AIR FRYER HASH BROWN EGG BITES



Air Fryer Hash Brown Egg Bites image

The air fryer is a fantastic way to cook bite-sized egg casseroles, which are made even better topped with crispy hash browns.

Number Of Ingredients 8

Nonstick cooking spray, for the mold
4 large eggs
1/4 cup heavy cream
Kosher salt
2/3 cup shredded Cheddar
1/4 cup diced red bell peppers
1 scallion, white and green parts sliced
1/2 cup shredded frozen hash browns, thawed

Steps:

  • Spray the cavities of a 7-cavity silicone egg bites mold with nonstick spray. Whisk together the eggs, heavy cream and 1/2 teaspoon salt in a large glass measuring cup until no white streaks remain.
  • Divide the egg mixture, 1/3 cup of the Cheddar, the bell peppers and scallions among the cavities of the mold. Gently stir the mixture in each cavity with a spoon. Transfer the mold to the basket of a 6-quart air fryer, set it to 300°F and cook for 3 minutes.
  • Meanwhile, combine the hash browns and remaining 1/3 cup Cheddar in a small bowl. Gently top each egg bite with the hash brown-cheese mixture.
  • Set the air fryer to 300°F and cook for 12 minutes more. The top of each bite should be golden brown and the eggs should be set. Remove the mold and let stand for 10 minutes before popping out the egg bites. Serve warm.

Get your day off to a good start with a hot and tasty air fryer breakfast sandwich. We love making these breakfast sandwiches in the air fryer because they're quick, easy and delicious-perfect for a busy morning! While your biscuits are being cooked to golden perfection in the air fryer, you can make the scrambled eggs and prep the bacon. From there, simply slice the warm biscuits in half and layer eggs, bacon and a slice of American cheese for a satisfying and simple air fryer bacon, egg and cheese sandwich.

1 can (16.3 oz) refrigerated Pillsbury™ Grands!™ Southern Homestyle Original Biscuits (8 Count)
6 eggs
1/4 teaspoon salt
1/8 teaspoon pepper, if desired
1 tablespoon butter
8 slices cooked bacon, cut in half crosswise
8 slices (3/4 oz each) American cheese

Steps:

  • Spray bottom of air fryer basket with cooking spray. Separate dough into 8 biscuits. Place 4 biscuits in air fryer basket, spacing apart.
  • Set air fryer to 330°F; cook 6 minutes. Using tongs or spatula, turn over each biscuit. Cook 4 to 5 minutes or until biscuits are deep golden brown and cooked through. Remove from air fryer; cover loosely with foil to keep warm while cooking second batch. Cook remaining biscuits as directed above.
  • Meanwhile, in medium bowl, beat eggs, salt and pepper thoroughly with fork or whisk until well mixed. In 10-inch skillet, heat butter over medium heat just until butter begins to sizzle. Pour egg mixture into skillet. Cook until set, stirring occasionally.
  • To serve, split warm biscuits; top bottom half of each with scrambled eggs, bacon and cheese. Cover with top halves of biscuits.

Working from home during the pandemic has forced me to get creative and work around what was my normal routine. While I enjoy that "famous" breakfast muffin from the comfort of my own home now, I came up with this on-the-go air fryer version to send off with my husband in the mornings. The fast food chain has nothing on this.

nonstick cooking spray
1 large egg
salt and freshly ground black pepper to taste
1 (1.2 oz) patty fully cooked breakfast sausage
1 medium English muffin, split
1 slice American cheese

Steps:

  • Preheat an air fryer to 350 degrees F (175 degrees C).
  • Center a mason jar lid, upside down, on a 5-inch square of aluminum foil. Fold the foil up and around the lid to act as a round mold. Spray the foil with nonstick spray and crack egg into the center. Season with salt and pepper.
  • Place egg mold and frozen sausage patty next to each other in the air fryer basket; cook for 4 minutes. Flip sausage patty over, add English muffin halves, and cook 4 minutes more.
  • Place one English muffin half on a sheet of parchment paper. Add cheese, sausage patty, and egg. Top with remaining English muffin half. Wrap and go.

  • Cut two 8-inch rounds of cooking parchment paper. Place one round in bottom of air fryer basket. Spray with cooking spray.
  • In 10-inch nonstick skillet, cook bacon over medium-high heat until crisp. Remove from pan; place on paper towel. Carefully wipe skillet with paper towel. Add butter to skillet; melt over medium heat. Add 2 beaten eggs and pepper to skillet; cook until eggs are thickened but still moist, stirring frequently. Remove from heat; stir in bacon. Cool 5 minutes.
  • Meanwhile, separate dough into 5 biscuits; separate each biscuit into 2 layers. Press each into 4-inch round. Spoon 1 heaping tablespoonful egg mixture onto center of each round. Top with one piece of the cheese. Gently fold edges up and over filling; pinch to seal. In small bowl, beat remaining egg and water. Brush biscuits on all sides with egg wash.
  • Place 5 of the biscuit bombs, seam sides down, on parchment in air fryer basket. Spray both sides of second parchment round with cooking spray. Top biscuit bombs in basket with second parchment round, then top with remaining 5 biscuit bombs.
