Air Fryer Banana Cake is truly amazing! This might be the best banana cake I have ever eaten. It's light, it's flavorful, and it's absolutely delicious!

1/3 cup brown sugar
2 tablespoons granulated sugar
4 tablespoons unsalted butter, room temperature
1 ripe banana
1 egg
1 cup all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon pure vanilla extract
1/2 teaspoon ground nutmeg

Steps:

  • Start by mixing the brown sugar and butter. Mix until they are well combined.
  • Mix in the banana, egg, sugar, Add in the rest of the ingredients and mix well.
  • Spray your bundt ban with non-stick cooking spray or olive oil spray. Spoon your batter into the prepared pan. Place your pan into the air fryer basket. SEt the temperature to 320 degrees F, air fryer setting, for 17 to 20 minutes.
  • Let cool slightly before you remove (remember the pan is very hot) I dusted my cake with confectionary sugar.
  • Just plate, serve and enjoy!

Everyone loves a good banana cake; this is a scaled down version that makes a small cake ideal for the air fryer or for a single person.

⅓ cup brown sugar
3 ½ tablespoons butter, at room temperature
1 banana, mashed
1 egg
2 tablespoons honey
1 cup self-rising flour
½ teaspoon ground cinnamon
1 pinch salt

Steps:

  • Preheat an air fryer to 320 degrees F (160 degrees C). Spray a small fluted tube pan with cooking spray.
  • Beat sugar and butter together together in a bowl using an electric mixer until creamy. Combine banana, egg, and honey in a separate bowl. Whisk banana mixture into butter mixture until smooth.
  • Sift flour, cinnamon, and salt into the combined banana-butter mixture. Mix batter until smooth. Transfer to the prepared pan; level the surface using the back of a spoon.
  • Place the cake pan in the air fryer basket. Slide the basket into the air fryer and set the timer for 30 minutes. Bake until a toothpick inserted into the cake comes out clean.

A moist, tender and extremely delicious banana cake perfectly sized for the air fryer. The cream cheese icing is exactly what this banana cake needs.

2 bananas
1 egg
3/4 cup sugar
1/3 cup vegetable oil
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 teaspoon cinnamon
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 tablespoons butter, softened
2 ounces cream cheese softened
1 cup powdered sugar
1 teaspoon vanilla extract
1 to 2 tablespoons heavy cream

Steps:

  • Mash the bananas in a bowl. Stir in the egg. Combine the sugar, oil, and vanilla extract until well blended.
  • Sift the dry ingredients over the banana mixture. Gently fold the dry ingredients into the batter.
  • Pour into the mini bundt pan.
  • Set the air fryer to 320°F and bake the cake for 14 minutes.
  • Rotate the bundt pan 180° and bake for another 14 to 16 minutes or until a toothpick comes out clean when poked into the center of the cake.
  • If the cake looks like it is getting too brown, place a sheet of aluminum foil on top to prevent it from browning too much.
  • Let the cake cool in the bundt pan for 10 minutes. Invert the cake onto a cooling rack and let it cool completely.
  • Place the butter and cream cheese in a microwavable bowl. Microwave for 7 to 10 seconds then stir and microwave for another 7 to 10 seconds.
  • Stir until smooth and creamy.
  • Add the powdered sugar and vanilla. Stir until smooth.
  • Whisk in the cream to get a consistency that drizzles off the whisk. Add more cream if you want the icing to be thinner. Use less cream if you like a thicker consistency.
  • When the cake is completely cool, drizzle the icing over the cake and serve.

½ teaspoon baking powder

6 tablespoons turbinado sugar
1 ¼ cups mashed overripe bananas

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease and flour a fluted tube pan (such as a Bundt®.
  • Combine flour, baking soda, baking powder, and salt in a bowl.
  • Place butter and sugar in a blender; process until sugar is almost completely dissolved; pour into a bowl. Stir in mashed bananas and egg until well blended; pour banana mixture into flour mixture and stir until batter is just combined. Pour batter into prepared tube pan.
  • Bake in the preheated oven until a knife inserted into the center comes out clean, 30 to 35 minutes. Cool in the pan for 10 minutes before inverting cake onto a plate to serve.
