaspoons finely grated fresh orange zest
1/2 cup apricot preserves
1/3 cup brandy
For biscuit topping:
3 3/4 cups self-rising flour (preferably White Lily)
6 tablespoons sugar
1/4 teaspoon salt
2 sticks (1 cup) cold unsalted butter, cut into bits
1 3/4 cups plus 2 tablespoons chilled heavy cream
1 large egg yolk
2 tablespoons heavy cream (not chilled)
1/4 cup granulated sugar
Special Equipment
a 3-inch round cookie cutter and 2 (5- to 6-quart) wide heavy pots

Steps:

  • Make filling:
  • Divide butter between 2 (5- to 6-quart) wide heavy pots. Heat over moderately high heat until foam subsides, then sauté apples with sugar and zest, divided evenly between pots, stirring, until apples are slightly softened, about 5 minutes.
  • Transfer apples with a slotted spoon to 2 (2 1/2- to 3-quart) buttered shallow baking dishes (2 inches deep).
  • Transfer all apple juices to 1 pot. Stir in preserves and brandy and bring to a boil, stirring occasionally. Pour mixture over apples.
  • Make biscuit topping and bake cobbler:
  • Preheat oven to 375deg;F.
  • Pulse flour, sugar, and salt in a food processor just until blended. Add butter and pulse just until mixture resembles coarse meal. Transfer to a large bowl and add chilled cream, stirring gently with a rubber spatula to form a dough. (Dough will be sticky at first, but it will stiffen slightly as flour absorbs cream.)
  • Knead dough on a floured surface 4 to 6 times with floured hands (do not overwork dough, or biscuits will be tough). Roll out dough 3/4 inch thick, flouring surface as needed, and cut out 12 to 14 rounds with cookie cutter, re-rolling scraps as necessary. Arrange rounds on top of apples about 1/2 inch apart.
  • Stir together yolk and unchilled cream and brush on biscuits. Sprinkle sugar generously over biscuits.
  • Bake cobblers in middle of oven until biscuits are golden and cooked through (lift one to check if underside is cooked), 35 to 45 minutes.

Steps:

  • Make the filling: In a medium pot, melt butter over medium heat. Add apples, tossing to coat in the butter. Add lemon juice, vanilla, brown sugar, cinnamon, ginger, nutmeg and salt and stir to combine. Continue to cook, stirring occasionally, until the sugar dissolves and the apples start to soften, 5 to 6 minutes.
  • In a small bowl, whisk together granulated sugar and flour. Add to the pot and stir well to combine. Stir constantly until the mixture thickens, 2 to 3 minutes. (If you'd like to make it ahead of time, the filling will keep refrigerated for up to 3 days.)
  • Heat oven to 375 degrees. Lightly grease a 9-by-13-inch pan with a thin layer of butter or a coating of nonstick spray, and scoop the filling into the pan.
  • Prepare the cobbler: In a medium bowl, whisk the flour, brown sugar, cinnamon, baking powder and salt together to combine. Add the butter and toss well until each piece is coated fully with flour. Use your hands or a pastry cutter to cut the butter into the flour until the mixture resembles a coarse meal; the butter should be almost completely worked into the flour.
  • Make a well in the center of the bowl, then add the buttermilk, egg and vanilla. Use a fork or small whisk to first beat the egg lightly, then stir all the ingredients together until well combined.
  • Using a spoon, drop the batter in large dollops all over the cobbler. (Most of the surface will be covered, but some of the filling should still be visible.) Generously sprinkle turbinado sugar over the surface.
  • Transfer to the oven and bake until the filling is bubbly and the biscuit topping is golden brown, 40 to 45 minutes. Cool at least 10 minutes before serving warm.
