Blueberry muffins are one of my favorites, but when the craving hits and I don't want to heat up my kitchen, I turn to my air fryer.

1 cup self-rising flour
2 ½ tablespoons white sugar
¼ teaspoon ground cinnamon
⅓ cup milk
3 tablespoons melted butter
1 egg
2 teaspoons vanilla extract
½ cup blueberries

Steps:

  • Preheat the air fryer to 340 degrees F (170 degrees C) for 5 minutes.
  • Combine flour, sugar, and cinnamon in a bowl. Add milk, melted butter, egg, and vanilla extract. Blend until well combined. Fold in blueberries. Add mixture to silicone cupcake liners using a small scoop, filling each 3/4 way full. Place carefully into the air fryer basket.
  • Air fry muffins for 14 minutes.

4 tbsp sugar
1/4 tsp cinnamon
1/3 c milk (vitamin d is best)
3 tbsp butter (melted)
1 egg
2 tsp vanilla
3/4 c blueberries (fresh or frozen and defrosted)

Steps:

  • In a bowl whisk together wet ingredients, then incorporate flour and cinnamon. Once mixture is blended, gently fold in berries. * If using boxed, follow directions on box for ingredients needed in mix.
  • Preheat air fryer to 340 degrees F for 5 minutes.
  • Place silicone muffin cups into basket, fill each one 3/4 of the way full.
  • Cook for 12-14 minutes or until toothpick comes out clean in center.

1 teaspoon lemon juice
1 pinch salt
Topping:
3 tablespoons quick-cooking oats
1 ½ tablespoons all-purpose flour
1 ½ tablespoons brown sugar
½ teaspoon ground cinnamon
1 ½ tablespoons salted butter, softened

Steps:

  • Preheat an air fryer to 360 degrees F (180 degrees C).
  • Combine blueberries, flour, lemon juice, and salt in a small bowl. Toss to coat, then divide the mixture between two 1-cup ramekins.
  • Combine oats, flour, brown sugar, and cinnamon for the topping in a small bowl. Mix in softened butter using a fork until mixture is crumbly. Sprinkle over the blueberries.
  • Place the ramekins in the air fryer basket and cook until the blueberries are warmed throughout and topping is golden brown, 12 to 14 minutes.

1 cup frozen blueberries
1 cup all-purpose baking flour or gluten-free baking flour (I like Bob's 1-to-1 Gluten-Free Baking Flour)
1/3 cup coconut sugar or regular sugar
½ teaspoon salt
2 teaspoons baking powder
¼ cup unsweetened applesauce
1 large egg, lightly beaten
¼ cup melted butter, ghee, or coconut oil
1 teaspoon vanilla extract
¼ cup milk or unsweetened almond milk

Steps:

  • Spray a silicone mini muffin pan with nonstick cooking oil and set aside.
  • Combine the frozen blueberries, flour, sugar, salt, and baking powder in a large mixing bowl. Stir to combine.
  • Next, combine the applesauce, egg, butter, vanilla extract, and milk in a small mixing bowl and stir to combine.
  • Pour the wet mixture into the dry mixture and stir to combine.
  • Use a tablespoon to fill the muffin wells ¾ of the way full.
  • Place the muffin pan on the tray of your air-fryer. Set the temperature to 360 degrees for 10 minutes.
  • When the cooking time is up, remove the muffin tin and transfer the muffins to a cooling rack.
  • Next, use your spoon to divide the rest of the batter into the muffin pan and repeat the baking process.
  • Serve warm or at room temperature.

Air Fryer Muffins are the perfect breakfast treat. They are easy and quick to make and super delicious. You can use this recipe as a basic vanilla muffin recipe and add any add-ins like chocolate chips, blueberries, or bananas.

1 cup all-purpose flour, spooned and leveled
1/4 tsp baking soda
1/4 tsp baking powder
1/4 tsp salt
2 tbsp unsalted butter, melted
2 tbsp mild vegetable or canola oil
1 large egg
1/3 cup buttermilk
1/4 cup sour cream
1 tsp vanilla extract
1/2 cup sugar
replace sour cream with mashed bananas 1:1
1 large banana, chopped
1/2 cup semi-sweet chocolate chips
2 tbsp coarse sugar for topping
1/2 cup blueberries, fresh or thawed
streusel topping*

Steps:

  • Line about 8 silicone muffin cups with paper liners and set aside.
  • Preheat the air fryer to 400°F (204°C).
  • In a large bowl, whisk together the flour, baking powder, baking soda, and salt and set aside.
  • In another large mixing bowl, whisk together the butter and oil until combined. Then whisk in the egg to combine. Add the buttermilk, sour cream, and vanilla and stir to combine. Whisk in the sugar until well combined for about 1 minute. Add the flour mixture and whisk just to combine. Fold in the banana chunks, chocolate chips, or blueberries, if you like.
  • Spoon the batter into the prepared silicone cups until almost full. Top with coarse sugar or streusel topping if desired.
  • Bake at 400°F (204°C) for 4 minutes. Then, leaving the air fryer basket closed, lower the heat to 325°F (163°C) and bake for another 11 to 13 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  • Remove from the oven and let cool in the silicone cups for 5 minutes. Then transfer to a wire rack and let cool completely before serving. Store in an airtight container at room temperature for up to 4 days**.
