BEST AHI POKE
The classic Hawaiian ahi poke features raw tuna with soy sauce (shoyu), garlic, and onion. It's rich and buttery, perfect with rice or as an appetizer!

Steps:
- Slice the tuna into 1-inch cubes. Mince the onion. Thinly slice the green onions. Mix them in a bowl with the soy sauce, sesame oil, garlic, ginger, kosher salt and Sriracha.
- Serve immediately, but for most authentic flavor marinate in refrigerator for 15 minutes to 1 hour. Taste and add a sprinkle of salt before serving.* (Get this in the fridge while the rice boils and you prep the veggies, and you can eat when it's all done.)

AHI TUNA POKE
Steps:
- Whisk together the white soy sauce, sesame oil, rice wine vinegar, and yuzu juice in a medium bowl.
- Add the scallions and macadamia nuts, followed by the tuna, and fold together. Marinate for 15 minutes at room temperature before serving.
HAWAIIAN AHI POKE

Steps:
- Add tuna and sesame oil to a large mixing bowl. Gently mix until all the fish is coated in oil. Sprinkle salt evenly across the fish. Add the cucumber, onion, ogo, inamona, chile flakes, garlic and hot sauce and thoroughly mix until ingredients are evenly dispersed. Refrigerate 30 minutes. Divide into portions and serve.
MAUI STYLE AHI POKE
This came to me after trying the local Poke which I thought had little piazaz to it. A must here is the freshest Ahi you can find. Frozen will work but I would add 2 tbls. of sweet chili sauce.

Steps:
- Cut the Ahi, place in a mixing bowl.
- Add all the rest to a separate bowl and mix. Let stand about 10 minute and stir again.
- If using frozen Ahi add chili sauce to above bowl.
- Add to the Ahi and very gently mix, not to break up Ahi.
- Place on a platter, garnish with the rest of the green onion.
- Platter tips.
- Coconuts split in half for bowls, pineapples cut in half and scooped out,save. " cut the long way top to bottom" leave top leaves in place. Save scooped pineapple for another Beachbumlahaina dish.

Steps:
- Cut Ahi into at least 1/2" cubes - set aside & refrigerate.
- Combine all other ingredients in a large glass bowl & refrigerate for at least 30 minutes.
- When ready to serve toss Ahi and other ingredients together.
- Serve on chilled platter with chopsticks or toothpicks.
AHI GRAPEFRUIT POKE

Steps:
- 1. Zest and segment the grapefruits; set aside.
- 2. Whisk soy sauce, sesame oil and 2 tbsp of zest. Combine with ahi in a metal bowl.
- 3. Add scallions and sesame seeds and toss to combine. Cover and put in fridge to marinate for one hour.
- 4. Remove mixture from fridge; toss with avocado and grapefruit segments. Serve on its own or with rice.
JJ'S HAWAIIAN AHI TUNA POKE
This recipe was found in Whole Food's Salud cooking newsletter. I'm always game for a new poke recipe, so this will be one to try soon. Keep Ahi very very cold before prepping, and work quickly to avoid it warming up. You can even refrigerate the mixing bowl or put it on ice to keep the fish cold. This is important because the texture of the Ahi will degrade quickly if it warms up at all.

- Whisk soy sauce, sesame oil, grated ginger, sliced onions, macadamia nuts, seaweed, pepper flakes, and salt together in a bowl.
- Place cubed tuna into bowl. Pour in marinade and stir to distribute evenly. Cover and refrigerate 2 hours. Mix again.
- Serve topped with toasted sesame seeds, sliced green onions, and a sprinkle of lemon or lime juice, or seasoned rice vinegar.
