ALMOST-FAMOUS STUFFED CHEESY BREAD

- Make the dough: Whisk the sugar and 3/4 cup warm water (about 105 degrees F) in a bowl. Sprinkle the yeast on top and set aside until foamy, about 10 minutes. Stir in the vegetable oil. Whisk the flour and salt in a large bowl. Make a well in the center, pour in the yeast mixture and stir with a wooden spoon to make a shaggy dough. Turn out onto a generously floured surface and knead until smooth and elastic, about 5 minutes, dusting with more flour as needed. Form into a ball. Brush a large bowl with vegetable oil; add the dough, turning to coat with the oil. Cover tightly with plastic wrap and set aside at room temperature until doubled in size, about 1 hour, 30 minutes.
- Make the filling and topping: Toss 1/2 cup mozzarella, the cheddar, pecorino, garlic salt, granulated garlic and dried parsley in a bowl. Preheat the oven to 450 degrees F. Put an inverted baking sheet in the oven; preheat for 10 minutes. Line another inverted baking sheet with parchment paper and sprinkle with the cornmeal. Cut the dough in half; transfer 1 piece to the parchment-lined baking sheet and stretch into an 8-inch square (keep the other piece of dough covered). Sprinkle 1 side of the square with 1/2 cup of the remaining mozzarella, then fold the dough in half to enclose the cheese, pressing to seal. Slice the dough crosswise at 1-inch intervals, stopping just before the folded edge. Sprinkle with half of the cheese-garlic mixture. Move the dough to 1 side of the baking sheet. Repeat with the remaining dough, mozzarella and cheese-garlic mixture on the other side of the baking sheet. Slide the bread on the parchment onto the hot baking sheet in the oven. Bake until the dough is cooked through and the cheese is golden brown, 12 to 14 minutes. Let cool slightly, then pull apart into breadsticks.

Remove from pans to wire racks to cool.

- In a large bowl, whisk egg and milk. Stir in the cheese, oats, onion and salt. Crumble beef over mixture and mix well. Shape into 8 loaves; place in a greased 13x9-in. baking dish. In a small bowl, combine the ketchup, brown sugar and mustard; spoon over loaves. , Bake, uncovered, at 350° for 25-30 minutes or until no pink remains and a thermometer reads 160°.

- Heat your oven to 350*F. Spray 2(7x4x2 inch) pans with nonstick cooking spray. You may use loaf pans but the loaves will not rise as high).
- In a large bowl, stir together whole wheat flour, all purpose flour, yeast, salt and 1 cup of the cheese. Make a well in the center of the flour mixture. Add water and oil. Gradually stir dry ingredients into water mixture until soft dough forms. If dough is too sticky, add additional flour 1 tbls. at a time.
- Turn out the dough onto lightly floured surface; divide in half. Shape into loaves; place in pans. Cover with a towel; let stand 30 minutes or until slightly risen. Sprinkle the top of each loaf with 1/4 cup of remaining cheese.
- Bake 30 to 35 minutes or until browned and loaves sound hollow when tapped or inside temperature reaches 190*F. Cool on a wire rack.

- Preheat oven to 350 degrees F (175 degrees C). Spray a loaf pan with nonstick cooking spray.
- Combine ground turkey, egg, parsley, bread crumbs, adobo, and salt and pepper in a large bowl. Mix well. Press half of the turkey mixture into the bottom of the prepared loaf pan. Sprinkle 1/2 cup cheese in a mound down the center of the pan; top with the remaining meat to form a loaf.
- Bake in the preheated oven until browned and cooked through, about 1 hour. Sprinkle the remaining 1/4 cup cheese on top during the last 5 minutes of baking. Allow cooked meatloaf to rest for at least 5 minutes before slicing.

- Roasting the MushroomsPreheat the oven to 450 degrees Wash mushrooms thoroughly Remove the centers of the mushrooms Wash and take out the center of the mushrooms. Toss mushrooms with olive oil, garlic powder, and salt and place in a single layer on a baking sheet. Roast for about 15 minutes, stirring them about 1/2 way through**The mushrooms will shrink considerably in the oven. Don't be alarmed by this!** Making the Cream Cheese fillingCombine the softened cream cheese with about 1 teaspoon garlic powder, 1 teaspoon Italian seasoning, and 1/8 cup shredded parmesan cheeseMix until everything is combined. Set aside until mushrooms are done roasting. Baking the MushroomsPreheat oven to 375 degrees. Stuff each mushroom with a little bit of the cream cheese - I used about 1 teaspoon in each. Place the mushrooms side-by-side on the baking sheet. Top with shredded white cheddar cheese, and then the final layer should be the parsley panko. Bake for 15-20 minutes or until cheese is browned. Cheese SauceWhile the mushrooms are baking, prepare the sauce to put the mushrooms in. Combine the half and half, Worcestershire sauce, dry mustard, pepper, and sour cream over medium heat. Once everything is combined, add the cheeses and melt over medium-low heat until nice and creamy. Final Assembly Pour the cheese sauce into the bottom of your serving dish. - To make the starter: Mix the flour, salt, yeast and water in a medium size bowl. Mix till well combined; the starter will be very dry. Cover and let rest overnight at room temperature.
- To make the dough: combine the risen starter with the water, salt, pizza dough flavoring, flour and yeast. Knead - by hand, mixer or bread machine set on the dough cycle - to make a smooth dough. Place it in a lightly greased bowl, cover and let rise for 1 1/2 to 2 hours, till it's nearly doubled in bulk.
- Gently deflate the dough, and pat and stretch it into a 3/4" thick rectangle about 9 x 12". Spritz with water and sprinkle with grated cheese as well as garlic oil and pizza dough flavoring if you have chosen to use them. Starting with a long side, roll it into a log, pinching the seam to seal. Place the log seam side down on a lightly floured or lightly oiled surface. cover it and let it rise for 1 to 1 1/2 hours till it's puffy though not doubled in bulk. Towards the end of the rise time, preheat the oven to 425.
- Gently cut the log into 4 crosswise slices, for mini loaves or simply cut the dough in half for two normal size loaves. Place them on one (for 2 loaves) or 2 (for 4 mini loaves) lightly greased or parchment lined baking sheets, cut side up. Spread them open a bit, if necessary to more fully expose the cheese. Spritz them with warm water and immediately place in preheated oven. Bake for 20 minutes for mini loaves or 35 minutes for full size loaves, or until the cheese is melted and the loaves are a very deep golden brown. Remove them from the oven and cool on a rack.
