1/2 lb asparagus (fresh)
1 c crackers (crushed)
2 egg

Steps:

  • In a small bowl, whisk the two eggs together until smooth.
  • Take the crackers and put into a gallon sized baggie. Squeeze the bag until crackers are crushed into small pieces.
  • Cut the ends off the asparagus, then dip each asparagus stalk into the egg mixture.
  • Then drag each asparagus stalk into the crumb mixture. Then gently place the asparagus stalks into the air fryer basket. Air Fry at 400 degrees F for 8-10 minutes.

1 bunch fresh asparagus (1 lb)
2 teaspoons olive oil
½ teaspoon garlic powder
½ teaspoon sea salt
¼ teaspoon ground pepper
3 Tablespoons shredded parmesan cheese
Toppings: lemon (crushed red pepper, additional parmesan cheese)

Steps:

  • Wash asparagus and break or chop off the tough ends.
  • Place the asparagus spears into a mixing bowl and drizzle with the olive oil. Toss to coat the spears, then sprinkle with garlic powder, salt, pepper and parmesan cheese.
  • Preheat air fryer if required. Add asparagus to the air fryer in a single layer and cook on 400°F for 7-8 minutes. Note that the cook time will depend on how thick your asparagus is so watch it carefully.
  • Serve asparagus immediately with a slice of lemon juice for squeezing and additional parmesan cheese and crushed red pepper on top, if desired.

1 tablespoon chili-flavored olive oil or 1 tablespoon toasted chili oil
3 shallots, diced (about 2 ounces total or 6 tablespoons diced)
6 garlic cloves, minced (1 tablespoon)
1 lb asparagus, trimmed and cut into 2-inch long pieces
1/2 cup chicken broth or 1/2 cup beef broth
1 teaspoon salt (or to taste)
1/2 teaspoon black pepper (or to taste)

Steps:

  • Heat a non-stick wok or skillet over medium-high heat (375-425F / gas mark 5) for 30 seconds.
  • Add chili oil, shallots, and garlic; saute until the shallots are tender and beginning to brown (2-3 minutes).
  • Add asparagus and continue to cook until it begins to soften and color (2-3 minutes).
  • Add stock; cook over medium heat (350F / gas mark 4) until asparagus is tender and all moisture has evaporated (5-10 minutes).
  • Season with salt and pepper; toss until well mixed.
  • Serve hot.

1 tablespoon olive oil
½ tablespoon minced garlic
½ teaspoon crushed red pepper flakes, or to taste
6 medium Kalamata olives, sliced
salt and freshly ground black pepper to taste
½ medium lemon, cut into wedges

Steps:

  • Bring a large pot of water to a boil. Add asparagus and blanch until the asparagus turns a vibrant green, about 1 minute. Transfer asparagus to an ice bath to stop the cooking process. Remove asparagus from the ice bath, drain, and set aside.
  • Heat olive oil in a large skillet over medium heat. Add garlic and cook, stirring constantly, just until it becomes fragrant, about 30 seconds. Season with pepper flakes, add asparagus, and quickly toss in the seasoned oil. Heat until asparagus is just crisp-tender, not overly soft, 1 to 2 minutes.
  • Stir in olives and season with salt and pepper. Serve with lemon wedges.
