Oatmeal Chocolate Chip Cookie Bars are soft, chewy and easy to make when you don't have time to scoop individual cookies! This delicious cookie bar recipe is filled with oats and chocolate chips and comes together in just a few minutes.

1 3/4 cups flour
3/4 tsp baking soda
1/4 tsp salt
1 cup oats
3/4 cup butter (softened to room temperature)
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 tsp vanilla extract
1-2 cups semi-sweet chocolate chips

Steps:

  • Preheat oven to 375°.
  • Mix together the dry ingredients and set aside.
  • Use an electric mixer to beat the butter, sugars, egg and vanilla together. Mix for at least 2-3 minutes.
  • Add the dry ingredients to the butter/sugar mixture and mix until combined.
  • Add the chocolate chips and mix them in.
  • Press the cookie dough into a greased 9X13 pan until evenly distributed.
  • Bake for 18-20 minutes, or until the tops and edges start to turn a light golden brown. Cool, then slice and serve!

1/2 cup brown sugar

1/4 teaspoon baking powder

1 cup flour

3/4 cup rolled oats (uncooked oatmeal)

Steps:

  • Preheat oven to 350 degrees with the rack in the middle position.
  • Melt the butter in a large microwave safe bowl.
  • Add the brown and white sugars and let cool a bit.
  • Add egg, baking powder, baking soda, salt, cinnamon, nutmeg, and vanilla.
  • Add flour and mix. Then add the chocolate chips and oats and mix everything up. The dough will be quite stiff.
  • With a spatula spread dough evenly into a greased 8x8 baking pan.
  • Bake at 350 for 25- 30 minutes.
  • Cut into bars when cool.

Steps:

  • Preheat oven to 350 degrees F. Lightly grease a 9 x 13 inch pan with cooking spray or line with parchment paper.
  • In a large mixing bowl beat together the butter, brown sugar, and white sugar until smooth and light.
  • Add the eggs one at a time, mixing after each addition. Add the vanilla.
  • In a separate bowl combine the dry ingredients: salt, baking soda, baking powder, flour and rolled oats.
  • Add dry ingredients to the creamed mixture and stir until combined. Stir in chocolate chips.

Steps:

  • Set 2 racks in the middle and upper thirds of the oven and preheat to 350 degrees F.
  • In a medium bowl, stir the flour, baking powder, baking soda, salt, oats, and pecans together with a whisk or fork.
  • In a large bowl, beat the butter, brown sugar, and granulated sugar together for 30 seconds until blended. Beat in the egg until smooth and barely fluffy. With mixer running on medium high, drizzle in the maple syrup, and vanilla until incorporated. Turn the mixer down to its lowest setting and gradually add the flour-oatmeal mixture. 1 1/2 cups firmly packed dark brown sugar
2 large eggs
1 teaspoon pure vanilla extract

One 12-ounce bag (a scant 2 cups) semisweet chocolate chips

Steps:

  • Position the rack in the middle of the oven and preheat to 350 degrees F.
  • Put the butter in a microwave-safe bowl, cover and microwave on medium power until melted. Alternatively melt the butter in a small saucepan. 1 cup toasted chopped pecans
powdered sugar, for dusting

Steps:

  • Preheat oven to 350 degrees.
  • In large bowl add baking mix, oats, baking powder, chocolate chips, and the tablesppon of pumpkin pie spice. Stir until combined.

1 1/2 cups packed brown sugar
1 cup butter or margarine, softened
2 tablespoons molasses
2 teaspoons vanilla
2 eggs
3 cups quick-cooking oats
1 cup Gold Medal™ all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
3/4 cup chopped nuts
1 bag (12 oz) semisweet chocolate chips (2 cups)

Steps:

  • Heat oven to 350°F. Grease 15x10x1-inch pan. In large bowl, beat brown sugar and butter with electric mixer on medium speed until light and fluffy. Beat in molasses, vanilla and eggs. Stir in oats, flour, baking soda and salt. Stir in nuts and chocolate chips. Spread in pan.
  • Bake 20 to 30 minutes or until light golden brown and center is set. Cool completely, about 1 hour. For bars, cut into 8 rows by 6 rows.

Easy one-bowl oatmeal cookie bars with lots of chocolate chunks, very chewy and sweet. These are similar to regular chocolate-chip cookies, but baked in a sheet pan for convenience. I made these with chopped dark chocolate bars because dark chocolate is "healthier" than milk or semisweet chocolate - you can substiture one 12-ounce package of chocolate chips if you prefer

1/2 lb unsalted butter
1 cup packed brown sugar
1/2 cup white sugar
2 eggs
1/2 teaspoon vanilla
1 teaspoon baking soda
1/4 teaspoon salt
1 cup flour
3 cups reqular oatmeal (not instant) or 3 cups quick oatmeal (not instant)
10 -14 ounces dark chocolate, chopped coarsely

Steps:

  • Have ready, ungreased, two 9x9" square baking pans or one 15x10" jelly-roll pan.
  • Preheat oven to 375 degrees.
  • In a large glass or plastic mixing bowl, soften the butter (a few seconds in the microwave); it should be very soft but not completely melted. Using a heavy spoon, beat in both sugars, then beat in the eggs until smooth. Beat in the vanilla, baking soda and salt. Mix in the flour just until combined, then stir in the oatmeal and chocolate chunks.
  • Spoon the cookie dough into ungreased baking pans. Using the back of the spoon, lightly spread the dough, leaving it a little higher at the sides and corners than in the middle. Bake on the middle rack of the oven for 17-20 minutes, until set in the middle and brown around the edges. Because of the brown sugar, this cookie gets much darker than "golden brown" when it is done.
  • Cool in the pan. Cut into bars to serve. Take some to work or school to give away, because the large amount of oatmeal makes them dry out in a few days if you have leftovers.
