1 quart mayonnaise
3/4 quart apple cider vinegar
1/2 cup corn syrup
1/4 tablespoon cayenne pepper
Prepared horseradish
Lemon juice
Salt and freshly ground black pepper

Steps:

  • Place all ingredients in a very large blender or food processor. (It may be necessary to do this in 2 batches; just add 1/2 of each ingredient and then repeat.) Blend for 1 minute, or until thoroughly combined and mixture is smooth. Pour sauce into a large bowl.
  • Use when grilling chicken; brush lightly over the chicken during the last few minutes of grilling. This sauce is also great for dipping; set some sauce aside for passing at the table.

Next time you're talking 'cue in Alabama memorize these three little words: Alabama white BBQ sauce.Bob Gibson of Decatur, Alabama is credited with creating this mayonnaise-based sauce all the way back in 1925. "We marinate with it, use it to baste, plus we use it as an all-purpose table sauce," says Chris Lilly, a world barbecue champion and current pitmaster at Big Bob Gibson Bar-B-Q. "It's the only sauce we know here, because it's what everyone grows up on." Most folks like to serve Alabama white sauce with smoked or grilled chicken, but this versatile condiment can jazz up just about any piece of meat. 1/4 cup sugar
Kosher salt and freshly ground black pepper
Two 12-ounce bottles amber beer, chilled
1 head garlic, split crosswise
2 fresh bay leaves
2 teaspoons whole black peppercorns
Two 4-pound chickens, cut into 8 pieces each
Vegetable oil, for brushing
1 cup mayonnaise
1/4 cup white wine vinegar
2 tablespoons drained prepared horseradish
2 teaspoons sugar
1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
Hot pepper sauce, such as Tabasco, for seasoning

Steps:

  • For the chicken: In a pot large enough to hold the chicken, combine the sugar, 1/4 cup salt and 2 cups cold water. Stir until the salt and sugar dissolve. Pour in the beer and add the garlic, bay leaves and peppercorns. Submerge the chicken in the brine. Cover and refrigerate at least 8 hours and up to overnight.
  • For the Alabama white barbecue sauce: Meanwhile, whisk together the mayonnaise, vinegar, horseradish, sugar and Worcestershire in a medium bowl until smooth. Season with 1 teaspoon salt, hot sauce to taste and a liberal grinding of black pepper. Cover and refrigerate until you're ready to cook the chicken. (Can be made a day ahead, along with the chicken brine.)
  • Prepare a grill for medium indirect grilling. Drain and rinse the chicken and pat very dry. Season the chicken lightly with salt and more liberally with black pepper. Brush lightly with vegetable oil.
  • Brush the grill grates with vegetable oil and lay the chicken, bone-side down, on the indirect heat side of the grill. Cover and cook until the skin is golden and the chicken is about three-quarters cooked (130 to 135 degrees F on an instant read thermometer), 20 to 25 minutes. Flip the chicken pieces so they are skin-side down and continue indirect grilling until the chicken is cooked through and reads 165 degrees F on an instant-read thermometer, about 15 minutes more.
  • Brush the chicken all over with some of the Alabama white barbecue sauce and move the chicken, skin-side down, to the direct heat side of the grill. Grill just until the skin crisps, about 3 minutes, moving as necessary to keep it from burning. Let rest for 5 minutes before serving.
  • Serve the remaining Alabama white sauce on the side for dipping.

PITMASTER WINGS WITH ALABAMA WHITE BARBECUE SAUCE

2 tablespoons brown sugar
1 tablespoon chili powder
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon ground black pepper
1/2 cup cayenne pepper hot sauce
2 pounds jumbo chicken wings, tips removed, drummettes and flats separated
1 cup mayonnaise
2 tablespoons apple cider vinegar
1 tablespoon gochujang paste
1 teaspoon kosher salt
1 teaspoon Worcestershire sauce
1/2 teaspoon mustard powder
1/2 teaspoon cayenne pepper
1/2 teaspoon ground black pepper
2 cloves garlic, chopped
1 small knob peeled ginger, chopped (can substitute 1 teaspoon ginger powder)

Steps:

  • For the wings: Preheat a grill to 300 degrees F.
  • Combine salt, brown sugar, chili powder, garlic powder, onion powder and black pepper in a mixing bowl. Reserve 1 teaspoon for the barbecue sauce, then add hot sauce and chicken wings and mix by hand until fully incorporated. Allow wings to marinate at room temperature for 1 hour or refrigerated up to 24 hours.
  • For the Alabama white barbecue sauce: Place mayonnaise, vinegar, gochujang, salt, Worcestershire, mustard powder, cayenne, black pepper, garlic, ginger and reserved spice mix in a food processor or blender and puree until completely smooth. Transfer to a serving dish and refrigerate until ready to serve.
  • Grill wings, turning every 10 minutes to prevent the sugars from burning, until they reach an internal temperature of 165 degrees F, about 1 hour. (Be sure to take the temperature on both the drummettes and flats, as they have different cooking times.) Serve with Alabama white barbecue sauce.

It's funny, I lived in Mississippi for a long time very close to Alabama and I never had this while I was there. It just figures that I would wait years to taste this deliciously different barbecue, which is creamy, tangy, and nicely smoky. The sauce will be thinner than what you normally expect with a tomato based sauce but it has just enough umph to make this chicken special. Now that my family has tried this, they wonder where it has been all their life!!!

3 -3 1/2 lbs chicken pieces (legs, thighs, whatever)
applewood smoking wood chips, soaked in hot water (optional)
1 cup apple cider vinegar
1/4 cup melted butter
1/2 teaspoon cayenne pepper
1/2 teaspoon black pepper
1/2 teaspoon salt
1/2 cup mayonnaise
1/4 cup apple cider vinegar
1/2 teaspoon prepared horseradish
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon cayenne pepper
2 tablespoons apple juice

Steps:

  • Clean chicken, cut into serving pieces, and set aside.
  • Mix together ingredients for marinade and pour over chicken in a resealable plastic bag or covered shallow dish.
  • Refrigerate chicken in marinade 6-24 hours, turning occasionally.
  • Allow chicken to come to room temp before cooking.
  • Drain chicken marinade and bring to a boil for 2-3 minutes in a small saucepan, then allow to cool (you will be using this as a baste during cooking).
  • Set up outdoor grill for cooking with indirect heat, using a drip pan to which you can add some apple juice or other liquid, if desired.
  • Sprinkle a small amount of drained soaked wood chips over coals just before adding chicken to the grill, and allow to smolder for the smoke to flavor the food.
  • You may add more chips to the coals occasionally as you baste, when the chips are gone and you need more.
  • When grill temp gets to 250-275F, grill chicken over the drip pan (not over the coals) for 90-100 minutes, basting occasionally, or until cooked through (about 180F), tender and golden, maintaining proper grill temperature throughout.
  • While chicken is cooking, whisk together sauce in a large enough bowl to hold the sauce and chicken (the sauce may appear thin).
  • When the chicken is cooked through, toss the chicken in the sauce and serve.
  • Don't sauce the chicken on the grill, as the sauce will tend to break down if you do that.
