Jerky is a purely addictive health snack. Whip up a batch in a fraction of the time using the air fryer.

12 ounces top sirloin beef
1 garlic clove, minced
1 inch piece fresh gingerroot, peeled and grated
2 tablespoons reduced sodium soy sauce
1 tablespoon turbinado sugar
1 tablespoon chili paste (such as Sambal Oelek)
1 tablespoon rice vinegar

Steps:

  • Using a sharp knife, thinly slice beef and place in a resealable bag.
  • In a bowl, combine garlic, ginger, soy sauce, sugar chili paste and rice vinegar; whisk well.
  • Pour marinade into bag, seal and place in the refrigerator for at least 4 or up to 24 hours.
  • When ready to cook, remove pieces of beef from a marinade and pat dry with a paper towel.
  • Preheat air fryer to 160-degrees. Place beef in basket and cook for 3 to 4 hours. Checking the jerky periodically for desired doneness. Allow to cool completely and then store in an airtight container.

Air Fryer Version Five Spice Beef Jerky image

Beef jerky is no longer considered a luxury snack, but I can't find the flavor I wanted when I was a kid. Some of the beef jerky sold outside is too dry and hard, which is a torture for people with bad teeth. Or the price is too beautiful, you can't open your stomach and eat it all at once. So I decided to make it myself. Although the process is a bit long, not only does it have a mellow taste and bite, but also the taste can be prepared by myself. Especially the elderly and children can eat beef jerky snacks that can be made with confidence.

400g Beef Hind
10 Chives
6 slices Sliced ginger
A tablespoon Cooking Wine
A tablespoon Soy sauce
1 teaspoon salt
1 teaspoon Five spice powder
1/2 teaspoon pepper powder
1 teaspoon Sugar
1 teaspoon Chopped chili

Steps:

  • Clean up the hind legs of the beef, and then cut along the texture into strips the thickness of a little finger
  • Soak the beef strips in clean water for one hour, fully soak the blood, and then drain the water. Just go through the washing machine with me and wash it once.
  • Put the sliced green onion and ginger into the beef strips, pour in cooking wine, light soy sauce, dark soy sauce, salt, five-spice powder, pepper powder, crushed chili, and white sugar.
  • Stir all the ingredients thoroughly, and marinate for more than 3 hours.
  • Prepare the seasoning for the fried beef strips.
  • Heat oil in a pot, add sliced ginger, pepper, cinnamon, and bay leaves until fragrant.
  • Then pour the marinated beef strips and stir fry quickly.
  • Gradually a lot of water will come out of the beef.
  • Stir-fry until the soup gradually dries, then transfer the beef strips to a large bowl.
  • At this time, add five-spice powder, cumin powder, sugar, and a little vegetable oil, mix well.
  • Place them in a fryer basket or on a baking sheet in the oven. Bake in the fryer at 130 degrees for 8 minutes, and in the oven at 140 degrees for more than 10 minutes. Dry the beef strips to a little bit of moisture before they are out of the pan.

How to make beef jerky in an air fryer.

1 lb thinly sliced beef steak (sirloin steak, round steak) Note 1
½ cup Worcestershire sauce
½ cup soy sauce
1 tbsp honey
1 tsp onion powder
½ tsp chili flakes, optional, or add more for spicy jerky

Steps:

  • Mix all the marinade ingredients together in a bowl.
  • Cut beef slices into strips or squares.
  • Add the beef strips to the marinade, ensure that all surfaces of the beef are covered by the marinade.
  • Cover the bowl and place in the refrigerator overnight or for at least 3 hours.
  • Remove beef from marinade and pat dry with paper towels.
  • Place beef strips in air fryer basket in a single layer - ensure it is not overlapping.
  • Air fry beef strips until completely dehydrated. Set to air fry at 210°F (100°C) for two hours, then check the jerky. If it is not completely dried out continue to air fry for 15-20 minute intervals until it is ready. It needs to reach 160°F/71°C [Note 2].
  • When the jerky is ready, allow to cool and store in an air tight container.
