AGUA DE HORCHATA

Agua De Horchata image

This Horchata is the kind that is served in "neverias" or ice-cream shops in Mexico. It is creamy and easy to do. Grinding the rice twice brings out all the starch and flavor. Prep time is the time needed for the rice to soak. One reviewer stated that I don't know what I'm talking about and that the rice should be soaked overnight...if you choose to soak it longer, the result will be the same and you will still need to strain it as stated---twice. I do know what I'm talking about: I'm Mexican and live in Mexico.

Time 10m

Yield 4-6 serving(s)

Number Of Ingredients 5

3/4 cup rice
2 teaspoons ground cinnamon or 1 in cinnamon stick
1 1/2 teaspoons good vanilla (Mexican is best)
1/2-3/4 cup sweetened condensed milk
water, as necessary

Steps:

  • Rinse the rice in a colander. Place in a blender and add enough water to cover by an inch; soak 5 or 10 minutes. Add the vanilla and cinnamon and blend until finely ground. Drain the liquid through colander into a pitcher.
  • Return the ground rice to the blender. Add the condensed milk and about 2 cups water and blend again. Drain into the pitcher. Discard any remaining rice.
  • Add more water to the pitcher, one cup at a time, until it has the right amount of sweetness for you. Add ice and serve cold.
  • Note: you can add 1 cup sugar or so and 1 cup milk, instead of the sweetened condensed milk . I suppose you could use rice or even soy milk, but I haven't tried it.

AGUA DE HORCHATA

Agua de Horchata image

"A sweet and refreshing drink, horchata is often served during lunch or dinner, or enjoyed by itself throughout the day, especially during the hot summer...

Categories     Drinks

Time 5m

Yield 3 Quarts

Number Of Ingredients 7

2 cups (360 g) long-grain white rice
1 Mexican cinnamon stick
4 cups (1 quart/950 ml) hot water
1 cup (240 ml) whole milk (optional)
2 teaspoons vanilla extract
¾ cup (150 g) sugar
Ground cinnamon, for dusting (optional)

Steps:

  • Place the rice and cinnamon stick in a large glass bowl and add the hot water. Cover the bowl with a dish or plastic wrap, then let it soak for 8 hours, or overnight.
  • Pour the rice, cinnamon, and water into a blender, and blend until it becomes a smooth, watery paste. Using a strainer, strain the mixture into a wide-mouth pitcher, stirring to help the liquid pass through.
  • Add the milk (if using), vanilla extract, and 6 cups (1. quarts/1.4 L) water. Stir in the sugar, then refrigerate until serving. Stir before serving because the rice mix tends to settle at the bottom. Serve in glasses with ice cubes and dust with the cinnamon (if using).

2021-05-03 Take rice in a bowl, add hot water and allow the rice to soak for 15 to 20 minutes. Alternatively, you can also soak the rice overnight. The longer rice soaks, the creamier your horchata will be. In another saucepan, take a cup of water, add cinnamon sticks and bring to a boil. Once the water starts bubbling, turn off the heat and allow it to cool.
