I love hot cinnamon doughnuts, but don't like or have all the oil to make the recipes. This version uses an air fryer. By using less oil, I can use tastier oil, thus my choice is butter. Serve and eat hot. Like traditional doughnuts they are much better hot than cold.

½ cup white sugar
2 ½ tablespoons butter, at room temperature
2 large egg yolks
2 ¼ cups all-purpose flour
1 ½ teaspoons baking powder
1 teaspoon salt
½ cup sour cream
⅓ cup white sugar
1 teaspoon cinnamon
2 tablespoons butter, melted, or as needed

Steps:

  • Press 1/2 cup white sugar and butter together in a bowl until crumbly. Add egg yolks and stir until well combined.
  • Sift flour, baking powder, and salt into a separate bowl. Place 1/3 of the flour mixture and 1/2 the sour cream into the sugar-egg mixture; stir until combined. Mix in the remaining flour and sour cream. Refrigerate dough until ready to use.
  • Mix 1/3 cup sugar and cinnamon together in a bowl.
  • Roll dough out onto a lightly floured work surface to 1/2-inch thick. Cut 9 large circles in the dough; cut a small circle out of the center of each large circle to create doughnut shapes.
  • Preheat an air fryer to 350 degrees F (175 degrees C).
  • Brush 1/2 of the melted butter over both sides of the doughnuts.
  • Place 1/2 doughnuts into the basket of the air fryer; cook for 8 minutes. Paint cooked donuts with the remaining melted butter and immediately dip into the cinnamon-sugar mixture. Repeat with the remaining doughnuts.

1 cup all-purpose flour (120 grams)
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
1 large egg (room temperature)
1/3 cup brown sugar (65 grams)
1/4 cup milk, room temperature (60mL)
1/4 cup plain yogurt (or Greek yogurt or sour cream), room temperature (60 grams)
2 tablespoons unsalted butter, melted (30 grams)
1 1/2 teaspoons vanilla
4 tablespoons unsalted butter (melted)
3/4 cup granulated sugar
3/4 teaspoon cinnamon

Steps:

  • In a large bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg. In a medium bowl, lightly beat egg. Whisk in brown sugar, milk, and yogurt, until smooth. Add melted butter and vanilla. Pour wet ingredients into dry ingredients and stir until just combined. Don't over mix.
  • Pipe or spoon batter in 3-inch silicone donut mold.
  • Preheat air fryer at 400˚F/204˚C for 2-3 minutes. Place donut mold in air fryer and bake at 330˚F/166˚C for 6 minutes, or until internal temperature of donuts reads above 160˚F/71˚C. Remove from air fryer and let cool for 2 minutes in mold, then carefully remove donuts from the mold.
  • Dip the rounded side of the donuts into the melted butter, then the cinnamon sugar mixture. Place coated donuts in air fryer for another 2 minutes at 350˚F/177˚C.
  • For donut bites: Use muffin bites pan, but don't fill the center cavity. Air fry at 350˚F/177˚C for 6 minutes. Cooking time may vary because muffin bites pans vary in size.

Cooking spray
1/2 c. milk
1/4 c. plus 1 tsp. granulated sugar, divided
1 (0.25-oz.) packet or 2 1/4 tsp. active-dry yeast
2 c. all-purpose flour
1/2 tsp. kosher salt
4 tbsp. butter, melted
1 large egg
1 tsp. pure vanilla extract
For the vanilla glaze
1 c. powdered sugar
2 oz. milk
1/2 tsp. pure vanilla extract
For the chocolate glaze
3/4 c. powdered sugar
1/4 c. unsweetened cocoa powder
3 tbsp. milk
For the cinnamon sugar
1/2 c. granulated sugar
2 tbsp. ground cinnamon
2 tbsp. melted butter

Steps:

  • Grease a large bowl with cooking spray. In a small, microwave-safe bowl or glass measuring cup, add milk. Microwave until lukewarm, 40 seconds. Add a teaspoon of sugar and stir to dissolve, then sprinkle over yeast and let sit until frothy, about 8 minutes.
  • In a medium bowl, whisk together flour and salt. In a large bowl, whisk together remaining ¼ cup sugar, butter, egg, and vanilla. Pour in yeast mixture, mix to combine, then add in dry ingredients, stirring with a wooden spoon until a shaggy dough forms.
  • Transfer to a lightly floured surface and knead until elastic and only slightly tacky, adding more flour a teaspoon at a time if needed, about 5 minutes. Form into a ball then place dough in oiled bowl and cover with a clean dish towel. Let dough rise in a warm spot until doubled in size, about 1 hour.
  • Line a large baking sheet with parchment paper and lightly grease with cooking spray. Punch down dough, then turn onto a lightly floured work surface and roll out into a ½" thick rectangle.
  • Using a doughnut cutter or 3" and 1" biscuit cutters, punch out your doughnuts. Knead any scraps together and punch out more doughnuts or holes. Place doughnuts and holes onto baking sheets, cover with dish towel, and let rise again, 40 minutes to 1 hour more.
  • Grease basket of air fryer with cooking spray and add 2 doughnuts and 2 doughnut holes at a time, making sure doughnuts don't touch. Cook at 375° for 6 minutes, until deeply golden. Place on cooling rack and repeat with remaining dough.
  • Dip doughnuts in glaze (see below) or follow instructions for cinnamon sugar. Return to cooling rack and let set for 5 minutes before serving.
  • In a medium bowl whisk together powdered sugar, milk, and vanilla until smooth.

  • In a large shallow bowl, whisk together cinnamon and sugar. Brush doughnuts with melted butter and toss in cinnamon sugar.

There's nothing better than homemade doughnuts! I like cake donuts better than yeast donuts. This is how I make my favorite doughnuts for my family on the weekends. Real simple ingredients you already have on hand. The hardest part is letting the dough chill for an hour before frying them. You can make the dough the night before and have them ready to go in the morning, that's what I do ;) either douse them in cinnamon sugar or icing sugar or .....(you get the idea) I use a dough hook on my Stand Mixer which makes this real easy to whip up. NOTE: Prep time does not include chill time.

1 cup sugar
4 teaspoons baking powder
1 1/2 teaspoons salt
1/2 teaspoon nutmeg
2 eggs
1/4 cup unsalted butter, melted
1 cup milk
4 cups flour (plus a little more if dough is sticky)
oil (for frying)
cinnamon sugar

Steps:

  • In a large bowl mix the sugar, baking powder, salt and nutmeg.
  • Add eggs, milk and melted butter. Beat well.
  • Add 3 cups of the flour, beating until blended. Add one more cup of flour and beat well. The dough should be soft and sticky but firm enough to handle. If you feel its necessary, add up to 1/2 cup more flour.
  • Cover with plastic wrap and chill for *at* *least* one hour.
  • Remove your dough from the fridge and begin heating about 1" of oil to 360F in a large metal skillet.
  • Working half the dough at a time, roll it out on a floured surface to about 1/2" thickness. Cut out circles using a doughnut cutter or large biscuit or cookie cutter. For the center, I actually use the cap off my martini shaker ;) to cut the holes.
  • Gently drop the doughnuts in batches into the hot oil. Flip them over as they puff and turn them a couple more times as they cook. They will take about 2-3 minutes in total and will be lovely and golden brown all over.
  • Remove from the oil and set them on paper towels or brown paper bag (that removes all the fat, you know).
  • Douse them with sugar and cinnamon, icing, chocolate dipped with sprinkles or whatever you like.

½ cup granulated sugar
4 tbsp butter (softened)
2 eggs (room temperature)
2 3/4 cups all purpose flour
2 tsp baking powder
1 tsp salt
¾ cup vanilla greek yogurt
1 cup confectioners sugar
4 tbsp heavy whipping cream
½ cup sprinkles

Steps:

  • In a large bowl, cream butter and sugar. Add greek yogurt, and eggs. Whisk until well combined. In a separate small bowl, mix flour, baking powder, salt, and 3 tbsp sprinkles. Slowly incorporate dry ingredients into the wet ingredients. Use your hands to knead the dough. Place dough into the fridge for 1 hour prior to cooking. (or overnight to prepare the next morning)
  • Lightly flour a cutting board or flat work surface. Roll dough out with a rolling pin to ½" thickness. Use a 3" biscuit cutter to cut 8 holes into the dough. Use a ½" biscuit cutter to cut the center of each circle to form a donut.
  • Preheat the air fryer at 350* for 5 minutes.
  • Spray air fryer basket with non-stick cooking spray. Arrange donuts in the air fryer at least ½" apart, multiple batches may be necessary. Cook for 8 minutes, flipping halfway through. **Cook donut holes at the same time.**
  • While the donuts cook, prepare the frosting. Add confectioners sugar to a small bowl. Whisk in heavy whipping cream until smooth.
  • Remove donuts from the air fryer and let cool for 5 minutes.
  • One at a time, dip each donut into glaze, then immediately cover with sprinkles. This way the glaze will not set and the sprinkles will stick to the donuts. Serve donut holes on the side.
  • Enjoy!

1/2 cup vegan white chocolate chips + 1 tbsp to add after the mixture has been heated
2 tbsp coconut cream
2 tsp maple butter *
Vegan sprinkles to top
1 cup warm almond milk
⅓ cup of sugar
2 ¼ tsp active dry yeast, or one package
¼ cup Just Egg, equivalent of 2 eggs *
¼ cup coconut oil , melted
¼ cup softened vegan butter, salted
2 tsp vanilla extract
¼ tsp nutmeg, optional
4 ¼ cup all-purpose flour
⅛ tsp salt , if not using salted vegan butter

Steps:

  • Divide the almond milk and sugar in half. Combine ½ cup of the warm almond milk and half of the sugar into a small bowl. Mix until the sugar dissolves slightly. Add the yeast and let the mixture sit for 10 minutes. The yeast should begin to bubble and froth up after a few minutes.
  • In another large bowl, cream the remaining sugar with the vegan butter. Add the Just Egg, the remaining almond milk, and coconut oil. Add the vanilla extract, nutmeg, and salt (if using). Add the frothy yeast mixture. Mix to combine.
  • Add the flour to the liquid mixture, 1 cup at a time, stirring until it forms a soft dough. You should be able to easily form a ball with the dough, but it shouldn't be too sticky to the touch.
  • Transfer the dough to a floured surface and knead for 4 minutes until the outer surface is smooth. Oil a bowl and place the ball in it. Cover the bowl with a damp tea towel or paper towel, and let rise for about 1 ½ hours or double in size.
  • Transfer the dough to a floured surface and roll it out into a rectangle about ¾ of an inch thick. Using a biscuit cutter or a glass cut the dough into 2-3" diameter circles. Use a smaller circular cutter to cut out the holes.
  • Place the cut donuts on a parchment-lined baking sheet and cover with a tea towel. Let rise again until doubled in size, about 45 minutes.
  • Preheat your air fryer to 400 degrees F.
  • Line your air fryer basket with parchment paper and spray with oil. Place the donuts about 2 inches apart from each other in the basket. You may need to do multiple batches to cook all of the donuts. Spray the tops of the donuts with more oil.
  • Air fry for 6 minutes, flipping them halfway. Then, remove from the basket and let cool on a wire rack.
  • Heat the vegan white chocolate in the microwave until the chips are just beginning to melt (about 1 minute on high). Add in the remaining 1 tablespoon, and stir until the chocolate is spreadable.
  • Add the room temperature coconut cream and maple butter. The glaze should be a thick yet drizzle-able consistency.
  • Once the donuts are cooled, glaze the donuts by dipping one side into the glaze. Immediately top with sprinkles while the glaze is still wet. Let the glaze harden. To speed this up, you can place the donuts into the freezer for 5 minutes.

Steps:

  • Remove the biscuits from the can, separate them, and place them on a work space like a cutting board or rolling mat. Use a 1-inch round cookie cutter (or similarly-sized bottle cap) to cut holes out of the center of each biscuit.
  • Lightly coat your air fryer basket with cooking oil.
  • Place 4 donuts in a single layer without touching in the air fryer.

Who doesn't love a doughnut? With the help of an air fryer, you can enjoy homemade yeast doughnuts without any of the hassle of cooking with hot oil. But are they as good? Well, after much testing, we cracked the code for creating a tender doughnut that is not deep fried - it's all about using a combination of all-purpose and cake flour. This recipe results in a tender doughnut that is lighter than air. Dusted in cinnamon sugar, these become simply irresistible!

2 1/4 teaspoons active dry yeast
3/4 cup whole milk, warmed (110 degrees F)
1 large egg
2 tablespoons canola oil
1/2 teaspoon pure vanilla extract
4 tablespoons unsalted butter, melted, plus more for the bowl
2 1/4 cups all-purpose flour, plus more for dusting
1 cup cake flour (not self-rising)
1/2 cup sugar
1/2 teaspoon kosher salt
2 tablespoons ground cinnamon

Steps:

  • Sprinkle the yeast over the warm milk in a liquid measuring cup. Let stand until foamy on top, about 10 minutes.
  • Beat the egg and oil using a stand mixer fitted with the paddle attachment on medium speed until combined. Add the vanilla, 2 tablespoons of the melted butter, and the yeast mixture. Mix on low speed until combined.

  • Preheat air fryer to 375°. Separate biscuits. Cut out centers using a 1-inch cutter; save centers. In batches, place doughnuts in a single layer in greased air fryer. Cook until golden brown and puffed, turning once, about 5 minutes. In batches, cook doughnut holes until golden brown, 3-4 minutes., Meanwhile, in a shallow dish, combine sugar and cinnamon. ½ cup Yogurt
¼ cup Granulated Sugar
½1 tsp Kosher Salt
½ tsp Baking Powder
1 tbsp Unsalted Butter
1 cup Blueberries (fresh or frozen)
2 tbsp Lemon Juice
1 cup Blueberries
1 tbsp Lemon Zest
2 Tbsp Heavy Cream
½ cup Granulated Sugar

Steps:

  • In a mixing bowl, combine Self Raising Flour, Baking Powder, Kosher Salt, Granulated Sugar, and Lemon Juice. Combine everything to make a dough. Gradually stir in the Blueberries with the Dough.
  • Scoop 1 tbsp of the dough and roll it between your palms and elongate it lengthwise. As you elongate the dough, join the ends to make a ring-like shape that resembles a donut. Alternatively, you can roll the donut dough to about 1-inch thickness and use a donut cutter or two different sized ( 1 large and 1 small) cookie cutter to cut out the Donuts.
  • Place the Donuts in the Air Fryer basket. Brush Butter on top of the donuts. Cook @350F or 180C for 10-minutes.
  • Combine Granulated Sugar, Blueberries, and Heavy Cream in a bowl. If you are using Fresh Blueberries, then blend them along with sugar and heavy cream in the food processor and then glaze over the donuts.
  • Garnish the Blueberry Donuts with lemon zest and serve.
