These air-fryer spring rolls are a great appetizer to have waiting in the freezer! While in the Bahamas, friends suggested a restaurant that serves amazing chicken spring rolls. When I got home, I created my own version. -Carla Mendres, Winnipeg, Manitoba

Number Of Ingredients 11

3 cups coleslaw mix (about 7 ounces)
3 green onions, chopped
1 tablespoon soy sauce
1 teaspoon sesame oil
1 pound boneless skinless chicken breasts
1 teaspoon seasoned salt
2 packages (8 ounces each) cream cheese, softened
2 tablespoons Sriracha chili sauce
24 spring roll wrappers
Cooking spray
Optional: Sweet chili sauce and additional green onions

Steps:

  • Preheat air fryer to 360°. Toss coleslaw mix, green onions, soy sauce and sesame oil; let stand while cooking chicken. Place chicken in a single layer on greased tray in air-fryer basket. Cook until a thermometer inserted in chicken reads 165°, 18-20 minutes. Remove chicken; cool slightly. Finely chop chicken; toss with seasoned salt., Increase air-fryer temperature to 400°. In a large bowl, mix cream cheese and Sriracha chili sauce; stir in chicken and coleslaw mixture. With 1 corner of a spring roll wrapper facing you, place about 2 tablespoons filling just below center of wrapper. (Cover remaining wrappers with a damp paper towel until ready to use.) Fold bottom corner over filling; moisten remaining edges with water. Fold side corners toward center over filling; roll up tightly, pressing tip to seal. Repeat., In batches, arrange spring rolls in a single layer on greased tray in air-fryer basket; spritz with cooking spray. Cook until lightly browned, 5-6 minutes. Turn; spritz with cooking spray. Cook until golden brown and crisp, 5-6 minutes longer. If desired, serve with sweet chili sauce and sprinkle with green onions. , Freeze option: Freeze uncooked spring rolls 1 in. apart in freezer containers, separating layers with waxed paper. To use, cook frozen spring rolls as directed, increasing time as necessary.

This is an easy spring roll recipe that I cook in an air fryer but you could cook in the oven also. I like to serve it with sweet chile sauce.

2 ounces dried rice noodles
1 tablespoon sesame oil
7 ounces ground beef
1 cup frozen mixed vegetables
1 small onion, diced
3 cloves garlic, crushed
1 teaspoon soy sauce
1 (16 ounce) package egg roll wrappers
1 tablespoon vegetable oil, or to taste

Steps:

  • Soak noodles in a bowl of hot water until soft, about 5 minutes. Cut noodles into shorter strands.
  • Heat sesame oil in a wok over medium-high heat. Add ground beef, mixed vegetables, onion, and garlic. Cook until beef is almost browned throughout, about 6 minutes. Remove from heat. Stir in noodles; let stand until juices have been absorbed. Add soy sauce to the filling.
  • Preheat air fryer to 350 degrees F (175 degrees C).
  • Lay out 1 egg roll wrapper onto a flat work surface; place a diagonal strip of filling across the wrapper. Fold the top corner over the filling; fold in the two side corners; brush center with cold water and roll spring roll over to seal. Repeat with the remaining wrappers and filling.
  • Brush the tops of the spring rolls with vegetable oil. Arrange a batch of spring rolls into the basket of the air fryer; cook until crisped and lightly browned, about 8 minutes. Repeat until all are cooked.

Add chicken; cook, covered, until a thermometer inserted in chicken reads 165°, 15-20 minutes. Remove chicken; cool slightly. Finely chop chicken; toss with seasoned salt., In a large bowl, mix cream cheese and chili sauce; stir in chicken and coleslaw mixture. With a corner of a spring roll wrapper facing you, place about 2 tablespoons filling just below center of wrapper. (Cover remaining wrappers with a damp paper towel until ready to use.)
