KETO AIR FRYER ZUCCHINI NOODLES RECIPE

- Preheat the air fryer for a few minutes while you make the zucchini noodles.
- Mix the zucchini noodles, mayo and parmesan cheese in a large bowl. Make sure to coat the noodles well with the mayo then add in the parmesan cheese.
- Spray the air fryer basket with cooking spray.
- Place the noodles in the basket and cook at 400°F for 8-10 minutes. Check after 5 minutes to make sure they don't get too brown. If your noodles are thicker it may take longer.

You can have fork-tender turkey meatballs that are golden yet moist, thanks to the air fryer! Pair with fun zoodles, your favorite jarred tomato sauce and an extra pinch of Parmesan for a delicious and wholesome meal.

- Toss the zoodles with a good pinch of salt in a large bowl. Let sit until the zoodles begin to soften and release some excess liquid, about 10 minutes. Pat them dry and set aside.
- Meanwhile, combine the breadcrumbs and milk in a medium bowl and let sit while the breadcrumbs soften and absorb most of the liquid, about 5 minutes. Add the turkey, ricotta, parsley, Parmesan, oregano, 1/2 teaspoon of salt and several grinds of black pepper to the breadcrumb mixture, then mix thoroughly with your hands to combine. Form into 12 meatballs (each about 1 1/2 tablespoons and 1-inch wide).
- Preheat an air fryer to 400 degrees F. Spray the inside of the basket with cooking spray and add the meatballs, leaving some space between each for air circulation. Air fry until golden brown on the outside and just cooked through, about 10 minutes, turning the meatballs about halfway through the cooking time.
- Meanwhile, warm the tomato sauce in a medium saucepan set over medium heat. Add the meatballs to the sauce, lower the heat to low and keep warm.
- Season the zoodles with a 1/4 teaspoon of salt and several grinds of black pepper. Air fry at 400 degrees F until tender and starting to brown at the edges, tossing halfway through, 5 to 6 minutes. Divide the zoodles between 2 dinner plates or shallow bowls, then top each with 6 meatballs and spoon the warm tomato sauce over top. Serve with a sprinkle of Parmesan.

- Spray the air fryer basket with a non-stick cooking spray.
- Put frozen zucchini noodles in the air fryer basket. Cook in the air fryer at 400F for 8 minutes.
- Remove the basket from the air fryer. Take out the inner basket, then drain water from the outer basket. Put the inner basket back into the outer basket. Stir the zucchini noodles to spread them in a single layer.
- Return then air fryer basket to the air fryer. Cook zucchini noodles at 400F for an additional 5 minutes.

AIR FRYER ZUCCHINI NOODLES
Steps:
- Lay 2 paper towels folded in half into a bowl. Use a spiralizer with your zucchini and then place into bowl.
- Microwave for 2 minutes to soften slightly. Take out and put another paper towel on top, gently press down to absorb moisture on top of noodles.
- Put into bowl again and drizzle with olive oil and seasonings, toss together.
- Preheat air fryer to 400 degrees F for 5 minutes. Pour zoodles in and move so it overlaps as little as possible.
- Cook for 4-5 minutes until tender as you'd like with a bit of crisp on the edges. Pour marinara on top and serve like spaghetti.

- Adjust oven rack to middle position and heat oven to 375 degrees F.
- Use chef's knife to trim off ends of zucchini. Use spiralizer to cut zucchini into 1/8-inch-thick noodles. On cutting board, pull noodles straight and use kitchen shears to cut them into 12-inch lengths.
- Transfer noodles to rimmed baking sheet. Drizzle with oil and sprinkle with garlic, salt, and pepper. Toss noodles with your hands to combine and spread them into even layer.
- Place baking sheet in oven and roast until zucchini is just softened, about 20 minutes.
- Use oven mitts to remove baking sheet from oven and place on cooling rack. Use tongs to transfer zucchini to serving platter. Sprinkle cheese and basil over zucchini and drizzle with extra oil. Serve.
