This albondigas soup recipe was given to me from my mother-in-law. It's definitely one my favorite soups. Honestly, it's better than most restaurants that I've tried.

1/2 lb lean ground beef
1/2 lb chorizo sausage, casing removed (not the fully cooked kind)
1 egg, beaten
2 garlic cloves, minced
1/2 carrot, minced
1/2 cup cooked rice
1/2 cup cilantro leaf, chopped
1/2 teaspoon salt
1/4 teaspoon pepper
1 teaspoon ground cumin
6 cups chicken broth (I usually use nonfat and low sodium)
1/2 cup onion, chopped
3 stalks celery, cut in chunks
1 (16 ounce) can diced tomatoes (with nothing added)
1/2 teaspoon ground cumin
1 teaspoon oregano
1/2 cup cilantro
1 large zucchini, sliced
salt
pepper

Steps:

  • Make the meatballs first: Combine everything and mix thoroughly.
  • Form meatballs and roll between your palms (Otherwise, meatballs will fall apart in the soup).
  • You should make around 20 to 24 meatballs, set aside.
  • Combine chicken broth, onion, celery, tomatoes and their liquid, cumin, oregano and cilantro leaves in a large pot.
  • Bring to boil, and reduce heat and simmer for 10 minutes.
  • Drop meatballs in the soup (Make sure the soup is slightly boiling, the meatballs need to be cooked quickly).
  • Return to simmer and cook another 10 minutes.
  • Add zucchini and cook 10 minutes.
  • Season with salt and pepper, to taste.
  • You could top the soup with cooked rice, or just by itself.

2 tablespoons olive oil
1 large onion, chopped
2 garlic cloves, minced
2 (4 ounce) cans el pato salsa fresca or 2 (4 ounce) cans tomato sauce
1 (14 1/2 ounce) can diced tomatoes
6 cups chicken broth
3 celery ribs, cut in chunks
1 cup zucchini, chopped
1/2 lb string bean
2 (4 ounce) cans diced green chilies
1 jalapeno
3 bay leaves
2 lbs ground beef
1/2 cup raw white rice
1/4 cup mint leaf
1/4 teaspoon salt
1/4 teaspoon pepper
1 egg

Steps:

  • Heat oil in a heavy saucepan over medium heat.
  • Add onion and minced garlic and sauté until tender, about 5 minutes.
  • Add pato sauce (or tomato sauce if you cant find el pato), diced tomatos and broth. Bring to a low boil and add bay leaves, celery, string beans, green chilies and jalepeno.
  • To prepare meatballs mix rice into meat, adding mint leaves salt and pepper.
  • last add the egg, combine well.
  • Form meat into 1 inch balls & lightly brown in a skillet to lock in juices.
  • Return soup to a gentle simmer and add meatballs & zucchini.
  • Cover and simmer for ½ hour.
  • Add pinches of oregano and salt and pepper if needed.
  • Garnish with cilantro & lemon juice.

1/2 cup cornmeal
6 (14 1/2 ounce) cans beef broth (e.g., Swanson's)
7 -10 ounces green chili salsa (e.g., Pace)
1 onion, chopped
1 (28 ounce) can tomatoes, crushed or diced
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon black pepper, ground
1/2 cup rice

Steps:

  • Mix together beef broth, salsa, 1 onion, tomatoes, dried basil, oregano, and 1/4 teaspoon pepper.
  • (If you use condensed beef broth [e.g., Campbell's], eliminate the salt in the meatballs and use 5 cans [10.5 ounces each] broth plus one quart water.) Bring to a boil and simmer 20 minutes.
  • Combine ground chuck, sausage, 1 onion, egg, salt, 1/4 teas poon pepper, garlic powder, milk, fresh basil, and cornmeal, and mix well.
  • Form into tiny, bite-size meatballs.
  • Add meatballs and rice to broth.
  • Simmer, covered, very slowly for 1 to 1 1/2 hours.
  • Makes 8 -10 servings

5 ounces ground beef
5 ounces ground pork
5 ounces finely chopped yellow onion
1/2 cup panko breadcrumbs
1 1/2 tablespoons tomato paste
2 teaspoons dried oregano
2 teaspoons sweet paprika
1 teaspoon garlic salt
1/2 teaspoon Aleppo pepper
1/2 teaspoon ground turmeric
1/4 teaspoon ground cumin
2 medium eggs
Cuban Catsup, recipe follows, warmed
Serving suggestion: fresh greens
3/4 cup chopped tomatoes
1 tablespoon ground cumin
1 1/2 teaspoons apple cider vinegar
1 teaspoon finely chopped garlic
1 teaspoon sweet paprika
1/3 teaspoon Aleppo pepper
1/3 teaspoon ground turmeric
1/4 teaspoon kosher salt
1/8 teaspoon smoked paprika
2 ounces extra-virgin olive oil

Steps:

  • Put chorizo, beef, pork, onion, panko, tomato paste, oregano, paprika, garlic salt, Aleppo pepper, turmeric, cumin and eggs in a large mixing bowl and knead together with your hands (using gloves is a good idea) until everything is thoroughly combined. Form the mixture into a ball, then cover and refrigerate, 30 minutes.
  • Preheat the oven to 350 degrees F.
  • Line a half sheet pan or cookie sheet with parchment paper. Working quickly, weigh out 1-ounce portions of the meat. Roll each portion into balls and transfer to the lined sheet pan.
  • Roast, about 40 minutes. Toss the meatballs in the Cuban Catsup and serve over fresh greens, if desired.
  • Combine the tomatoes, cumin, vinegar, garlic, paprika, Aleppo pepper, turmeric, salt, smoked paprika and 3/4 cup water in a small saucepan, and bring to a slow simmer over medium-low heat. Continue to cook, stirring occasionally, until most of the liquid has reduced and the mixture has thickened, about 10 minutes. Allow to cool for 10 minutes.
  • Transfer to a non-reactive container and chill in the refrigerator for about 30 minutes.
  • Pour the mixture into a blender and blend on high. With the blender running, drizzle in the oil to form an emulsion.

1 quart water
4 carrots, sliced
2 small potatoes, peeled and diced
1 medium onion, diced
1 ½ cups salsa, medium or hot
2 beef bouillon cubes
1 ½ pounds ground beef
⅓ cup seasoned dry bread crumbs
⅓ cup milk
1 tablespoon chopped fresh cilantro

Steps:

  • In a large stock pot, bring water, carrots, potatoes, onion, salsa, and bouillon cubes to a boil. Reduce to a medium simmer, stirring occasionally, approximately 10 minutes.
  • Mix the beef, breadcrumbs, and milk together in a bowl. Form into 1-inch meatballs, and drop into boiling broth. Once soup returns to a boil, reduce heat to medium-low.
  • Cover and cook 20 minutes, or until meatballs are no longer pink in center and vegetables are tender. Serve with sprinkled cilantro for garnish.

1 large onion, chopped
4 large garlic cloves, minced
1 1/2 tablespoons chili powder
1 28-ounce can plum tomatoes
1 14 1/2-ounce can beef broth
1 pound lean ground beef
1/2 teaspoon dried oregano, crumbled
Chopped fresh cilantro
Sour cream (optional)

Steps:

  • Heat oil in heavy medium saucepan over medium heat. Add onion and three garlic clover and sauté until tender, about 5 minutes. Stir in 1 tablespoon chili powder and cook 1 minute longer. Add tomatoes with their juices and beef broth. Cover and simmer 5 minutes. Puree mixture in blender or processor in batches; return to saucepan.
  • Season beef with salt and pepper. Mix in remaining garlic clove, 1/2 tablespoon chili powder and oregano. Form beef into 1-inch meatballs. Return soup to gentle simmer. Add meatballs to soup and simmer until meatballs are just cooked through, about 5 minutes. Ladle soup into bowls. Garnish soup with chopped fresh cilantro and serve with sour cream if desired.

I loved this soup while living in Mexico, but got lazy so.....I made this soup up based on what was very convenient at Safeway. I used the ready to go peeled and chopped potatoes, but the Zaar wouldn't let me just put in "packages of potatoes" If you can't find ready made pico de gallo: 1 chopped onion, 2 tomatoes chopped, 1 large jalapeno chopped, 1 bunch cilantro chopped.

6 peeled and chopped waxy potatoes
2 (32 ounce) cans chicken broth (or more as needed)

Steps:

  • Saute onions for a bit with some olive oil, add the pico de gallo, and water to barely cover. Cook on low letting it reduce for about 20 minutes.
  • Throw everything else together and cook until the potatoes are tender.

This soup reminds me of when I was young, staying home from school. My grandmother would make this for me. It is so good and flavorful. It is great for a cold rainy day, or any day you feel like it. You can substitute any of the veggies for ones you like better. My grandmother would also make Mexican rice and scoop some into my bowl to make it even better!

1 pound ground beef
1 bunch cilantro, finely chopped
1 small onion, chopped
4 cloves garlic, minced
1 pinch garlic salt
1 pinch onion powder
salt and ground black pepper to taste
4 (14.5 ounce) cans chicken broth
4 large carrots, cut into 1/2 inch pieces
3 stalks celery, cut into 1 inch pieces
3 potatoes, cubed

Steps:

  • Place the ground beef, 1/2 of the cilantro, 1/2 of the chopped onion, the garlic, garlic salt, and onion powder in a bowl. Sprinkle with salt and black pepper, and mix gently until combined. Form the meat mixture into golf ball-sized meatballs.
  • Spray a large skillet with nonstick spray, and brown the meatballs carefully over medium-high heat; remove the meatballs and set aside (the meatballs do not need to be fully cooked; they will finish cooking in the soup). Cook and stir the remaining onion in the same skillet over medium-low heat until translucent, about 10 minutes.
  • Pour the chicken broth into a large pot, and stir in the onion; add the carrots, celery, and potatoes. Bring to a boil over high heat; reduce heat and simmer until potatoes are nearly tender, about 15 minutes. Add the meatballs and the remaining cilantro; simmer for 30 minutes. Season to taste with salt and black pepper.

Steps:

  • Mix together all the ingredients for the meatballs.
  • Note: Although brown rice can be substituted for white rice, cooking times need to be longer.
  • Form into small meatballs and set aside.
  • Note: I use my two tablespoon Pampered Chef scoop to form uniform meatballs.
  • In a large pot, combine all soup ingredients except zucchini and cilantro.
  • Bring to a boil.
  • Add meatballs slowly so stock remains boiling and meatballs do not stick together.
  • Lower heat and simmer for 30 minutes, or until your rice is done.
  • Add sliced zucchini and cilantro, simmering just until zucchini is tender.
  • We like to eat this as a complete meal with a fresh loaf of bread.
