INSTANT POT® CHICKEN SOUP



Instant Pot® Chicken Soup image

A simple chicken soup recipe made in an Instant Pot®. I do not add noodles to mine, however, if you wanted to add noodles, I would release pressure after about 10 minutes instead of naturally, add the noodles, and set on Manual for 3 to 5 minutes. I use all organic produce.

1 tablespoon olive oil
5 stalks celery, diced
1 large onion, diced
2 small heads garlic, peeled and chopped
1 (32 fluid ounce) container chicken bone broth
1 (32 fluid ounce) container chicken broth
4 boneless chicken thighs, cut into 1-inch pieces
2 boneless skinless chicken breasts, cut into 1-inch pieces
1 (8 ounce) package baby carrots
2 tablespoons herbes de Provence
1 tablespoon chicken broth base (such as Superior Touch™ Better Than Bouillon™)
1 ½ teaspoons red pepper flakes
salt and ground black pepper to taste
2 bay leaves

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add oil, celery, onion, and garlic. Saute until slightly softened, 3 to 5 minutes.
  • Mix bone broth, chicken broth, chicken thighs, chicken breasts, carrots, herbes de Provence, broth base, red pepper flakes, salt, pepper, and bay leaves into the pot. Close and lock the lid. Select low pressure. Set timer for 25 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, 10 to 40 minutes. Remove bay leaves before serving.

2 cups half & half
1 teaspoon pepper

1 pinch ground nutmeg
1 cup frozen corn
1 cup frozen peas
1 whole rotisserie chicken

Steps:

  • Heat oil in large pot on medium high heat.
  • Bring in onion, celery, carrots, and garlic and cook until onions are translucent, about 5 minutes.
  • Stir in butter and melt.
  • Add in flour and stir until flour butter mixture coats vegetables and browns lightly.
  • Add the chicken stock and half and half and stir to combine.
  • Season with pepper, thyme, and nutmeg and allow to come to a boil.
  • Reduce the heat to medium-low and add in corn, peas, and chicken and fully incorporate.
  • Season with salt.
  • Optional - garnish with cookie sized pieces of pie crust.

I find it so funny how the best-tasting recipe uses simple (and minimal) ingredients. No need for any fancy Nancy over here with this homemade chicken pot pie soup! Serve topped with a biscuit.

3 tablespoons salted butter
1 medium onion, diced
1 clove garlic, minced
3 cups chicken stock
2 cups Peas and carrots, frozen, unprepared
2 (8 ounce) skinless, boneless chicken breast halves
2 teaspoons Italian seasoning
salt and ground black pepper to taste
½ cup milk
4 tablespoons cornstarch
½ cup heavy cream

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add onion and butter and cook until transparent, 5 to 7 minutes. Add garlic and cook until fragrant, about 1 minute.
  • Add chicken stock, frozen vegetables, chicken, Italian seasoning, salt, and pepper. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 12 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
  • Combine milk and cornstarch in a small bowl; pour into the soup and stir until incorporated. Turn Instant Pot® to warm and cook until soup has thickened, about 5 minutes.
  • Remove chicken and shred with 2 forks. Return meat to the pot, turn off the heat, and mix in heavy cream.

This is a good hearty warm soup. Easy to put together. I have used Recipe #256812 with success for the pastry on top. I like that there are no cans of cream of whatever soup in it.

1/2 cup butter
1/2 cup flour
1/2 cup onion, finely chopped
1/2 cup celery, finely chopped
salt and pepper
4 cups milk
2 tablespoons chicken soup base
1/2 cup cooked potato, cubed
2 cups frozen mixed vegetables
2 cups chicken, shredded
1/2 cup heavy cream
puff pastry sheets or uncooked pie crust
1 egg, Beaten
chopped parsley

Steps:

  • Melt butter and cook onion and celery in butter on low until soft. Season with salt and pepper. Add flour and cook on low for a minute stirring constantly so it doesn't burn.
  • Add the milk, chicken broth, and chicken base and stir with a whisk until it comes to a boil and has thickened. If too thick add more broth or milk. Turn down heat and add the chicken, potatoes, and vegetables. Season with salt, pepper. Let simmer for a minute on low. Add the cream.
  • Ladle into oven safe bowls and top with pieces of puff pastry or pie crust. Brush with egg. And bake on a cookie sheet in a preheated 375 degree oven until pastry or crust is cooked (times depend on what type you use). Sprinkle with chopped parsley.

Set cooker to saute-high. Add olive oil, celery, onion, garlic, salt, pepper and thyme to the cooker. Cook for 2-3 minutes or until fragrant. Add carrots, potatoes, cooked chicken, broth and mix/stir. Place the lid on. Pressure cook on high for 10 minutes, followed by a 10 minutes natural release .
