1 pound fresh green beans, cut into 2 inch pieces
1/2 pound sliced fresh mushrooms
1 small red onion, halved and thinly sliced
2 tablespoons olive oil
1 teaspoon Italian seasoning
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Preheat air fryer to 375°. In a large bowl, combine all ingredients; toss to coat., Arrange vegetables on greased tray in air-fryer basket. Cook until just tender, 8-10 minutes. Toss to redistribute; cook until browned, 8-10 minutes longer.

1 tablespoon olive oil
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1 clove garlic (sliced)

Steps:

  • Gather the ingredients.
  • Wash the green beans well. Trim both ends of the green beans. Keep them long or cut them into halves.
  • Toss the green beans in a bowl with the olive oil, garlic powder, salt, and pepper until they are coated in the oil and seasonings.
  • Lay the green beans in an even layer in the air fryer basket and top with the sliced garlic.
  • Air fry the green beans at 370 F for 7 to 9 minutes. There's no need to turn them, but you can toss the basket if you wish. Serve warm.

1 tablespoons olive oil, plus more for serving
Kosher salt and freshly ground black pepper
1/4 cup roughly chopped fresh parsley
1 small clove garlic, finely grated
Finely grated zest from 1/2 lemon
3 tablespoons roasted sliced almonds

Steps:

  • Preheat a 3.5-quart air fryer to 375 degrees F. Toss the green beans, olive oil, 1/2 teaspoon salt and several grinds of pepper in a large bowl until evenly combined. Transfer to the air-fryer basket and air-fry the green beans, tossing halfway through, until tender and blistered in spots, about 12 minutes.
  • Meanwhile, stir the parsley, garlic, lemon zest, 1/8 teaspoon salt and a couple grinds of pepper together in a small bowl until combined. Stir in the toasted almonds.
  • Place the green beans on a serving platter, top with the gremolata mixture and drizzle lightly with more olive oil.
