She would treat them to a meal at a restaurant that served Alabama white sauce over chicken and my family thought it was wonderful. I started making it at home and it always brings back memories of those summers in Tuscaloosa. This Alabama white sauce recipe should be applied only at the very end of your grilling or smoking because it will break down and separate if it is heated too long. -Sabrina Everett, Thomasville, Georgia

2 cups mayonnaise
1 cup cider vinegar
2 tablespoons pepper
2 tablespoons lemon juice
1 teaspoon salt
1/2 teaspoon cayenne pepper

Steps:

  • In a small bowl, whisk all ingredients. Refrigerate for at least 8 hours. Brush sauce over meats during the last few minutes of grilling. Serve remaining sauce on the side for dipping.

1 cup apple cider vinegar
2 tablespoons lemon juice
1/4 teaspoon to 1 tablespoon black pepper (coarsely ground, to taste)
1 teaspoon salt
1/2 teaspoon cayenne pepper
Optional: 1 clove garlic (minced)
Optional: 1 tablespoon spicy brown mustard
Optional: 1 teaspoon sugar
Optional: 2 teaspoons horseradish

Steps:

  • Gather the ingredients.
  • In a medium bowl, whisk together mayonnaise, cider vinegar, and lemon juice until creamy and smooth. If you do not want the sauce quite as tart, use half the amount of apple cider vinegar.
  • Stir in black pepper, salt, cayenne pepper, and optional garlic, mustard, sugar, and horseradish. Cover and refrigerate for at least 30 minutes before using.
  • Brush lightly over chicken, turkey, or pork during the last few minutes of grilling. Since this sauce also is great as a dipping sauce to serve at the table, set some aside before you start grilling the meat.
