- Preheat air fryer to 375°. Place beans in a food processor; cover and process until blended. Transfer to a large bowl. Add bread crumbs, tomato, jalapeno, egg, cilantro and garlic. Mix until combined. Shape into 4 patties., In batches, place patties on greased tray in air-fryer basket. Cook until lightly browned, 3-4 minutes. Turn; cook until lightly browned, 3-4 minutes longer. Serve on buns. If desired, top with sour cream and guacamole.

AIR FRYER BLACK BEAN BURGERS

- Preheat oven to 350F. Line a small baking sheet with parchment paper and spread beans out in a single layer. Bake beans at 350F 10-12 minutes until just slightly dried out. Allow to cool.
- Heat olive oil in a small skillet over medium-high heat. Add onion and pepper and saute 3-4 minutes until tender. Add garlic and saute 1 additional minute until fragrant.
- Scrape vegetables into a fine-mesh sieve and gently press on vegetables to drain out liquid. Set aside.
- Place beans in a large bowl and use a fork to gently mash to a paste (you will want several chunks) Add vegetables, paprika, chili powder, cumin, cayenne pepper, barbecue sauce, breadcrumbs, egg, and salt and pepper to taste. Gently fold black bean mixture until just combined.
- Form black bean mixture into 4 patties. Wrap well and refrigerate until ready to use (patties may be refrigerated up to 4 days and frozen up to 1 month)
- When ready to cook, spray the grate of a 4-qt air fryer with nonstick cooking spray and preheat to 375F.** Lay burgers in a single layer (we typically cook 2 at a time in our 6-qt) and air fry at 375F 6 minutes, flipping burgers halfway through cooking.
- Remove burgers from air fryer and serve warm in buns with desired toppings. Enjoy!

BLACK BEAN BURGERS

Steps:
- Mash the beans.
- Using a fork, mash the beans in a medium bowl until they are mushy but still have some whole bean pieces throughout.
- Make the burger mixture.
- Mix the breadcrumbs, grated onion, chili powder, egg and some salt and pepper into the beans. Add a splash of water if the mixture looks dry. Set aside for 5 minutes. Preheat a large cast-iron skillet over medium-high heat and add a few tablespoons of canola oil.
- Form the patties.
- Divide the bean mixture into 4 equal balls and form into 4 nice, neat patties. Black bean burgers don't shrink when they cook, so whatever size you make them when they go into the skillet will be the size they are when they come out.
- Cook the burgers.
- Cook the burgers until browned, 4 to 5 minutes on each side. Add a slice of Swiss cheese to the top of each burger. Invert a second skillet on top of the first skillet and continue cooking, 2 minutes, until the cheese is melted.
- Top the burgers.
- Combine the mayonnaise and some hot sauce in a small bowl. Serve the burgers on toasted buns with the spicy mayonnaise, lettuce and sliced tomatoes.

- Preheat an air fryer to 400 degrees F (200 degrees C) according to manufacturer's instructions.
- Slice burger block into 3 equal pieces; form each piece into a patty.
- Spray the top of one patty with nonstick spray and sprinkle 1/4 teaspoon seasoning on top. Flip over, place in the air fryer basket, and spray and season the other side.
- Cook in the preheated air fryer for 3 minutes. Flip with a spatula and cook until done, about 3 minutes longer. An instant-read thermometer inserted into the center should read at least 160 to 165 degrees F (70 to 74 degrees C). Repeat to season and cook remaining burgers.

- If grilling, preheat an outdoor grill for high heat, and lightly oil a sheet of aluminum foil. If baking, preheat oven to 375 degrees F (190 degrees C), and lightly oil a baking sheet.
- In a medium bowl, mash black beans with a fork until thick and pasty.
- In a food processor, finely chop bell pepper, onion, and garlic. Then stir into mashed beans.
- In a small bowl, stir together egg, chili powder, cumin, and chili sauce.
- Stir the egg mixture into the mashed beans. Mix in bread crumbs until the mixture is sticky and holds together. Divide mixture into four patties.
- If grilling, place patties on foil, and grill about 8 minutes on each side. If baking, place patties on baking sheet, and bake about 10 minutes on each side.

BLACK BEAN VEGGIE BURGER
I make these for a burger restaurant in Dominical, Costa Rica. After many tries and test runs, everyone seems to love this version. We serve it Tex-Mex style with guacamole, lettuce and tomato. I'm thinking of trying to tweak it again to include more veggies, like shredded zucchini or fresh corn kernels, but haven't tried those yet. Be sure to make homemade black beans, as canned ones mash up an ugly grey color.

- In a food processor, place red pepper, onion and garlic. Pulse until chopped in small pieces, but not finely ground. Put mixture in a strainer to remove excess water, gently pushing veggie mixture down with hands. Put mixture into large mixing bowl.
- Place the well drained black beans in the food processor and pulse lightly until beans are mashed but not ground up. You should still see some semi-whole beans. Mixture will be somewhat dry. Scrape mashed beans into mixing bowl and stir into the veggie mixture.
- Add brown rice and grated carrot, stir well. Season with salt and pepper to taste, making it a wee tad salty because the bread crumbs will tone it down.
- In a small bowl, beat the eggs, cumin and hot sauce with a fork. Add to the bean mixture, mixing well.
- Add bread crumbs, ¼ cup at a time until mixture holds together well. It should not be runny, and it should not be crumbly.
- Optional: To ensure proper seasoning and to make sure burgers will hold together, make a small 2 inch patty and fry in a small pan. Adjust seasoning if necessary.
- With hands, form patties and fry in a small amount of olive or vegetable oil, approximately three minutes per side until nicely browned and crisp and hot throughout.
- Because of the cumin, these make awesome Tex-Mex burgers. Serve on a toasted bun with lettuce, tomato, onion and guacamole or chipotle mayo. NOTE: I make these burgers for a restaurant, so I freeze the uncooked patties on a cookie sheet, then transfer to a freezer container or individual baggies. This will add slightly to the cooking time, but they cook up great. You can also grill them on a well-oiled grill basket.

HEALTHY LOW-FAT BLACK BEAN VEGGIE BURGERS
This is the first veggie burger I have ever tried and I was very impressed. I am not vegetarian, But I really enjoyed these! I don't know how these compare up to other black bean burgers, but I know these are super cheap, healthy, and very yummy! I found this recipe somewhere on Google and changed it to my tastes. I don't think they will hold up enough to be just thrown on the BBQ because these are soft burgers, but if you refrigerate your leftovers they are nice and firm and work in the oven or BBQ the next day after they were fried. Don't be scared to lightly fry these because they are so low fat anyways, so you still aren't hurting yourself! Enjoy!

- In a large bowl, mash the beans until almost smooth (or puree with the onions).
- Add onions and the rest of the ingredients, except the oil, adding the flour a tablespoon at a time until the mixture is at your desired consistency.
- Form bean mixture into flat patties and fry patties in a small amount of oil until slightly firm.
- Serve topped with hummus or a Greek feta salad salad dressing, spread on a whole wheat bun. I tried these with the usual ketchup and they weren't nearly as good -- trust me.
