4 ounces ghirardelli bittersweet baking chocolate, broken into 1/4-inch pieces
4 tablespoons butter, cut in chunks
1 1/2 cups sugar
1/2 cup water
1/4 cup light corn syrup
1 teaspoon pure vanilla extract

Steps:

  • In a heavy saucepan combine the chocolate, butter, sugar, water and corn syrup.
  • Stir the mixture continuously over medium heat until the chocolate and butter have melted and the sugar has dissolved.
  • When the sauce comes to a boil, lower the heat and continue boiling gently for 10 minutes.
  • Remove the thickened sauce from the heat and stil in the vanilla extract.
  • Store covered in the refregerator.
  • To reheat, place in a small microwave-safe bowl.
  • Microwave on medium 6-8 minutes, stirring after the first 3 minutes.

4 ounces chocolate bars, Ghirardelli 60% Cacao Bittersweet
4 tablespoons butter, cut into chunks
1 1/2 cups sugar
1/2 cup water
1/4 cup light corn syrup
1 teaspoon pure vanilla extract

Steps:

  • In a heavy saucepan, combine the chocolate (broken into 1/4" pieces) , butter, sugar, water, and light corn syrup. Stir the mixture continuously over medium heat until the chocolate and butter have melted and the sugar has dissolved. When the sauce comes to a boil, lower the heat and continue boiling gently for 10 minutes. Remove the thickened sauce from the heat, and stir in the vanilla extract. Store covered in the refrigerator.

2 cups sugar
2 cups heavy cream
2 cups dark cocoa powder
2 sticks (1 cup) salted butter

Steps:

  • Combine the sugar, cream, cocoa and butter in a small saucepot over medium heat and cook, stirring, until the butter melts and everything is combined, a few minutes.
  • Transfer to a mason jar and store in the refrigerator. It will harden as it cools so when ready to use, simply reheat in a saucepan over medium-low heat.

I'm giving this recipe up because I love this site so much. It's been in my family for three generations and I've never tried one I liked better. It gets very thick on cold ice cream.

1/4 cup butter
1 1/2 unsweetened chocolate squares, shaved or broken up
1/4 cup cocoa
3/4 cup sugar
1/4 cup table cream
1/8 teaspoon salt
1 teaspoon vanilla

Steps:

  • Melt the butter and chocolate over low heat in a heavy saucepan, stirring until smooth.
  • Stir in cocoa, sugar, cream and salt and then bring slowly to boil. My mom always said do not stir, but to dissolve the sugar I've found using a whisk works fine.
  • Remove from heat and blend in vanilla.
  • Serve warm.
  • May be reheated very slowly.

1 (12 ounce) package semi-sweet chocolate chips
1/2 cup sugar
1 tablespoon butter or 1 tablespoon margarine
1 teaspoon vanilla

Steps:

  • Place milk, chocolate chips and sugar in a medium saucepan.
  • Heat to boiling over medium heat, stirring constantly.
  • Remove from heat, and stir in butter and vanilla (sauce will thicken while it is cooling).
  • Serve warm over ice cream.

4 ounces white chocolate baking bar, broken into 1-inch pieces (1 bar)
1 tablespoon butter
2 teaspoons milk

  • In a double boiler, combine the corn syrup, marshmallow creme, white chocolate, butter, and milk over hot, but not boiling water.
  • Stir continuously until the mixture thickens, then remove from heat and stir in vanilla extract.
  • Store tightly covered in the refrigerator for up to a week.
